New Year and new dinner with friends! This week Kris said she wanted crab cakes so that is what we had:) I think it has been 2 years since I made some crab cakes, not sure why I waited so long to make them again. I forgot how tasty they are!Crab cakes are a fairly easy thing to make. Just gather up all the ingredients and get started. For the bread crumbs I found an excellent GF panko style crumb. These worked great.First mix all ingredients, except crab and bread crumbs, in a large bowl. Next gently stir in the crab and finally mix in the bread crumbs.Form the mixture into patties. Add 3 tablespoons of oil to a cast iron pan and heat over medium high heat. Cook for 3-4 minutes per side.Check out the nice golden crust! These are coming along just fine. Remove from pan and drain on paper towels, to remove excess oil. All good crab cakes need a good sauce to go with them This one is simple and tasty. The horseradish gives it just the right amount of heat. Mix all ingredients together and chill for an hour before serving. Kris made big salad to go along with the cakes. We also had some sweet potato fries and tater tots! A great dinner with friends. Cheers!
For the crab cakes:
Ingredients
1 lb lump crab
¼ cup mayonnaise
2 eggs
3 chopped green onions
1 tsp seafood seasoning, like Old Bay
¼ tsp white pepper
¼ tsp cayenne pepper
1 tsp dry mustard
2 tsp Worcestershire sauce
½ cup bread crumbs
3 T oil
Directions
Mix all ingredients, except crab and bread crumbs, in a large bowl. Gently stir crab. Add bread crumbs and stir until just combined. Form into patties. Sauce
Ingredients
1/4 cup mayo
1-2 T horseradish
1 T capers
1 tsp dijon mustard
1 T chili sauce
1 tsp oregano
2 tsp worcestershire sauce
Directions
Mix all ingredients until well blended. Chill for an hour before serving.
