Salt and Pepper Smoked Tri Tip

Tri Tip is one of my favorite cuts of meat. I heard about it from my sister who lives in California. This cut is popular there but not so much in the Midwest and it can be hard to find. But never fear p Trader Joes has an excellent tri tip!! Normally I will marinate this then just grill to a medium rare. Today I thought I would try to smoke it for a few hours and see what happens. Well it turned out awesome! Similar to a brisket but much more flavor.For the seasoning I did olive oil, salt and pepper. I mixed up 1/8 cup of each and coated the tri tip. This created a great crust and flavor. I set the Traeger on smoke and cooked for 4 hours. After the 4 hours pull the meat of the grill and wrap in foil, along with 1/2 cup of beer. Crank the grill up to 350 degrees. Add the meat back to the grill and cook 45 minutes. That is it – let it rest 15 minutes before slicing.Check out the smoke ring!! The smoke, salt and pepper gave this so much flavor! No need for any sauce with this one.For the sides I added grilled sweet corn and a cherry tomato/fennel salad. We got the corn at the farmers market and the tomatoes came from our garden! Summer at it’s best. Cheers!

Pork Chops and Green Beans

Our friends (Rindy and Aaron) went in together for 1/2 a pig. We picked it up yesterday from Brothers Meat and Seafood, a local butcher in Maple Grove. Now that we have LOTS of pork it is time to try it out! Kris and I decided to try the chops. These were bone in and medium thickness. We like to keep it simple with chops so just olive oil, salt and pepper for the seasonings. I also made some apple chutney to top off the pork. Apples and pork just pair so well together!Grilling time was only 20 minutes at 350 degrees for these bad boys. For the side dish I grilled green beans and cherry tomatoes. We got these from our garden! This is the second year Rindy, Aaron, Kris and I have had a garden and things are growing great. The garden is at R and A’s house so they do the work and we reap the benefits:) Thank you R and A!!

The beans and tomatoes only take 10 minutes to grill so I added them to the Traeger once I flipped the chops. Easy and tasty summertime. Cheers!

Apple Chutney:

Ingredients:

1 tablespoon butter
2 cubed peeled apple
2 tablespoons brown sugar
2 tablespoons cider vinegar
1 teaspoons ginger
salt
1/4 teaspoon dry mustard
1/8 teaspoon ground allspice

Directions:
Melt butter in a nonstick skillet over medium-high heat. Add apple; sauté 4 minutes or until lightly browned. Add the remaining ingredients; bring to a boil. Reduce heat, and simmer 8 minutes or until apples are tender; stir occasionally

Summertime – BLT’s , Tacos and more

We love summertime! The farmers markets are in fill swing and you can pick up so many tasty veggies. Of course that means homegrown lettuce and tomatoes to make the perfect BLT. We picked this up at the Hopkins farmers market. Homegrown tomatoes are sooooo much better than the store bought variety! Cook up some crispy bacon and you are set for a great summer lunch. Don’t forget the mayo.For supper we went with skirt steak tacos with a side of avocado corn tomato salad. We grabbed a pint of cherry tomatoes from the market as well. For the taco meat we found this at Costco, recommended by my friend Jessica. Marinated skirt steak that is perfect for grilling and adding to a taco.Since getting my tortilla press, I always make homemade tortillas when doing Mexican food. They are so easy to make and taste awesome. It only takes about 10 minutes to whip up a batch of tortillas.While grilling the skirt steak I also grilled some sweet corn we got at the market. This is one of my favorite salads! Corn, tomato, avocado, mozzarella and balsamic vinegar makes this fresh and tasty!

Accordion Potatoes

I found a new way to make cheesy baked potatoes – Accordion Style! This side dish is loaded with cheese and makes for a perfect side to go along with some grilled flank steak. Simple to make but oh so good.Wash and scrub the potatoes thoroughly. Slice some good parmesan cheese, make sure the slices are really thin as you are going to insert into the potato. Cut each potato crosswise into thin slices. Do not cut all the through the bottom. Put the potatoes in a baking pan and drizzle with melted butter. Now carefully insert the sliced cheese into the potato. You can do each slice or every other one. I did every other one and they turned out excellent. Season with salt and pepper.

Cover pan with foil and grill for about 1 hour at 400 degrees. Remove the foil and sprinkle the tops with shredded cheddar cheese. Grill for 5 more minutes or until cheese is melted.

Transfer to a plate and enjoy. Cheers!

Ingredients:

Large baking potatoes – 4
4 T melted butter
1/4 lb parmesan cheese. sliced thin
1/2 cup shredded cheddar cheese
salt
pepper

Directions;

Position a potato lengthwise with a pencil or chopstick on either side of it. (The pencils or chopsticks will be your cutting guides.) Using a sharp knife, cut each potato crosswise into thin slices, being careful not to cut all the way through the bottom: The pencils should stop your knife from cutting too deep.

Cut the parmesan cheese into 2-inch wide slices. Cut each slice into very thin slices.
Put the potatoes in a baking dish, cut-side up. Drizzle them with the melted butter. Using the thin slices of parmesan cheese, stud each slice or every other slice in the potatoes.
Season generously with salt and pepper
Cover the baking pan with foil and position on the grill grate and bake the potatoes for about 1 hour, or until they are tender.(400 Degrees)
Take off the foil and sprinkle the tops evenly with the cheese and bake for 5 minutes more, or until the cheese is melted and golden.
Transfer the potatoes to a platter or plates and garnish with the chopped chives, if desired.

Banana Bread

So you let the bananas turn brown? Well that means it is time to make some banana bread! I found this simple recipe on Simply Recipes. I liked this recipe because of how easy it was to make and clean up!You can mix everything up in one bowl, pour in prepared pan and bake. You will want to let it cool completely before removing from the pan.Now it is time to slice it up and enjoy. Cheers!

Ingredients
2 to 3 very ripe bananas, peeled
1/3 cup melted butter
1 teaspoon baking soda
Pinch of salt
3/4 cup sugar
1 large egg, beaten
1 teaspoon vanilla extract
1 1/2 cups of all-purpose gluten free flour ( I use cup4cup)

Directions
Preheat the oven to 350°F, and butter a 4×8-inch loaf pan. In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Stir the melted butter into the mashed bananas.
Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour.
Pour the batter into your prepared loaf pan. Bake for 50 minutes to 1 hour at 350°F, or until a toothpick inserted into the center comes out clean.
Remove from oven and cool completely on a rack. Remove the banana bread from the pan. Slice and serve.

Pork Chops with Grilled Apple Chutney

Picked up some thick, bone-in chops at Hy-Vee the other day and it was time to grill. Now what to have with them? I had a couple apples and a pear so thought some grilled chutney would be nice! Not sure if this is truly chutney, but I just like saying chutney. This is easy enough to make and will cook along side the chops on the grill. Peel and slice the apple and pears. Toss in a cast iron pan. Mix up the ‘chutney’ sauce – 1/2 cup balsamic vinegar, 2T brown sugar, 2 T melted butter, tsp of ginger, salt and pepper. Mix together in a bowl and pour over apple, pear, onion mixture.Toss to coat well and they are ready for the grill. I like to season the chops with olive oil, salt and pepper. Simple seasoning to bring out the flavor of the pork. Let them sit out for 20-30 minutes before grilling.Grill time is about 25 minutes. The pork temp should be 145 degrees and the apples tender. Pull off the grill and let rest 10 minutes. Slice and serve. The apple/pear chutney turned out wonderful. The balsamic vinegar along with the ginger was very tasty. Cheers!

1 Chicken, 3 Meals. Meal 3 – Red Curry Chicken with Rice

Well here is my 3rd meal from my $4.00 chicken. I had some rice in the pantry, a red pepper and an onion. Sounds like a good time to cook chicken and rice. I love the red curry paste, not too spicy. Just the right amount of heat.This is an easy meal to whip up. While the rice is cooking dice up the pepper and onion.Toss in a pan with olive oil and saute for about 5 minutes. Add some salt and pepper for a little seasoning.Now add the diced chicken and 2 tablespoons of the red curry paste. Stir and cook for a couple minutes.Add some coconut milk, as much or little as you like. The more you add, the more soup like the dish will become. Bring to a boil then reduce heat to a simmer.Stir in the cooked rice and you are ready to eat! So there you have it. One chicken and 3 meals. It was a great week of eating. Cheers!!!!

1 Chicken, 3 Meals. Meal 2 – Chicken Fajitas

Night 2 of the chicken meals – Fajitas! I love going out for some good fajitas but they are so easy to make might as well do it at home. And, of course, I have the new tortilla press so homemade tortillas are a must. I also make my own seasoning mix, none of the store bought stuff. Makes it easier to control the salt content.The seasoning is very simple to make – chili powder, paprika, pepper, garlic powder, onion powder, salt and cumin. Toss in a bowl and mix well. This will go on the onions, peppers and chicken.Saute your onions and peppers in olive oil for about five minutes. Add chicken and seasonings. Mix well and cook until tender. Now just top your tortillas and add whatever fixings you like!The tortillas are so easy to make. Tonight I just made four of them as I think they are much better fresh. No need to make too many just to store in the fridge. Not too bad so far – one $4 dollar chicken and 2 meals made. Meal 3 coming tomorrow. Cheers!!

1 Chicken , 3 Meals. Meal 1 – Sweet kale salad with roasted chicken

I was wandering around Target trying to decide what to eat tonight. I spotted the organic, whole chickens with a 4 dollar off sign and bingo that was going to be dinner! The chickens were nearing their sell by date so I grabbed one up. No need to worry about the date since I was cooking that bad boy tonight. Plan is to get 3 meals from this one $3.99 bird.First step is to rinse the bird then dry it with some paper towels, the drier the better. Next add your favorite seasonings. Last step for me is to rub the bird all over with butter. This will help you get a nice golden brown skin. Start the Traeger and set to 375 degrees.When the breast reaches 165 degrees the bird is done. Pull it off the grill and let rest. I let it sit for about 20 minutes before carving. For the first meal I had also purchased an organic sweet kale salad kit from readypac foods. Just carve the bird add it to some of the greens and you have a great meal. Meal 2 coming up tomorrow night. Cheers!!

Grilled Chicken – Secret Ingredient

So Kristen and her co-worker Paul were talking about food and he said he had a secret ingredient for grilled chicken. Once hearing this of course we had to give it a try. I just seasoned some chicken breast with salt, pepper and olive oil. Grilled them and added the secret ingredient for the last 5 minutes of grilling and they were excellent! Now for the secret……….If you have spent time at Costco, I am sure you have seen this – Artichoke jalapeno dip from Good Foods. I love this dip and adding it to some grilled chicken was a great idea! I added the dip for the last 5 minutes of grilling and I think it was enough time. The cheese was starting to melt and the dip was heated through. Tasty!!On the side we had some bursted tomato, grilled corn and avocado salad. This is an all time favorites at our house. Grill the corn and tomatoes, add some diced avocado, salt and pepper and you have a great summertime salad!!
