Kris and I had a Super Bowl party and of course had plenty of leftovers. I smoked about 15 pounds of pork shoulder so had plenty of pulled pork left to use up this week. We decided to do our take of the classic ‘Hot Beef Sandwich’. Since we do not eat wheat I just left out the bread. This was a nice and easy leftover meal to make. Boil and mash some potatoes, make some gravy and heat up the pork. I did add a little beef broth to the pork to keep it moist as I reheated it. Now just pile some mashed potatoes on your plate, top with pork and gravy and enjoy. Cheers!
