Clean Eating – Pan Roasted Chicken

20150817_195729It was time for some detox and clean eating. We had our family reunion over the last 4 days in the cities and there was a lot of eating out. The food was great, Minneapolis has some awesome restaurants, but now it is time to scale back! So tonight we had pan roasted chicken breast, roasted cauliflower, and sauteed asparagus. Normally I would do all this on the Traeger but it was raining cats and dogs so time to cook indoors.

20150817_192136If you are not a cauliflower fan, this will change your mind. Roasted at 400 degrees for about 30 minutes, seasoned with my 5-2-1 blend (salt-pepper-garlic powder) makes it a tasty side – you will not even miss the carbs! Break it up into bite size chunks and toss onto a foiled lined pan. Season with olive oil and the 5-2-1 blend. Roast for 30 minutes, tossing halfway through cooking time.20150817_195355The cauliflower comes out tender, charred and so good. Good thing about this meal is the chicken is finished in the same 400 degree oven so everything comes out done at the same time.20150817_192631Season the chicken breast with olive oil and the same spice mix. Heat an oven safe pan over high heat with 1 T of olive oil. When it is good and hot, add the chicken.20150817_193343Sear the chicken for 3-4 minutes per side. Get it to the color you want to serve. A nice golden brown will do! Toss in the oven for 15-20 minutes, until internal temp reaches 165 degrees.20150817_195501The chicken will come out browned, juicy and tasty. The asparagus will only take about 4 minutes to saute. Add some olive oil to a pan and heat over medium high heat. Add the asparagus, season with salt and pepper and saute for the 4 minutes, tossing frequently. 20150817_195155Be sure to not overcook. You do not want the asparagus to be wilting or mushy. Grilled Pork Tenderloin

20150801_205635Need a quick weekday dinner? How about some grilled pork tenderloin and packet potatoes. 30 minutes on the grill and you are ready to go. The key is to not overcook the pork. The old guide lines would tell you to cook pork to in internal temp of 180 degrees – that is way too much. At that temp the pork will be gray and dry. You only need to reach a temp of 145 degrees for a perfect grilled tenderloin. The pork will have a little pink to it and be juicy and flavorful.20150801_204821Along with the pork and taters we added a side of sweet corn, tomato and green bean salad with fig balsamic dressing. With the farmers markets in full swing, it is a perfect time to get fresh veggies. 20150801_205151Season the pork with salt and pepper, drizzle with olive oil and grill over medium-high heat for about 30 minutes. Slice and toss the potatoes in some heavy duty tin foil. Season with olive oil, salt and pepper, seal tight and grill along with the pork. Serve with your favorite BBQ sauce and you have a delicious weekday meal. Cheers!

Flat Iron Steak with Chimichurri

20150731_200122After a long week of work it was time to relax on the porch and have a tasty supper. Tonight I picked up a flat iron steak – this cut is perfect for grilling – full of flavor. You do not want to over cook this cut. Medium-rare to medium is perfect. Anything more and it might get a little tough. We served this with some grilled packet potatoes and fresh sweet corn. I made a batch of fresh chimichurri (Argentine style) sauce to top it off.20150731_171832This chimichurri sauce goes great with grilled steak – it is light and fresh – and the red pepper flakes give it a nice touch of heat. All you need is a food processor and a handful of ingredients. Your friends will be impressed by the depth of flavor in this easy to prepare sauce. Mix it up and let chill while you grill up the rest of the meal.20150731_191455The flat iron steak needs minimal seasoning – salt, pepper and olive oil. This is also called a Top Blade steak so if your butcher gives you a strange look when asking for a flat iron, you can ask for the Top Blade. The name comes from the shape of the cut – it is said to look like an old flat iron….Grill over medium high heat for about 7 minutes a side – internal temp to 145 for medium rare.20150731_195800I also mixed up some chive, lime butter for the corn and taters. Argentinian Chimichurri Sauce:

1 cup lightly packed chopped flat leaf Italian parsley
3 to 5 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 teaspoon chili pepper flakes
2 tablespoons fresh oregano leaves
3/4 cup olive oil

Directions:

Place all ingredients in a food processor, except olive oil, and pulse until well chopped, but not pureed.
With food processor running. slowly add the olive oil until well blended. Cover and chill.

Campfire Cod with Potato and Chorizo Hobo Packs

20150729_205529I was reading through my Bon Appetit magazine and came across some recipes to try when you are camping. Well I have not plans to go camping in the near future so thought the Traeger would work for this as well as any campfire. Cod, fingerling potatoes and hot chorizo – sounds like a great weekday supper!

20150729_194633One of the best things in this recipe is the pumpkin seed butter that tops the cod. This will be the first thing you need to put together. It needs to chill while cooking up everything else. The flavor is amazing – pepitas, chives, lime zest and juice mixed in the butter – Tasty!20150729_201058Now that the butter is chilling it is time to get the taters ready. Lay out a piece of heavy duty foil and toss the potatoes and chopped up dried chorizo on top. Drizzle with olive oil, season with salt and pepper and you are ready to grill. Be sure to seal the packets up tight, you do not want any steam to escape while grilling. Toss right on the grate and grill over medium high heat for about 30 minutes.

20150729_202446The cod gets cooked in a cast iron skillet. Add 2 T of vegetable oil to the pan and place on the grill. Let the oil get hot then add the cod. Grill for about 4 minutes and flip. Grill for an additional 2-4 minutes, until fish flakes easily with a fork. I did not let my pan get hot enough so did not get the right amount of sear but the was tasty none the less.

When the fish is done, top with some of the pumpkin seed butter while still in the pan. This will allow the butter to melt all over the fish. In the meantime, open the tater packets and dump onto a plate. Top with a filet of fish and chow down. Cheers!

Ingredients

Pumpkin Seed–Lime Butter
2 tablespoons chopped salted, roasted pumpkin seeds (pepitas)
1 tablespoon chopped fresh chives
½ teaspoon finely grated lime zest
1 tablespoon fresh lime juice
4 tablespoons (½ stick) unsalted butter, room temperature
Kosher salt and freshly ground black pepper

Fish and taters
1½ pounds fingerling potatoes
2 ounces dried Spanish chorizo, casings removed, chopped
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
4 6-ounce skinless cod fillets

Directions

Pumpkin Seed–Lime Butter
Mix pumpkin seeds, chives, lime zest, and lime juice into butter in a small bowl; season with salt and pepper. Transfer to parchment paper and roll into a log, or scrape into an airtight container; cover and chill.

Fish and taters
Prepare grill or campfire for medium-high heat. Lay out four 12″ squares of heavy-duty foil. Divide potatoes and chorizo among squares; drizzle with olive oil and season with salt and pepper. Fold edges up and over to create packets; pinch edges closed. Cook on grill until potatoes are tender, 25–35 minutes.
Heat vegetable oil in a large skillet on camp stove or stovetop over medium-high. Season cod with salt and pepper and cook until underside begins to brown, about 4 minutes. Turn; cook just until cooked through, about 2 minutes. Top with pumpkin seed butter. Open packets and top potatoes with cod; spoon any butter left in pan over.

Bangers and Mashed

20150715_195708With the dog days of summer upon us, supper needs to be quick and easy. Sausages, peppers and onions should do the trick! 30 minutes of grill time and you are ready to eat. 20150721_184026Grab a variety of sausages – tonight I grilled up some fresh brats, hot Italian sausages and some andoullies – for a little heat! Grill for about 30 minutes, turning often.20150721_183642Slice up some onions and peppers, toss in a grilling basket. Drizzle with olive oil, season with salt and pepper and you are ready for the grill. Grill for 30 minutes along with the meats.

Throw the meat, peppers and onions on a bed of garlic mashed potatoes, grab a cold beer and chow down! A perfect summertime meal. Cheers!

Corn, green bean, tomato salad

20150713_192210Summer is a great time for fresh salads. With all the farmers markets in full swing you can always get some fresh veggies. Our friend Ann B. got us a bottle of fig balsamic vinegar which made this salad even better. Super simple with just sweet corn, green beans and cherry tomatoes makes this a dish everyone can enjoy.20150713_181415When using sweet corn for a salad I always use the microwave to cook it. Just leave the corn in the husk and nuke it for 8 minutes (2  ears) and it is done. Now to get it out of the husk – (make sure to use some hot pads to handle it) Cut off the bottom of the ear, grab the top of the ear and shake the corn right out of the husk. Cut the kernels off the cob and chill.

For the beans – slice into pieces and place in a microwave safe bowl. Add a little water and salt and cook on high for 3 minutes, you want to keep them a but crunchy. Immediately drain and rinse under cold water to stop the cooking. Slice the cherry tomatoes in half and add to a serving bowl. Add the green beans and corn, season with salt and peeper. Drizzle some of the fig balsamic vinegar and you are ready to eat! Cheers.

Smoked Beef Short Ribs

20150704_185506Normally when I smoke some ribs, I grab a couple slabs of baby backs, but today I decided to try some beef short ribs. These were big, meaty and tasty! I got the short ribs from Brothers Meat and Seafood, cut and trimmed to perfection. Whenever smoking some ribs it all starts with a good rub.20150704_121135Take the ribs out of the fridge and let rest while you are putting together the rub. Grab your ingredients and start mixing.20150704_121701Here is an excellent rub for ribs. You can use this for pork ribs as well. Toss the following in a bowl and mix well. 1/4 cup dark brown sugar (packed), 1/4 cup coarse Kosher, 1/4 cup chil1 powder, 3 tblsp fresh ground pepper, 1 tblsp garlic powder, 1 tsp cayenne pepper20150704_122334Cover the ribs with the rub. Make sure to cover them well, this will give you a nice bark during the smoking process. Get the smoker ready – preheat to 225 degrees. You will want to keep the temp right around 225 for the entire cooking time. These bad boys will take 5-6 hours.20150704_180427

Smoke for 2-3 hours then you will want to ‘mop’ them every 30 minutes until finished. The ribs are done when the meat starts to pull away from the bone. Grab some tongs and wiggle the bone – if the meat starts to separate from the bone you are done.

Mop –

1/2 cup water
1/2 cup apple cider vinegar
1/2 cup Worcestershire sauce
1/4 cup olive or peanut oil
1 tblsp garlic powder
1 tblsp chili powder
1 tsp cayenne

Fresh Peach Cobbler

20150629_204020Kris and I picked up some fresh peaches at the farmers market last weekend and they were super good. So what do you do when they are getting really ripe and you wont be able to eat them all? You make peach cobbler of course. This was my first time making this and it is really easy. Takes just a few minutes to put together and 30 minutes to bake. I used some Betty Crocker Gluten Free Rice flour blend and it was wonderful.20150629_194220Melt some butter and put it in a pan. I used an eight inch pie pan. Top with the flour mixture and add the sliced peaches.20150629_194414Sprinkle with 1/2 cup of sugar and it is ready for the oven. Bake in a preheated 350 degree oven for about 30 minutes. You will know it is done when the crust is a nice golden brown.20150629_202709Pull it out of the oven and let cool a bit before serving. Now if I would have just had some vanilla ice cream………Cheers!

Ingredients:

1⁄4 cup melted butter
1 cup flour
3⁄4 cup sugar
2 teaspoons baking powder
3⁄4 cup milk
5 -6 peaches, sliced
1 tsp cinnamon
1/2 cup sugar

Directions:

Preheat oven to 350°.
Pour melted butter into an 8×8 pan.
Whisk together the flour, 3/4 cup of sugar, baking powder, cinnamon and milk.
Pour over melted butter.
Cover with peach slices.
Cover with 1/2 cup sugar.
Bake until batter rises to top and forms a nice brown crust, about 30 minutes.

Dinner with Friends – Fish Fry!

20150630_194123Last week when Rindy and Aaron were over at our house, Kristen mentioned how she misses fish and chips. Since going gluten free it is hard to find a restaurant that serves up this classic for non wheat eaters. Well Aaron remedied the situation last night! He used rice flour and fried up some delicious cod. Man was this good. He also put together some homemade coleslaw, homemade tartar sauce and french fries, what a treat.20150630_190809Always start with some good fillets. Aaron mixed up a tasty batter to dredge this fish in before heading to the fryer.20150630_192819First roll the fish in the flour then dip in the batter. Let the excess drip off a bit then toss into the fryer. The oil should be at 375 degrees.20150630_192526Aaron has an awesome fryer. Two baskets to keep things rolling along. The fish only need about 4 minutes to cook. Pull out when golden brown.20150630_193721Check out the finished product. This is as good as any Wisconsin Friday night fish fry!20150630_192759It was a beautiful evening outside so we were able to eat outside. Dinner with Friends – Flank Steak Fajitas

20150624_201034Kris and I were watching The Kitchen on Food Network last weekend and Sunny Anderson put together some flank steak fajitas with chimichurri sauce and drunken peppers that looked amazing so decided to cook them up for our Wednesday dinner with friends. I added some grilled shrimp and fresh guacamole to complete the meal. 20150624_163022The chimichurri is fresh, easy and tasty. You just need to gather up all the ingredients and toss into a food processor. Blend until smooth. Use half to marinate the flank steak and the other half to serve with the fajitas.20150624_165630Take the flank steak out of the fridge and place in a large plastic bag. Pour the chimichurri over the steak and let marinate at room temp for 1-2 hours. 20150624_194140Grill for about 8 minutes per side. You want this to be medium rare for maximum flavor! Pull off the grill and let rest 10 minutes before slicing. While the steak was resting I tossed the shrimp in a grill basket and grilled for about 6 minutes.20150624_195626Slice the steak against the grain, this will make each bite super tender. 20150624_180649For the drunken peppers you just need 4 bell peppers, 2 pablanos, 2 jalapenos, 1 sweet onion and a can of beer. Slice into strips, saute in olive oil for about 8 minutes. Pour the beer over the peppers, cover and cook for an additional 10 minutes.20150624_184102I had a couple avocados laying around so whipped of some fresh guac to top the fajitas with. This is quick and easy to prepare – 2 avocados, some diced red onion, 1 clove of garlic, juice from half a lemon, diced tomatoes, hot sauce, salt and pepper. Just toss it all in a bowl and mix it up! Serve with tortillas or just pile on a plate. Cheers!

Ingredients
For the Chimichurri:
1 bunch fresh flat-leaf or curly parsley, leaves only
1 bunch fresh cilantro, leaves only
5 garlic cloves
1/2 cup roughly chopped red onion
2 teaspoons Hungarian or hot paprika
2 tablespoons sherry or red wine vinegar
1/2 cup olive oil
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper

For the Steak:
2 pounds flank steak
Kosher salt and freshly ground black pepper

For the Peppers:
2 tablespoons olive oil
2 poblano peppers, seeded and cut into strips
2 green bell peppers, seeded and cut into strips
2 red bell peppers, seeded and cut into strips
2 jalapeno peppers, seeded and cut into strips
1 large Vidalia or sweet onion, thinly sliced
Kosher salt and freshly ground black pepper
16 ounces pale ale or pilsner beer
Twelve 8-inch flour tortillas

Directions

Make the chimichurri:
In a food processor, combine the parsley, cilantro, garlic, red onion, paprika, vinegar, olive oil, salt, and pepper. Blend until smooth. Reserve half for drizzling on the fajitas. Place the remaining half in a large resealable plastic bag.

Marinate the steak:
Place the steak in the bag with the marinade, squeeze out excess air, and seal. Rest at room temperature 1-2 hours.

Make the peppers:
In a large straight-sided pan with a lid, heat the oil over medium-high heat. When the oil begins to swirl, add the poblano, bell, and jalapeno peppers, and the onion. Season with a pinch of salt and a few grinds of pepper. Cook, stirring, until softened and slightly caramelized around the edges, 6 to 8 minutes. Add the beer, cover, and reduce the heat to medium. Cook until all the vegetables are plump and tender, about 10 minutes. Remove from the heat.

Grill the steak:
Preheat a grill or grill pan to medium high. Remove the steak from the marinade and discard the marinade. Season the steak with a pinch of salt and a few grinds of pepper on both sides. Grill the steak, flipping just once, until cooked to medium rare, 5 to 6 minutes per side. Transfer the steak to a plate, cover loosely with aluminum foil, and let rest for 10 minutes before slicing.
