Flank Steak with Chimichurri sauce

IMG_20130609_193511_662How about an easy gourmet grilled supper? Here you go – flank steak with a fresh chimchurri sauce that is fast and simple to make. For the flank steak, remove from frig and dry with paper towels. Drizzle with olive oil and season with salt and pepper. IMG_20130609_192818_559Grill over high heat (I set the Traeger to high) for 8 minutes. Flip and grill another 8 minutes or so, until you get to your desired temp. I like it medium rare so 16 minutes total is plenty. Let the steak rest for 10 minutes before slicing.

IMG_20130609_184413_039Here is how to make this simple, yet super tasty, chimichurri sauce.

Ingredients:

  • 2 cups fresh parsley
  • 1 cup fresh cilantro
  • 3 gloves garlic
  • 1/3 cup onion
  • 1/3 cup red pepper
  • 1/2 tsp dried oregano
  • salt
  • pepper
  • 1/4 tsp crushed red pepper flakes
  • 1/2 cup olive oil
  • 1/4 cup water
  • 2 T sherry wine or red wine vinegar

Directions:

Add everything to a food processor except the red wine vinegar. Blend together until smooth, scraping down the sides as necessary. Chill until ready to serve. Right before serving stir in the red wine vinegar and there you go. A super tasty sauce that is also fun to say. Enjoy!!

Grilled Chicken Breast

IMG_20130606_202815_949Summer is the time to get out and play in the evenings which means we need easy suppers. Tonight was grilled chicken breast, sauteed green beans, and mashed potatoes. Simple and quick to make. For the chicken just drizzle with olive oil, season with salt and pepper and grill for about 30 minutes.

While the chicken is cooking, boil and mash the potatoes. I add cream and butter to make the taters smooth and creamy. We got the green beans at Costco and they were some of the best beans ever! The beans take about 10 minutes from start to finish. Add some olive oil to a pan and heat over medium high. Add the beans, season with salt and pepper, saute to the tenderness you like, We like the beans to have a little crunch. Grab the chicken off the grill, serve and enjoy!

Sausage Frittata

IMG_20130604_192427_538With the weather being so dreary lately, I have not felt much like grilling out. So what to have? How about a Frittata? Something simple and tasty. This one included turkey sausage, peppers and onions. IMG_20130604_183328_637First saute the sausage, peppers (red, yellow and a jalapeno) and onions together, for about 10 – 15 minutes. Put in an oven safe skillet.IMG_20130604_183506_621Top with cheese. I used about a cup of cheddar.IMG_20130604_183535_393Pour egg mixture on top. The egg mixtures is – 6 eggs and 1 1/2 cups half and half, whisked together. Season with salt and pepper and bake in a preheated 375 degree oven for 35-40 minutes. A knife inserted in the middle will come out clean when done.IMG_20130604_192218_905Remove from oven, let stand for 5 minutes. Cut, serve and enjoy!!

Burger Challenge

IMG_20130602_192959_355My goal this summer is to create the ultimate burger. Here is my first entry and attempt at it.
I am going to call this one: Turkey with Egg. As you can I topped the burger with a fried, easy over egg. If you have never tried this, you should!
Here is the process:

While the burgers are grilling saute some green and red peppers and onions in butter. Cook these until soft and a bit browned. Keep warm. Grab the burgers off the grill, top with shredded cheese and cover while you fry the eggs. Put a burger on a plate, top with the sauted peppers and then the egg. Dig in and enjoy!!

3-2-1 Ribs! Memorial Day

IMG_20130527_190609_184Grilling on Memorial Day is a must, the proper way to kick off summer! Even tough the weather was not great I had a fun time grilling some ribs and beans. The 3-2-1 method for ribs is a sure fire way to get some great ribs.IMG_20130527_114031_608First you need a good dry rub. Here is what I used for this batch:

  • 2 T chili powder
  • 2 T onion powder
  • 1 T smoked paprika
  • 1 T garlic powder
  • 1 T salt
  • 1 T pepper

Combine all ingredients and mix thoroughly.IMG_20130527_115254_240You also need a wet rub. Here is what I came up with:

  • 1/4 cup mustard
  • 1 T gluten free soy sauce
  • 1 T Worcestershire sauce
  • 1/4 cup beer
  • 2 T BBQ sauce

Mix all ingredients together.IMG_20130527_115752_337First cover ribs (both sides) with the wet rubIMG_20130527_120910_917Now add the dry rub, liberally, and rub into ribs. Cover and refrigerate for a couple hours.IMG_20130527_125514_296Time to start grilling! For the 3-2-1 method, the first step is to smoke the ribs for 3 hours (150 -180 degrees)IMG_20130527_160409_292

Next step is to put the ribs in foil and braise for 2 hours. Take some sheets of foil, pour on some apple juice, honey and brown sugar. Top with slab of ribs and seal tightly. You do not want to let any steam escape.IMG_20130527_160530_803Back on the grill for 2 hours. Now you want the heat to be about 225 degrees for this.IMG_20130527_180555_185After the 2 hours, remove the ribs from the foil, slather with your favorite BBQ sauce and back to the grill for another 30 minutes to 1 hour, until the ribs are done and the sauce is set.IMG_20130527_190127_000Remove the ribs, cut into servings and enjoy!! Best Ever Scallops

I had some of the best scallops while on vacation in Florida. We went out on Saturday night to Racks Fish House and Oyster Bar and I had this wonderful meal. It is amazing when you can get fresh seafood!

Kristen had the shrimp and grits. The grits were not as creamy as she likes but overall a tasty dish. If you are ever in Delray Beach, FL I highly recommend this spot!

Beer Can Chicken – New Gadget

IMG_20130519_140625_188Roasting chicken the ‘beer can’ method always turns out a tasty, moist bird. Since going gluten free I no longer have cans of beer laying around so had to come up with a different solution. This gadget (found it on Amazon) is the perfect solution. With the tray it makes it easier to stand up the chicken and allows you to move it on and off the grill with ease. Another great feature is the can that comes with it. Now you can add any liquids you want – wine, apple cider, beer – to create different flavors. All parts are dishwasher safe so clean up is a breeze.

Breakfast Scramble

IMG_20130519_083834_658Normally I am too lazy to cook before work (or I get up too late) so I get an egg scramble at the office. I decided spending 3 bucks a day was a bit wasteful so will now have breakfast at home. It only takes a few minutes to put together and is so tasty.IMG_20130519_082503_831Grab some ingredients from the fridge and chop them up> Today I had red pepper, red onion, and mushrooms. Add some olive oil to the pan and heat over medium heat. Add the chopped veggies and saute for about 7 minutes.IMG_20130519_083504_034Whisk the eggs in a bowl and add to pan with veggies. Cook until the eggs are almost done, add some cheese and finish cooking. Serve with hot sauce and enjoy!

Beef Jerky

IMG_20130515_222203_439Everyone loves some beef jerky! I found a recipe for jerky on the Traeger. I was so excited to try it, I could not wait for the weekend. I got a piece of eye of round steak and got started.IMG_20130514_220322_705

Cut the meat into 1/4″ strips and place in a Ziploc bag. Put together the marinade and pour over the meat, refrigerate overnight. IMG_20130515_173537_249

Remove the meat from the Ziploc, dry on paper towels and place directly on grates of preheated grill.

Time to smoke – here comes the fun part. Fire up the Traeger and get temp to about 180 degrees. IMG_20130515_222218_875

Smoke for 4-5 hours,  until the jerky is dry but still chewy and somewhat pliant when you bend a piece. Transfer to a ziploc while the jerky’s still warm and let it rest for an hour at room temperature. Squeeze any air from the bag, and refrigerate the jerky. It will keep for several weeks.Enjoy!
