Blueberry Hand Pies

20161118_203048For Thanksgiving Kris and I head to Shawnee, KS to celebrate the holiday with our great friends, the Lombardos. This year we were asked to bring a gluten free dessert to share. Kris came up with an awesome idea – Hand Pies!! Now I have never made a hand pie so we needed to do a test run. Tonight was the night – Blueberry Hand Pies. After these, KZ has a new favorite!!20161118_215208To make the crust we found cup4cup pie crust at Williams-Sonoma. The crust turned out perfect! You will never know this is not regular flour.  And it is simple to use, you just need butter, egg yolk and water to make the perfect pie crust.20161118_184955We went with a blueberry filling for the pies. This is easy to whip up and has some excellent flavors – nutmeg, cinnamon and lemon zest will have you wanting more. First step is to cook some of the berries with sugar over low heat. You want the sugar to melt before heading to the next step.20161118_192457After adding a corn starch/water mixture and more heat you have the makings of a great pie filling. Once cooled a bit, add the spices, butter and the rest of the berries. Fold in and let cool while you roll out the dough. 20161118_195133Roll the dough to about 1/4 thickness and cut out the shape you like. We went with round pies but you could also make rectangular or square – whatever trips your trigger! Add the filling, seal the edges and bake them up. 20161118_204709Let cool for a bit then time to enjoy! Next time I will add some ice cream or fresh whipped cream. Cheers!

 

Blueberry Filling:

2 pints blueberries
3⁄4 cup sugar
3 tablespoons cornstarch
3 tablespoons water
1 teaspoon lemon rind, grated
1⁄2 teaspoon cinnamon
1⁄4 teaspoon nutmeg
2 tablespoons unsalted butter
1 egg, well beaten with 1 pinch salt, for egg washing top of pie

DIRECTIONS:

Combine 1 cup berries with 3/4 cup sugar in pan.
Simmer on low heat until sugar is melted and mixture is very liquid; about 5 minutes.
Combine cornstarch and water in bowl.
Add to pan with blueberries.
Cook over medium heat until mixture comes to full boil and is clear and thick.
Pour hot mixture into large bowl.Cool until warm.
Fold in remaining 3 cups of blueberries, lemon rind, cinnamon,nutmeg and butter.
Let cool before adding to pie crust.

Follow the directions on the cup4cup pie mix package for the crust.

Hand Pies:

Preheat oven to 375°.Roll out dough on a floured surface (I use cup4cup gluten free all purpose flour). Cut into circles.
Brush edges of circles with water; mound some blueberry filling in center of each. Top with another circle, and press edges to seal. Place on a parchment-lined baking sheet, brush with egg wash, and sprinkle with raw sugar. Cut slits in tops.
Bake hand pies, rotating sheet halfway through, until juices are bubbling and pastry is golden brown, 35–40 minutes (juices will run onto parchment). Transfer to a wire rack. Serve warm or at room temperature.

Black Bean Kielbasa Soup

20161111_202337Mmm more soup! Kris and I have definitely been on a soup kick lately. Great thing about soup – you can use whatever is in your pantry and come up with something good. Tonight I saw we had a couple cans of black beans and some kielbasa in the fridge so this is what I came up with. I am calling this my ‘base black bean kielbasa soup’, not too many ingredients but still tasty. You could easily change this up – Use salsa instead of the diced tomatoes, add some fresh corn to the mix and you would have a more southwest version.20161111_185930Just some basic ingredients in here tonight. Gather everything up and start chopping. I like to get everything diced, sliced and open before even getting out the pan.20161111_191027Heat some olive oil in a large dutch oven, toss in the kielbasa and brown for about 3 minutes. Now add the onion and peppers, cook 5 minutes more. Add garlic and cook for 1 minute. Here is when the house begins to smell soooo good!20161111_191336Next add the tomatoes and drained black beans. Stir and cook for a couple of minutes. Add enough stock to cover (or as much as you like), add spices stir and bring to boil. Reduce heat to simmer and cook for 30 minutes. That is it! Grab a large bowl and serve. Top with cheese, sour cream or anything that makes you feel good. Cheers!

Ingredients:
1/2 onion, diced
1 pepper (any color), diced
1 serano pepper, finely chopped
2 cloves garlic, minced
1 kielbasa
1 can diced tomatoes
2 cans black beans, drained and rinsed
3-4 cups chicken stock
1 tsp Italian seasoning
1 tsp chili powder
salt and pepper, to taste
1 T olive oil

Directions:
Heat olive oil in large dutch oven over medium heat. Add kielbasa and cook for 3 minutes. Add onion and peppers, cook 5 minutes. Add garlic and cook for 1 minute, until fragrant. Add tomatoes and beans. Stir and cook for a couple minutes. Add stock and spices, bring to boil. Reduce heat and simmer 30 minutes. Serve in large bowls and enjoy.

Mushroom Asparagus Risotto with Sea Scallops

20161109_191323The inspiration for dinner with friends this week comes from Biaggis restaurant. I had Risotto with Sea Scallops and it was amazing so thought this would be perfect. And it was!20161109_175058The Risotto is the star of this dish. Be sure to start with quality ingredients. For the cheese I mixed Parmesan and Manchego (a Spanish sheep milk cheese). Freshly grated makes for a creamy good risotto. Gather the goods and start chopping.20161109_185204I know what you are thinking – risotto? on a week night? that is a lot of work! Well I figured out risotto is not that hard when you bake it! Yes you can make a great risotto by baking it. No need to stand around and stir for 45 minutes. 20161109_185539As for the mushrooms and asparagus – it is best to saute them in a pan and add to the risotto after it comes out of the oven. This is a simple task as well – saute in olive oil, season with salt and pepper for about 7 minutes. Then just fold into the risotto.20161109_185920After folding in the veggies add some butter and the grated cheese. Things are looking good now! Keep warm on low heat while you cook the scallops. You may need to add more stock if the risotto gets dry.20161109_190013Rinse the scallops and dry on paper towels. Check the scallops and remove the side muscle, if still attached. The side-muscle is a little rectangular tag of tissue on the side of the scallop and is tough so you do not want to eat this! Season both sides with salt and pepper before cooking in a hot pan.20161109_191202Heat oil and butter in the pan over a medium-high heat. You want to get the scallops golden brown on each side. These only take 2 minutes per side! Be careful to not overcook or they will be tough.

For the side KZ made a great wedge salad with all the fixings! Blue cheese, bacon, red onion, tomato….Yum!20161109_190444This was restaurant quality wedge salad – thanks KZ!! Now just pour a nice glass of wine, load up your plate and enjoy. Cheers!

 

Risotto

Ingredients:

1 shallot, diced
3 cloves garlic, minced
1/2 cup blend parmesan and manchego
1 cup asparagus
1 cup mushrooms
1 1/2 cups aborio rice
4 1/2 cups chicken stock
1/2 cup dry white wine
3 T butter
olive oil
salt
pepper

 

Directions:

Heat 1 T olive oil in dutch oven over medium heat. Add shallots and cook for about 3 minutes. Add garlic and cook for 1 minute. Add rice and cook for 2-3 minutes, until rice is coated and slightly toasted. Add wine and cook until absorbed. Add 3 cups stock, increase heat to high and bring to simmer, stirring. Cover and put in 400 degree oven.

Bake 25 – 30 minutes, stirring half way through time. Remove from oven when liquid is absorbed and rice is tender. Add remaining stock and keep warm over low heat. In the meantime saute the mushrooms and asparagus in 1 T of olive oil. Cook for about 5 minutes over medium high heat. Fold into risotto. Stir cheese and butter into risotto.

Serve hot with scallops and enjoy!!

Happy Halloween!!

20161030_172408The pumpkins are carved and ready. I got the ideas this year from Marvin who sent me some Calvin and Hobbes snowman cartoons and I think these turned out pretty good!

It is a bit cold and windy but we are looking forward to having lots of kids stop by for some trick or treating – we normally get around 150 kids so it can be busy! Our friends Rindy and Aaron are coming by to help out and have some supper.

It has become somewhat of a tradition to have soup on Halloween. Something easy to prepare and you can eat anytime. Nothing formal for this Spooky night…

Kris and I both thought the White Bean Kale with Sausage was the best of “Soup Week” so that is on tap for tonight. Kris also found a great drink to go along with Halloween – Caramel Apple Mimosas from delish.com – and these are tasty! A must try for the fall season!!20161029_174013

I took the pic a bit early and did not have the glass rimmed with the caramel yet. The caramel vodka is really good and makes this taste like a caramel apple!

Soup Week – Pork Tenderloin

20161028_195006Soup Week continues. You might be asking yourself ‘What happened to Thursdays soup?’. Well that was leftover night! We had to polish off the soups from earlier in the week. Apparently  I make more than 2 people can eat. Tonight we went with a pork tenderloin soup. Another keeper! 20161028_185448This had a bit of a chili feel. I used chili powder, paprika and cumin  to spice it up. A jalapeño for additional heat gave this batch just the right feel. I like to chop everything up then get cooking.20161028_190235First brown the pork in your Dutch oven. Remove to a plate and saute  the onion ,  pepper and jalapeño for 5 minutes. Add the garlic  and cook for a minute. 20161028_190620Toss the pork back in the pan. Now is when I like to sprinkle on some chili powder and cook for a minute . This gives the pork more flavor.20161028_191000Now is the time to add the rest of the ingredients, bring to a boil. Reduce heat and simmer for about 30 minutes. Serve in a large bowl, top with fresh chopped avacado. Cheers!

Ingredients:

  • 1lb pork tenderloin
  • 1 red pepper
  • Small onion
  • 1 jalapeño
  • 1 clove garlic
  • 1 can diced tomatos
  • 2 cans navy beans
  • 4 cups chicken stock
  • 2 T chili powder
  • 1 tsp cumin
  • 1/4 tsp paprika
  • Salt and pepper, to taste
  • 1 T olive oil
  • 2 T chopped cilantro
  • 1 avacado

Directions:

Heat olive oil in Dutch oven over medium high heat. Add pork and brown. Remove pork, add red pepper, onion and jalapeño. Cook for 5 minutes. Add garlic and cook for a minute.

Put pork back in pan, sprinkle with chili powder and stir. Add remaining ingredients except for cilantro and avacado. Bring to boil, reduce heat and simmer for 30 minutes. Stir in cilantro and remove from heat. Top with avacado for serving.

Soup Week – White Bean Kale with Sausage

20161026_205657Soup Week continues – tonight’s entry is my favorite of the week so far! White bean kale and sausage, a great combination. I think this will be the Halloween Night meal. We found the kielbasa at Whole Foods and it was a good one. Kris agreed this is a keeper! 20161026_204208The Dutch oven is getting a workout this week. One great thing about  making soup every night is you do not need to dirty many pans! Clean up is a breeze. Serve this soup in a large bowl and top with some parmesan cheese and you will be satisfied. Cheers!

Ingredients

  • 12 Oz smoked kielbasa
  • 3 carrots
  • 2 stalks celery
  • 1 medium onion
  • 4 cloves garlic, minced
  • 4 cups chicken stock
  • 2 cans cannelli beans
  • 5 Oz baby kale
  • 1 T Italian spice blend
  • Salt
  • Pepper
  • 1 T olive oil
  • Parmesan cheese

Directions:

Heat olive oil in Dutch oven over medium high heat. Slice kielbasa and add to pan and brown for about 5 minutes. Remove kielbasa to a paper towel lined plate. Add carrots, celery and onion to pan. Cook for 3 minutes. Add garlic and cook for 1 minute more. Add stock, Italian spice, salt and pepper. Bring to boil and cook 10 minutes.

Add kale and cook for 10 more minutes, or until kale and carrots are tender. Toss in kielbasa and beans. Heat through and serve.

Soup Week – Hamburger Soup

20161025_19300145 degrees and raining makes for another good night for soup. Tonight we went with a hamburger soup. This is always a good choice on a cool fall evening. Hamburger, potatoes, veggies = Tasty!20161025_191328This is another easy to put together soup. It does not take long and has tons of flavor. Normally I toss in green beans but tonight I used peas. That is the good thing about soup – toss in what you like! Serve in a large bowl, add some hot sauce and top with grated parmesan cheese and you are ready to go. Cheers!

Ingredients

  • 1 lb hamburger
  • Small onion
  • 2 medium potatoes, diced
  • 1 can diced tomatos
  • 4 cups stock
  • 1 bag frozen pea/carrot mis
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

Directions

Brown burger and onion in large Dutch oven. Drain and return to pot. Add potatoes, tomatoes, stock and seasonings. Bring to boil, cover and reduce heat. Simmer for 15 minutes. Add frozen veggies, cover and simmer 15 minutes more.

Soup Week – Chicken Noodle with Kale

chickensoupFall is upon us here in Minnesota and that means soup season!! I decided to have a soup week and try out some new recipes. Night 1 = Chicken Noodle with Kale. This turned out to be a very good combination and a keeper. Great thing about soup is you can easily make it on a weeknight. Takes about an hour to create a flavorful, hearty soup!!soup2A good dutch oven is a must for cooking up a tasty soup. They keep an even heat and allow the flavors to meld as you slowly simmer for an hour. I also made a batch of gluten free cornbread to go along with the soup – a great combination. Nothing better than a warm piece of cornbread topped with butter and honey. Cheers!

Ingredients

  • 2 cups cooked chicken (I use rotisserie chicken)
  • 3 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken stock
  • 5 oz baby kale
  • Cooked noodles – I used gluten free spirals – add as many as you like
  • 1 T tomato paste
  • 1 t salt
  • 1 T pepper (or more – I like a lot of pepper in chicken soup)
  • Fresh spice mix – marjoram, thyme, sage, rosemary, bay leaf – a sprig or two of each
  • Olive oil

 

Directions

Heat olive oil in Dutch oven over medium heat. Add carrots, celery and onion. Cook for about 5 minutes, until veggies soften. Add garlic and cook 1 minute more. Add stock, chicken, tomato paste, salt and pepper. Tie the fresh spice mix together using kitchen twine and toss in pot. Bring to boil, reduce heat and simmer for 45 minutes. While soup is simmering, cook noodles according to package. Add kale and noodles during final 10 minutes of cooking.  Serve in large bowls and top with grated cheese and hot sauce. (optional)

Smoked Ribeye

20161014_194726So my brother and niece came to town for a night. They needed to pick up my nephew from the airport the next morning so I asked my niece what she would like for supper – her answer? Ribeye, baked potato and asparagus, of course! (She is 10) Well that sounded tasty. I decided to smoke the ribeye for an hour first then crank up the heat for a final sear.  These turned out great! 20161014_174812I got these bad boys at HyVee. Pull them out of the fridge 30 minutes before cooking. Why do this? If you put cold meat on the grill it will lower your grill temp. Better to keep a steady temp for better cooking.20161014_175830I got the Traeger going on smoke and put the steaks on. Smoke for 1 hour, keeping the temp around 180 degrees.20161014_190842After an hour pull the steaks off and crank up the grill to high heat. The Traeger gets to 415 to 440. Plenty of heat to get a nice search on them. Grilled for 6 minutes per side for medium rare.20161014_193731Pull them off the grill and let them rest for 10 minutes before serving. We added sides of baked potatoes and sautéed asparagus. Perfect Friday night meal. Cheers!

Pork Ragu

20160924_191812How about an easy weeknight supper? The crockpot is a great way to prepare a meal and have it ready after a long day of work. We decided  to try some pork ragu.20160924_102340

In a 4- to 6-quart slow cooker, combine the carrot, onion, garlic, tomato paste, thyme, oregano, ¾ teaspoon salt, and ¼ teaspoon pepper. Add the tomatoes (and their juices); add the pork and turn to coat.20160924_102621Cover and cook until the pork is very tender, on low for 7 to 8 hours or on high for 5 to 6 hours (this will shorten total recipe time.20160924_185905Twenty minutes before serving, cook the fettuccine according to the package directions; drain and return it to the pot. Meanwhile, using 2 forks, shred the pork and mix it into the cooking liquid. Toss the pasta with the ragù and sprinkle with the Parmesan.20160924_191453We used a gluten free spiral pasta and it worked great. Perfect weeknight supper. Cheers!!
