Chocolate Walnut Cookies

20160214_202602Even when eating clean, you need a treat every now and then. I found this recipe for chocolate walnut cookies that sounded amazing. Chocolaty, crispy and oh so tasty! I modified the recipe a bit to make it a little more healthy. I used organic coconut palm sugar instead of standard white sugar. You cannot even taste the difference. And of course we use gluten free flour to avoid wheat.20160214_200034These cookies freeze well so you can have a tasty treat whenever you feel like it! Cheers!!

Ingredients

6 oz Guittard bittersweet chocolate – 70% Cacao
2 T butter
2 large eggs
7/8 cup organic coconut palm sugar
1/4 t salt
1/4 cup GF flour
1/4 t baking powder
1/2 cup chopped walnuts

Melt chocolate and butter in a large mixing bowl. Beat eggs, sugar and salt on high speed, 2-3 minutes, until light. Add melted chocolate on low speed to blend.

Mix in flour and baking powder. Scrape sides then stir in walnuts. Cover bowl with plastic wrap and chill for 30 minutes or overnight.

Preheat oven to 350 degrees. Line baking sheet with parchment paper. Scoop by heaping spoonfuls onto baking sheet. Bake 12-14 minutes, until puffed and crinkled on top but soft in the middle. Cool 3-5 minutes on racks, until cookies easily release from the parchment.

Macadamia Crusted Cod

20160208_200333Clean eating continues with another tasty cod recipe! I love a recipe that is easy and super tasty. This only takes about 30 minutes total time so is perfect for a weekday meal. I served this on top of sauteed greens – Healthy can be tasty!

Cod
1 pound cod, cut into 4 fillets
1 ½ cups macadamia nuts, chopped
Zest of 1 lemon
¼ cup fresh parsley, finely chopped
¼ cup unsweetened shredded coconut
½ teaspoon salt
½ teaspoon black pepper
2 eggs
3 tablespoons unsweetened, full-fat canned coconut milk
Tender Greens
4 garlic cloves
1 yellow onion
1 tablespoon coconut oil
1 bunch of kale, washed
3 handfuls of spinach
2 tablespoons freshly squeezed lemon juice
2 tablespoons coconut aminos
1 teaspoon turmeric
1 teaspoon garlic powder
Salt and pepper to taste

Directions
Preheat oven to 400°F, and grease a baking dish with coconut oil.
For tender greens, chop 4 garlic cloves, dice 1 onion, and chop 1 bunch of kale. Set
aside.
Process 1 ½ cups macadamia nuts in the food processor until coarsely chopped.
Zest a lemon. Chop ¼ cup of fresh parsley.
In a medium bowl, mix macadamia nuts, ¼ cup shredded coconut, zest of 1 lemon,
¼ cup chopped parsley, ½ teaspoon salt, and ½ teaspoon pepper.
In a separate bowl, whisk together 2 eggs and 3 tablespoons coconut milk.
Dunk cod fillets in egg/milk mixture, and then dredge each one in the nut mixture,
pressing the nuts into the fish firmly. Set aside.
Place cod fillets into greased baking dish and bake until flakey, about 13-18
minutes.
Meanwhile, melt coconut oil in a skillet over medium heat.
Add chopped garlic, onion, and kale to the skillet, and sauté until tender, about 5-8
minutes.
Add 2 handfuls of spinach, 2 tablespoons freshly squeezed lemon juice, 2
tablespoons coconut aminos, 1 teaspoon turmeric, and 1 teaspoon garlic powder.
Cook and stir until spinach is wilted and kale is tender. Salt and pepper to taste.
Serve with Coconut Macadamia Crusted Cod fillets.

Homemade Tartar Sauce

20160119_193715So why would I make my own tartar sauce? First of all it is really easy and second you know what the heck is in it!! Here is a store bought tartar sauce:

 

20160127_205910And this is America’s favorite! Look at those ingredients – high fructose corn syrup??? modified food starch – what the heck is that? Hmmm I like to know what I am eating.20160119_193255Here are my ingredients:

1/2 cup good mayonnaise
2 tablespoons small-diced cornichons
1 tablespoon Champagne vinegar
1 tablespoon capers
1 teaspoon dijon mustard
Pinch kosher salt
Pinch freshly ground black pepper

Nothing crazy or unidentifiable here. And here is how easy it is:

Place all the ingredients in a small bowl and mix well. Chill for at least one hour before serving.

That is all there is to it. Not only does it go great with fish but Kris loves it on french fries!!!

Pan Fried Cod

20160119_195514The holidays are long gone so now it is time to do some clean eating! Hy-Vee had some wild cod on sale so that sounded like a good way to start. This is a simple meal and does not take much time at all. Fry the cod in a bit of olive oil and you will get a nice crust on the outside. We served this over a bed of mixed greens and some homemade tartar sauce.20160119_194242Dry the fish on paper towels, season with salt and pepper and you are ready to go. Get your pan ready – heat a couple table spoons of olive oil over medium-high heat. When the oil is shimmering you are ready to cook.20160119_194819Normally I use my cast iron skillet for this but I was to lazy to walk down to the basement to get it so I just used a heavy non-stick skillet. Cook the fish about 4 minutes per side, depending on thickness. The fish is done when it flakes easily. Do not overcook or the fish will get rubbery.20160119_193255Be sure to mix up a batch of tartar sauce. Very simple to do. Chop up the ingredients and mix together in a small bowl. You will want to do this a little ahead of time as it is better if you can chill for an hour.20160119_193715Grab yourself a plate and dig in. Cheers!

Dinner with Friends – Crab Cakes

20160106_193931New Year and new dinner with friends! This week Kris said she wanted crab cakes so that is what we had:) I think it has been 2 years since I made some crab cakes, not sure why I waited so long to make them again. I forgot how tasty they are!20160106_182833Crab cakes are a fairly easy thing to make. Just gather up all the ingredients and get started. For the bread crumbs I found an excellent GF panko style crumb. These worked great.20160106_183900First mix all ingredients, except crab and bread crumbs, in a large bowl. Next gently stir in the crab and finally mix in the bread crumbs.20160106_192902Form the mixture into patties. Add 3 tablespoons of oil to a cast iron pan and heat over medium high heat. Cook for 3-4 minutes per side.20160106_191711Check out the nice golden crust! These are coming along just fine. Remove from pan and drain on paper towels, to remove excess oil. 20160106_180656All good crab cakes need a good sauce to go with them This one is simple and tasty. The horseradish gives it just the right amount of heat. 20160106_181533Mix all ingredients together and chill for an hour before serving. Kris made big salad to go along with the cakes. We also had some sweet potato fries and tater tots! A great dinner with friends. Cheers!

For the crab cakes:

Ingredients
1 lb lump crab
¼ cup mayonnaise
2 eggs
3 chopped green onions
1 tsp seafood seasoning, like Old Bay
¼ tsp white pepper
¼ tsp cayenne pepper
1 tsp dry mustard
2 tsp Worcestershire sauce
½ cup bread crumbs
3 T oil

 

Directions

Mix all ingredients, except crab and bread crumbs, in a large bowl. Gently stir crab. Add bread crumbs and stir until just combined. Form into patties. Heat the oil in a cast iron pan over medium high heat. Cook for 3-4 minutes per side, until golden brown. Drain on paper towels to remove excess oil and serve.

Sauce

Ingredients
1/4 cup mayo
1-2 T horseradish
1 T capers
1 tsp dijon mustard
1 T chili sauce
1 tsp oregano
2 tsp worcestershire sauce

Directions
Mix all ingredients until well blended. Chill for an hour before serving.

Cookie Time – Snickerdoodles

20160103_210916So I made it through year one of making cookies for all my niece’s and nephew’s birthdays. It was a lot of fun, I got many thanks yous and of course requests to do it again this year!! One change to the plan – I told the kids they can choose what type of cookie they want. Jaci is first up with a January 5th birthday and she requested (with the help of her mother) Snickerdoodles. I have never made these before but will give it a shot!!20160103_190929Not too many ingredients for these so was not too difficult. The hardest thing with these cookies is to know when to take them out of the oven. I learned this the hard way and the first batch was not so good:) Once I figured out the timing, the rest was a breeze.20160103_192958Once the dough is made, you roll them into a ball and dredge through a cinnamon – sugar mix to coat them. The dough is similar to chocolate chip coolie dough…..20160103_193302Be sure to coat the whole cookie ball. You want to be sure to get all the flavor in and on the cookie!20160103_193652Place the dough balls on a cookie sheet covered with parchment paper. Bake in a preheated 325 degree over for 12-14 minutes. This is the tricky part – you want to be sure the cookies are done in the middle but if you bake too long they will be crunchy.20160103_195016As you can see, when these come out of the oven they are still soft and fluffy. The cookie will set up once it is cooled. Leave the baked cookies on the pan for 5 minutes then transfer to wire racks to cool completely.20160103_212018Once cooled I place the cookies in the freezer overnight. The next morning, into the box and shipped to Jaci. I hope they taste as good as they look!! Happy Birthday Jaci!!!

Ingredients
1 cup butter, room temperature
¾ cup granulated sugar
½ cup light brown sugar
1 egg, plus 1 yolk
1 Tbsp vanilla
1 tsp baking soda
1 tsp cream of tartar
½ tsp kosher salt
1 tsp cinnamon
2¾ cup flour
Cinnamon Sugar
¼ cup granulated sugar
1 Tbsp cinnamon
Instructions
Preheat oven to 325°
Line a baking sheet with parchment paper, set aside.
In bowl of stand mixer beat butter and both sugars until light and fluffy, 2-3 minutes. With mixer on medium speed add in egg, yolk and vanilla and beat for another minute, scraping the sides as necessary.
Turn mixer to medium low and mix in baking soda, cream of tartar, salt and 1 tsp cinnamon. Mix for 30 seconds, scraping sides as necessary.
Turn mixer to low and add in flour, mixing until just combined.
In a separate small bowl make your Cinnamon Sugar by mixing together cinnamon and sugar, stirring until evenly combined.
Using a cookie scoop or spoon, measure out about 2 Tbsp of dough and roll into a ball. Then roll each cookie dough ball into the Cinnamon Sugar mixture.
Place on prepared baking sheet about 2 inches apart. Bake for 10-12 minutes, turning cookie sheet halfway through baking.
*I baked mine for exactly 10 minutes every time I make these cookies with perfect results, but I know ovens vary, so bake only until the edges are slightly golden. The tops may seem slightly undercooked, but they will firm up perfectly when they cool. If you prefer a crisper cookie, bake for 2 additional minutes.

Dutch Oven Pot Roast

20151215_201803Well last weekend I picked up a 1/4 cow.(long story – thanks Bev:)) This is the first time I have ever done this and let me tell you – that’s a lot of beef!. My freezer is full, no room for anything else at the moment. Which just means more beef for dinner!

How about a pot roast cooked in a dutch oven? Sounds good to me. Normally this would be a Sunday supper but I thought I would make this on a week night. It only takes about 2 hours so no worries about time.20151215_180644Time to gather up all the ingredients. Nothing goes better with roast then some carrots and potatoes! I like to use little red potatoes as they get tender and tasty. Check out that roast – nothing better than farm fresh beef.20151215_181548Chop up the veggies in large chunks. You do not want to cut the veggies to small or they will get over done during cooking.20151215_181627The key to a good roast out of the oven is to sear all sides before roasting. Heat a couple tablespoons of olive oil in the dutch oven over medium high heat. Brown the roast on all sides, about 3 minutes per side. Remove the roast from the pan and set aside. Now time to deglaze the pan to get all the tasty bits off the bottom. Pour about 1/2 cup of red wine into the pan and cook while scraping the pan. Let the wine reduce by about half. Now add the veggies and cook for about 3 minutes.20151215_182715Nestle the roast back in the pan, add some fresh herbs. I used a couple springs of thyme and sage. Add enough stock (normally beef stock but I only had chicken stock) to cover the meat about halfway up. Cover and place in a 325 degree oven. Roast for about 1 1/2 hours or until the internal temp of the roast is 145 degrees.20151215_200112Pull out of the oven and let rest for 10 minutes before removing and slicing. Remove all the veggies and reserve the juice in the pan. Time to make some gravy! Strain the juices and return to the pan. Heat to boiling and add a mixture of corn starch and water to thicken. Remove from heat when thick. Grab a plate and chow down. Cheers!

Dinner with Friends – Stuffed Pork Loin Roast

20151209_192451The holiday season is upon us which means weeks of great food. We had Rindy, Aaron and Fal over for dinner and Kris suggested something stuffed. How about pork stuffed with pork? Yes! Start with a nice pork loin roast and fill it with a stuffing made of Italian sausage, apples and fresh herbs. This says Christmas, the fresh rosemary smells like a Christmas tree. This is fairly easy to make. I think the hardest part was slicing and rolling out the roast.
20151209_163016Get a good mild Italian sausage and cook over medium heat. I got this from Hy-Vee – being from Iowa it was great to see Hy-Vee finally open a store here in the Twin Cities. 20151209_162954While the sausage is cooking dice up an apple, an onion and a couple stalks of celery. When the sausage is cooked, remove it from the pan and toss in the chopped goodies. Cook for about 5 minutes or until the apples is no longer crisp. Remove from heat and stir the sausage back in.20151209_165341No stuffing is complete without bread crumbs (of course we use gluten free) and butter. Take the bread crumbs and toss into a food processor. Add fresh chopped rosemary, sage and thyme. Blend until well combined. Now melt 2 T of butter in a saute pan, add the bread crumb mixture and cook for about 3 minutes. Add this to the sausage mixture.20151209_170520Slice the roast and pound out to about 1/2 inch thick. Top with the stuffing and roll up tight. 20151209_171314Tie the roast with some kitchen twine to hold in all that stuffing. Season the outside of the pork with olive oil, salt and pepper. Now you can cook this in a roasting pan in the oven (375 degrees for about an hour – internal temp to 145 degrees) or do like I did. Cook it on the Traeger! I smoked it for 1 hour at 180 degrees then cranked up the heat to 350 degrees. I cooked it for about 45 more minutes and it was done!20151209_191107Let the pork rest for 10 minutes. Cut off the twine and slice. 20151209_192150We served this with a kale salad, and mashed potato/turnip mixture (recipe to follow in another post). Serve it up and enjoy. Cheers!

Ingredients
1/2 pound mild Italian sausage
1 yellow onion, chopped
2 stalks celery, chopped
1 tart apple, peeled and diced
Salt and freshly ground pepper
2 cloves garlic, minced
3 tablespoons bread crumbs
2 teaspoons chopped fresh sage
2 teaspoons chopped fresh rosemary
1 teaspoon chopped fresh thyme
2 tablespoons butter
1 (3-pound) boneless pork loin
1 tablespoon vegetable oil
1/2 cup white wine (if cooking in the oven)
If roasting in the oven – preheat to 375 degrees
If smoking/grilling – smoke at 180 for 1 hour then 350 for an additionl 45 minutes

In a large saute pan over medium heat, saute the sausage until no longer pink. Remove the sausage (leave in the fat), and set aside. To the pan, add the onion, celery, and apple and sprinkle with salt and pepper. Cook until the apple is no longer crisp, about 5 minutes. Add the garlic and cook an additional couple of minutes. Remove from the heat, stir the sausage back in and set aside.

In a food processor, pulse the bread with the sage, rosemary, and thyme into coarse crumbs.

Heat the butter in a medium saute pan and cook the crumbs over medium-high heat until coated with butter and lightly toasted, about 3 minutes (be careful not to burn). Mix the breadcrumbs into the sausage mixture.

Prepare the roast as if making a jellyroll. Place the roast with the short side toward you, and fat facing down toward the counter or cutting board. Use a sharp knife to slice the roast open at about 1/2-inch from the bottom of the roast (parallel to the cutting board), being careful not to cut all the way through. Continue cutting, unrolling the roast as you work until you have a large, thin piece of meat. Place the rolled out piece of meat between 2 sheets of waxed or parchment paper, and lightly pound with meat mallet to increase the meat surface area by 10 to 20 percent. Be careful not to pound through the meat. Salt and pepper the pork and top with the filling, spreading evenly across the pork, leaving a 1-inch margin around the perimeter.

Starting with the short side, roll up tightly jellyroll style, and secure the roast with kitchen twine.

Heat a large saute pan over medium heat and add oil. Add the roast and brown on all sides. Place in a roasting pan fitted with a rack and add the wine in the bottom of the pan (to keep the juices from burning), and bake for 45 minutes to 1 hour, or until the internal temperature hits 145 degrees F on an instant-read thermometer. Remove the roast from the oven and allow to rest for a full 10 minutes before slicing and serving.

Smoked Salmon Egg stuffed Avacado

20151126_115809Kris and I took our annual trip to Shawnee Mission, KS to spend Thanksgiving with our friends the Lombardos. This is our favorite trip of the year! There is always plenty of great food, conversation and fun times. This year Beth made Smoked Salmon Egg Stuffed Avacados for breakfast and what a treat they were! I would have never thought of any thing like this but will these will now be a standard item for all future brunches!!20151126_113021Great tasting and easy to make. Cut the avacados in half and remove the seed. If the hole looks to small just scoop out enough flesh so it can hold an egg. Add some smoked salmon and an egg. It is best to crack the egg into a small bowl and spoon it onto the avacado. This way you can add as much egg as needed. Season with salt and pepper and pop into a 425 degree oven for 15-20 minutes.20151126_115253Pull out when the egg is done to your liking. We found it best to be over easy so the yolk ran down into the avacado when digging in! Sprinkle with fresh dill and red pepper flakes and enjoy!

INGREDIENTS

4 avocados
4 oz smoked salmon
8 eggs
Salt
Black pepper
Chili flakes
Fresh dill

INSTRUCTIONS

Preheat oven to 425°F.
Halve the avocados remove the seed. If the hole looks small, scoop out a small bit at a time until it can hold an egg.
Arrange the avocado halves on a cookie sheet, and line the hollows with strips of smoked salmon. Crack each of the eggs into a small bowl, then spoon the yolks and however much white the avocado will hold.
Add salt and fresh cracked black pepper on top of the eggs, to taste.
Gently place the cookie sheet in the oven and bake for about 15-20 minutes.
Sprinkle chili flakes and fresh dill on top.
Serve warm.

Island Halibut with fresh Pico de Gallo

20151121_192556Are you looking for a fresh, healthy dinner? Look no further – here it is! Marinated halibut, fresh pico de gallo, roasted fingerling potatoes and sauteed asparagus will hit the spot. Grilled halibut is one of our favorites and the marinade and fresh pico really make this a winner, winner fish dinner!20151121_190236Put the fish in a glass baking dish and cover evenly with the marinade. Be sure to fill the fish over a couple times to make sure it is coated well. Cover with plastic wrap and refrigerate for 2 hours – no more or the citrus will start to ‘cook’ the fish and you will have ceviche!20151121_173644While the fish is marinating make the pico de gallo. This is really simple – a few ingredients diced up and you have it. You can add more or less jalapeno depending on how hot you like.20151121_175735Place in bowl and let the flavors meld while you wait for the fish to be ready. To go along with the fish I added the roasted taters and sauteed asaparagus.20151121_183150Put the fingerlings in a bowl and drizzle with olive oil. Make sure they are coated nicely. Season with salt and pepper, toss in a baking dish and you are ready to go. Bake these, covered, for about 45 minutes or until fork tender.20151121_191730For the asparagus – heat some olive oil in a sautee pan over medium high heat. Add the asparagus, season with salt and pepper and cook for about 7 minutes, tossing frequently.

Now just plate it up, grab a nice glass of wine and dig in. Cheers!

 

Island marinade:

1/2 cup Fresh Orange Juice
1/4 cup Pineapple Juice
1/4 cup Rum
1 T Jamaican Jerk Rub
1 T Brown Sugar
1/4 cup Vegetable Oil

In a mixing bowl, combine the orange juice, pineapple juice, rum, Jerk Rub, and the brown sugar.
Slowly whisk in the vegetable oil.Pour the mixture evenly over the fish, turning the fish to coat both sides.
Cover and refrigerate for 2 hours (no longer or the acids in the marinade will begin to “cook” the fish)

Grilling the fish:

Remove the fish steaks from the marinade and lightly pat dry with paper towels. (If you love spicy flavors, dust the steaks on both sides with more Jerk Rub.)

Grill at 400 – 450 degrees. Arrange the steaks on an angle on the grill grate. Grill for 6 to 8 minutes. Turn the fish with a thin-bladed spatula and continue to cook until the fish flakes easily when pressed with a fork, about 6 minutes more.

Transfer to a platter or plates and serve with the Pico de Gallo.

Pico de Gallo:

1 Large Tomato, cored and diced
1 Sweet Onion, diced
1 Fresh Jalapeno pepper, seeded and diced
1 Clove Garlic, finely minced
1/4 c Fresh Cilantro leaves, chopped
1 Lime
Salt to taste

In a mixing bowl, combine the tomato, onion, jalapeno, garlic, cilantro,
and lime juice; stir Add salt, about 1/2 teaspoon to start. Taste, then add more salt,
lime juice, or jalapeno if desired.
