The weekend before Christmas we went to Iowa to spend the holiday with family. We had a wonderful time and some good food. For the Sunday brunch we made the eggs benedict and they turned out excellent! Since Kris and I do not eat wheat, we had ours over fried potatoes instead of an English muffin and boy was that good.
We all enjoyed the brunch and had a great day. For dinner that night we had potato bologna made by my father in-law, Don. This is a holiday tradition for his family and I am disappointed that I did not take any pictures. It was a fabulous meal followed by another of Don’s favorites – Heavenly Pie. Next year I will be sure to get some photos. Cheers!
