Sunday Breakfast

Some weekends Kris and I head to one of our favorite restaurants for brunch but this weekend we were happy to just stay home. Not to mention our washing machine decided to break so  we had to go to the neighbors to get some laundry done for the week!

Kris thought cheesy potatoes sounded good so I went to work. We had plenty of potatoes but the milk was expired so I had to find a replacement. I found a can of coconut milk in the pantry which would do nicely. Here is the recipe.

Ingredients 6 medium potatoes diced
1 can green chilies
1 can coconut milk
1 small onion diced
Cheese of choice (I used pepper jack and cheddar)
Butter
Salt
Pepper

Directions

Peel and dice potatoes, dice onion. Put in a large bowl add green chilies, salt and pepper. Mix well. Place a layer of the potato mixture in a casserole dish, top with a few pats of butter and cheese. Continue layering process,  ending with the potato mixture. Pour milk over the top and place in oven. Bake for 45 minutes. Remove from oven, stir and add a layer of cheese on the top. Return to oven and continue baking for about 30 minutes or until potatoes are tender. Serve on a plate with an over easy egg on top. Enjoy!
