Tater Tot Hotdish

20150401_191520We went old school for our turn of ‘friends for dinner’ this week. Growing up in Iowa this dish was called Tater Tot Casserole but here in Minnesota it is a ‘Hot Dish’ so we will go with the locals on this! Kris came up with the idea a couple weeks ago and we could not wait to try this out.

This version is close to the classic but I did change things up a bit to add some flavor. As a kid I remember this dish being somewhat bland so tried to ramp it up a notch. So lets get started. First toss the hamburger and Italian sausage in a large skillet over medium heat. When the fat begins to render add in the peppers and onions. Cook for about 7 minutes then toss in the mushrooms and spices. Cook for another 7-10 minutes, until the meat is done. Toss in the garlic, cook for one minute then add the cream of mushroom soup and peas.20150401_190740Cook for a few minutes to heat the soup a bit then pour the mixture into a large baking dish. Top the mixture with cheese (pepper jack and cheddar) then add the tots. I arranged mine in nice rows but you can do this however you like!20150401_190745Bake in a preheated 350 degree oven for about 30 minutes, until the tots are golden brown. Grab a plate and some hot sauce and you are set!! Cheers.

Ingredients:

  • ½ lb hamburger
  • ½ lb Italian sausage
  • ½ sweet onion, diced
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 1 cup fresh mushrooms, chopped
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp thyme
  • Salt
  • Pepper
  • 1 glove garlic, minced
  • 1 cup frozen peas
  • 1 15 oz can cream of mushroom soup
  • Shredded cheese, pepper jack and cheddar
  • 2 lbs Ore-Ida frozen tater tots

Directions:

Pour mixture into large baking dish, top with the cheese. Arrange the tater tots atop the cheese and bake in a 350 degree oven for about 30 minutes.

Birthday Cookies 4, 5 and 6

20150322_172430March is a busy birthday month. These go out to our former neighbors – the Monteras who moved to Florida and 3 of them have birthdays in March. Steve, Bella (our God daughter) and Emily. Back when they lived next door we always had a big birthday dinner to celebrate the March birthdays but now cookies will have to do.20150322_195358I decided to go with my standard cookies – Chocolate in powdered sugar and Chocolate Chip. These are always a hit so why mess with what works?20150322_172406

Grilled Steak Salad

20150323_194620There may be snow on the ground here in Minnesota but the calendar says spring so it was time for a fresh “springy” supper. Grilled steak salad with cilantro avocado dressing should do the trick!20150323_194148Layout a bed of mixed greens and chop up your favorite veggies. I used red pepper, red onion, cherry tomatoes, mushrooms and avocado, a perfect combination. 20150323_190704For the meat I used flank steak – an easy to cook, flavorful cut. Season with olive oil, salt and pepper and fire up the grill. I like mine medium rare so only need to grill for about 8 minutes per side. Internal temp will be about 145 degrees.

Let the steak rest for 10 minutes, slice and top of your salad. Cheers!

Breakfast Burrito

20150315_094451Last weekend Kris and I, along with a couple friends, ran the Everybody’s Irish 5K. A nice way to start the day. After the race we went to The Lowry for breakfast and Bloody Marys, always a good choice after running! Well The Lowry has a breakfast burrito that sounded tasty but it came wrapped in a flour tortilla so I was bummed. However our waitress said they could make it using corn tortillas.

Instead of wrapping the burrito up, the tortillas came on the side, which allowed me to have 3 mini ‘breakfast tacos’. This was so good I decided to give it a try at home – Big Man style. It turned out great! This “burrito” is a layered mix of hash browns, scrambled eggs, sauteed onions and peppers and chorizo sausage.20150315_092329First get out the food processor and shred some potatoes. Season with salt and pepper, add some olive oil to a saute pan and heat to medium high.20150315_093152Add the shredded potatoes to the hot oil, flatten to make an even layer, cook for about 8 minutes. Now it is time to flip. Before flipping over, drizzle some olive oil on the potatoes to help crisp up this side. Flip in sections and continue to cook.20150315_092925While the hash browns are cooking, dice some pepper and onions. I also diced up some chorizo sausage to add to the mix. You can add any type of breakfast meat here and I am sure it would turn out just as tasty. 20150315_093428Saute this mixture until sausage is crispy and veggies are tender. Don’t forget to season with salt and pepper. 20150315_094013Grab another pan and cook up the eggs. To make the scrambled eggs fluffy be sure to add 1 tablespoon of water when beating the eggs. Once everything is done it is time to grab a plate and layer up – hash browns- eggs-onion,pepper, meat mix. Warm some corn tortillas and serve. I of course topped mine with some chimchurri sauce to spice things up.20150314_104538

Corned Beef and Cabbage – Happy St. Patrick’s Day!

20150317_191805We thought today was our night to have Rindy and Aaron over for the weekly supper so of course we cooked up some corned beef and cabbage in honor of St. Patrick’s day. The only problem we got our wires crossed and they are not coming over until tomorrow. Well they missed a tasty dinner!

Corned beef, cabbage and veggies topped with a sour cream horseradish sauce. Best thing about this meal? It was done in the crock pot and super easy. Just toss everything in the crock pot (except the cabbage) and let it cook all day long.20150317_190554When the corned beef and veggies are done, remove from crock pot and keep warm while you make the sauce and cabbage. Slice it up, serve and enjoy. Cheers – have a green beer for me!

Ingredients
3-4 pounds lean raw corned beef brisket
3 tablespoons pickling spice (often included with brisket)
1 medium rutabaga, halved and cut into wedges
1 pound large carrots, cut into 4-inch pieces
1 1/4 pounds small potatoes
1 leek, white and light-green parts only, cut into 3-inch pieces
1/2 head Savoy cabbage, cut into wedges
1/3 cup horseradish, drained
1/3 cup sour cream

Directions
Place the corned beef in a large slow cooker and scatter the pickling spices on top. Layer the rutabaga, carrots, potatoes and leek in the cooker (in this order for even cooking). Add enough hot water (4 to 5 cups) to cover the meat by at least 1 inch, put the lid on the slow cooker and cook on high, 5 to 6 hours.

Remove the meat and vegetables from the slow cooker and keep warm. Put the cabbage in a microwave-safe dish with 2 cups cooking liquid from the slow cooker, cover and microwave until tender, 7 to 10 minutes. Meanwhile, boil another cup of cooking liquid in a small skillet until reduced by half, about 10 minutes. Mix with the horseradish and creme fraeche in a small bowl.

Slice the corned beef and serve with the slow-cooked vegetables, cabbage and sauce

Birthday Cookies 3 – Chocolate with Powdered Sugar

20150311_200320These go out to our great-nephew (man I am getting old) Tommy. He turned 1 on Friday the 13th, not sure if he can enjoy the cookies but hopefully Mom and Dad will. This is one of my all time favorite cookies that my Mom makes. I hope I did them justice.20150311_190842Not too many ingredients for these cookies so it is easy to whip up a batch. Grab your stuff and get started.20150311_192030The first step is to mix up the chocolate base. Be sure to use a good cocoa powder when making these. In a mixer beat the sugar, butter and cocoa until smooth. Add four eggs, 1 at a time, mixing just until incorporated after each egg.20150311_192203Now add flour mixture (flour and baking powder) in 3 additions, mixing well. Add vanilla, mix and then chill dough for at least 1/2 an hour in the fridge.20150311_194031Once dough is chilled it is time to roll it in the powdered sugar. Drop dough by teaspoon and roll to coat. 20150311_194401Place on a cookie sheet and bake in a preheated 350 degree oven for 10 – 15 minutes. These take 12 minutes in my oven so watch them closely. You do not want to over bake these cookies as they will dry out.20150311_195736Let the cookie rest on the pan for a couple minutes after removing from oven. Transfer to a rack and cool completely. That’s it – grab a glass of milk and enjoy. Cheers!

 

Ingredients/Directions:

1/2 cup cocoa
2 cups sugar
1/2 cup butter
Combine and beat
Add 4 eggs, one at a time, mixing thoroughly.
2 1/4 cup flour
2 tsp. baking powder
2 tsp. vanilla

Chill dough. Drop by teaspoon into powdered sugar and roll.
Bake 10-15 minutes at 350 degrees. Do not overbake.

Messy Burger Night

20150310_192857We were back to Aaron and Rindy’s last night for supper. It has finally warmed up enough for Aaron to fire up the grill and the fryer. Burgers and Fries – Tasty! Aaron had been planning this for a bit, just had to wait for the weather to break.20150310_192257Double fried fries – these were better than most restaurants we go to. He also made a cheese sauce which included pepper jack and jalapenos. 20150310_192245Now for the toppings! There was something for everyone. Time to pile it high on the burger, hence the name Messy Burgers! My burger consisted of – sauteed mushrooms and onions, jalapeno slices, pickles, bacon, jalapeno mustard and of course the cheese sauce. This was one good and spicy burger. To finish off the night………..20150310_202155Homemade cheesecake topped with homemade whipped cream and cherries!!. RIndy put this together and was up late the night before finishing it up. We were glad she did, this was super good! Needless to say, I will be going for an extra mile on my run. Cheers!

Happy Birthday KZ!! – Halibut and Banana Cream Pie

20150305_191606Last night was Kris’s birthday so we had our friends Rindy and Aaron over for dinner to celebrate. It was a wonderful evening. Great food and company! For the main course we had halibut in parchment along with coconut milk rice and sauteed asparagus. Tasty!

20150305_194435And for dessert? Banana cream pie. This was my second attempt at banana cream pie, 1st try was not very successful. It was more like banana cream soup:) Well this time it turned out great! Even Rindy was impressed and now she can no longer make fun of my banana cream pie skills.20150304_224334The pie turned out just like the picture I found online. It was an interesting recipe but it did include chocolate so it had to be good. I found this recipe at gfjules.com – and just made a couple modifications.20150304_210356Not too many ingredients but is was quite a process, basically 3 steps. 1st – you make the filling 2nd – make the crust and finally the meringue. It took awhile but was well worth it.

Using a blender or large food processor, peel and add 2 bananas, coconut milk, egg yolks, Betty Crocker Gluten Free Flour, sugar, vanilla and salt and process until smooth.

Pour blended mixture into a small saucepan over medium heat and cook, stirring occasionally until it thickens and begins to bubble, about 12-14 minutes. Once boiling, stir constantly for 1-2 minutes to continue to thicken, then remove from heat. The mixture should be thick enough that as you stir it, the spoon leaves a wake behind it.

Remove from heat and stir in cut pieces of butter, until melted. Set aside to cool slightly, then transfer to a glass or metal bowl. Cover with plastic wrap, laying the wrap directly on top of the mixture so that it will not form a “skin.” Refrigerate while preparing the crust.20150304_215512

Preheat oven to 375° F. Lay a piece of aluminum foil on the baking rack.

Using a food processor, grind GF shortbread cookies until fine, pulsing as necessary to remove any larger chunks. Measure crumbs to be sure you have 2 cups of crumbs.

Transfer to a bowl and stir in melted butter, starting with only 4 tablespoons or approximately 70 grams. Stir with a fork until all the crumbs are wet with butter and they begin to hold together. Add more melted butter as necessary, until the crumbs can be pressed against the side of the bowl and retain their shape, as would a crust.

Press crumb mixture firmly onto the bottom and up the sides of a deep 8-inch or 9-inch pie plate.

Bake in preheated oven for 8 minutes. The crust will looks slightly bubbly but should not be browning yet.20150304_221232

Melt chocolate chips in a double-boiler or in the microwave in a glass bowl, stirring often to prevent it from burning. Once melted, spoon onto the top of the baked crust and smooth with a rubber spatula. Set aside to cool.

When the pie plate is cool to the touch, slice one large banana horizontally and arrange on top of the chocolate.20150304_221518

Pour filling on top and smooth with a rubber spatula.

Prepare the meringue by beating the egg whites with the whisk attachment of an electric mixer at high speed until foam, at least 5 minutes. Add cream of tartar and continue beating until soft peaks form.

Turn mixer on again to medium speed and add sugar while beating, one tablespoon at a time, until stiff peaks form and the sugar has been fully integrated.20150304_222935

Spread meringue evenly over banana filling, spreading all the way to the edge of the pie plate and sealing the edges.

Bake for 10-12 minutes, or until meringue peaks are lightly browned. Remove to cool on a wire rack until completely cool to the touch. Sprinkle with toasted coconut, if desired.

Cover loosely with plastic wrap and refrigerate for at least 4 hours or overnight, until very cold. The pie may still be a bit runny when sliced, until it has set overnight.

Serve it up and enjoy. Cheers!!

Filling
2 Large Ripe Bananas
1 Can Full Fat Coconut Milk, Shaken
6 Large Egg Yolks
1/4 Cup Betty Crocker All Purpose Gluten Free Flour
3/4 Cup Granulated White Sugar
1 Teaspoon Pure Vanilla Extract
1/2 Teaspoon Sea Salt
1/4 Cup (4 Tbs.) Butter, Cut Into Small Pieces

Crust
2 Cups Crushed Gluten-Free almond shortbread cookies
4-6 Tbs. Melted Butter, Cut Into Small Pieces
1/2 Cup Chocolate Chips
1 Large Ripe Banana

Meringue
4 Large Egg Whites
1/4 Cup Granulated White Sugar
1/4 Tsp. Cream Of Tartar

National Margarita Day – Margarita Cake

20150221_182334As many of you know last Sunday (Feb 22nd) was National Margarita Day. In honor of the holiday, our neighbors invited us over for some good food and of course some Margaritas!! We actually celebrated on Saturday – National Margarita Day Eve – and Kris and I were in charge of dessert. Kris found a margarita cake recipe online so of course I had to make this!20150221_141521You have to love a cake that contains Tequila and Tripe Sec. The fresh lemons and limes really give this cake a margarita taste. We used Betty Crocker GF yellow cake mix for the base and it was awesome.  You also need a bundt pan for this one.20150221_143230Butter and flour (I used a little of the cake mix for this) the bundt pan. Combine the ingredients in your mixer and blend until smooth.20150221_143442Pour batter into your prepared pan and toss the cake in a preheated 350 degree oven. The cake will take 40-45 minutes. It is done when a toothpick comes out clean.20150221_152619Now for the glaze – this also contains Tequila!! In a bowl add the powdered sugar, tequila, triple sec and lime juice, stir until smooth. Drizzle over the cake, once the cake is cooled.20150221_154524Sprinkle some fresh lime zest and decorate with lime wedges. This was one tasty cake!!! Cheers.

Ingredients:(cake)

1 (18.25 ounce) package yellow cake mix (Betty Crocker Gluten Free)
1 (3.4 ounce) package instant lemon pudding mix
4 eggs
1/2 cup vegetable oil
2/3 cup water
1/4 cup fresh lemon and lime juice combo
1/4 cup tequila
2 tablespoons triple sec liqueur

Glaze:
1 cup confectioners’ sugar
1 tablespoon tequila
2 tablespoons triple sec liqueur
2 tablespoons lime juice
lime zest, for garnish

Directions:

Preheat oven to 350 degrees. Grease and flour a 10 inch Bundt pan (I used a little of the cake mix powder).
In a large bowl combine cake mix, pudding mix, eggs, oil, water, lemon or lime juice 1/4 cup tequila and 2 tablespoons triple sec. Beat for 2 minutes.

Pour batter into prepared pan. Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan for 10 minutes; remove to rack and pour glaze over cake while still warm. Garnish with lime zest.

To make the glaze:
In a small bowl, combine confectioners’ sugar with 1 tablespoon tequila, 2 tablespoons triple sec and 2 tablespoons lime juice. Mix until smooth.

Birthday Cookies 2 – Sea Salt Chocolate Chunk

20150215_181135Time for the second batch of birthday cookies. The year starts a little slow, only 1 birthday in January and 1 in February. Gives me plenty of time to get things ready! These go out to Jake, who is not our nephew by blood but by friendship. We have known Jake and his parents for over 20 years and they are some of our favorite people.

20150215_171916I strayed a bit from my standard chocolate chip cookie and went with a chocolate chunk cookie with a touch of sea salt. They turned out great. When making cookies for others I use wheat flour so being gluten free, Kris and I cannot sample them. We have to rely on friends to taste and give a thumbs up or down. Fortunately these got a thumbs up!20150215_172916It smells so good when whipping up a batch of cookies. The butter and sugar mixing together. along with the chocolate just makes me hungry. Theses cookies are similar to my standard cookies – both use sugar, brown sugar, butter and vanilla. The main difference are the chocolate chunks and the sea salt.20150215_174511Once you get everything mixed up, drop the dough on parchment lined cookie sheets. Top with some big flakes of good sea salt then bake as normal. We got this sea salt from on of Kris’s friends who just returned from Bonaire so it was special salt.20150215_181130We got the cookies shipped on time and they arrived on Jake’s birthday. I had a lot of fun making these and there are many more birthdays to come……Cheers!
