Dinner with Friends – Mexican Fiesta

20150218_194720So we had our second weekly dinner with Rindy and Aaron and they came up with an excellent meal. Homemade Mexican rice, refried beans and Mexican pie. The pie was like lasagna – tasty! And of course they always take into account that Kris and I are gluten free so Aaron used corn tortillas instead of flour. 20150218_192012A nice batch of margaritas to start off the night. This really got the night off right!20150218_193716The pie came out of the oven piping hot and it was time to eat. One Dish Supper

20150215_193315When the wind is blowing and the temps are in the single digits nobody likes to go outside! So tonight I dug through the fridge looking for something to make. Good thing I had a package of beef sausage and some veggies. This turned out tasty for a ‘Pantry meal’ as I like to call it.20150215_183139Grab whatever you have on hand and get cooking. This is a simple dish to make, the only downside is it takes 45 minutes to cook! I used onion, red pepper, yukon gold potatoes, carrots, fennel and the beef sausage. You will also need some spices – oregano, thyme, salt and pepper.20150215_184453Chop everything up and toss into a baking dish. In a small bowl, mix the spices, 2 tablespoons of olive oil and 1/4 cup of chicken stock. Pour this over everything and mix well. Put in a preheated 375 degree oven and bake for 40-45 minutes, until taters are tender and enjoy. Cheers!

 

Ingredients:

  • 1 lb sausage – beef , chorizo, andouille, whatever you like
  • 1 red bell pepper
  • 1 onion
  • 3 carrots
  • 1 fennel bulb
  • 6-10 yukon gold potatoes
  • 2 T olive oil
  • 1/4 cup chicken stock
  • 1 t oregano
  • 1 t thyme
  • salt
  • pepper

Direction:

Preheat oven to 375 degrees. Chop up all the ingredients and toss in a big baking dish. In a small bowl, mix together spices, olive oil and chicken stock. Pour over everything and mix well. Bake for 40-45 minutes or until veggies are tender.

Super Bowl Leftovers III – Pulled Pork Enchiladas

20150208_185737I smoked about 15 lbs of pork shoulder for the Super Bowl and froze some of the leftovers, This week I pulled some out to make some enchiladas and these might be my favorite. The chicken enchiladas we make are good but these were really good! 20150208_180043For the filling I used some of the pork, black beans, corn, onions and hot diced green chilies. Toss all of this in a pan and cook for about 7 minutes.20150208_180445I did not need to add any seasonings since the pork was already seasoned from the smoking. Once this is done cooking put in a large bowl and cool for a bit. Add some shredded cheese and sour cream and mix well.20150208_181527Grab a corn tortilla, add about 2 tablespoons of the filling. Roll up tight and place in a large baking dish. Be sure to add some enchilada sauce to the baking dish before adding the rolled enchiladas. This just makes them better. 20150208_182318Once you get them all rolled up and in the pan, top with the remaining enchilada sauce. I decided to use green sauce for these, thinking it would pair better with the pork.20150208_182445Top with shredded cheese and bake in a preheated 350 degree oven for about 30 minutes. Remove and let rest about 10 minutes before serving.20150208_185549Mmmmmm those look good. Time to dish up and top with fixings of your choice. I like to use sour cream and some chimichurri sauce ( my friends that traveled to Irapuato, Mexico will know what I am talking about). Cheers!

Ingredients:

  • pulled pork
  • black beans
  • corn
  • green chilies
  • green enchilada sauce
  • medium onion, diced
  • corn tortillas
  • shredded cheese
  • sour cream

Directions:

Add pork, black beans, corn, chilies and diced onion to a large skillet. Cook for about 7 minutes. Pour into a large mixing bowl and let it cool for a bit. Add some shredded cheese and sour cream to the mixture and blend well.

Pour some of the enchilada sauce into the bottom of a large baking dish. Top a tortilla with about 2 tablespoons of the mixture, roll up tight and place in baking dish. When done rolling and all the tortillas are in the baking dish, top with the remainder of the enchilada sauce and shredded cheese. Bake at 350 degrees for about 30 minutes, until cheese is melted.

Tasty Tuesday – Chicken Vesuvio

20150210_192514Once a week Kris and I go out to dinner with our friends Rindy and Aaron, usually on a weekday. Well a couple weeks ago Rindy suggested we start having dinner at each others houses instead. We all like to cook so why spend the money to go out when we can have tasty meals at home! We started last week at their house and had an excellent meal (sorry no pictures from that one – will need to take some next time) and Tuesday was our turn.

We decided to make chicken vesuvio. Kris found a recipe online and with a few tweaks, dinner was born.20150210_174527For this recipe you need to use bone in, skin on chicken pieces. We just used the breast tonight and saved the other pieces for another meal. Start by heating the olive oil in a heavy pan over medium high heat. Season the chicken with salt, pepper, oregano and garlic powder. Add the chicken to the hot pan and brown, about 2 minutes per side. 20150210_174345While the chicken is browning, peel and chop up some potatoes. Kris does a fine job with this task!! Take the chicken from the pan and place in a roasting pan. Now add the potatoes to the hot pan and brown them as well. Use the sames seasoning on the taters as you did with the chicken.20150210_175246Transfer the potatoes to the pan with the chicken. Now make the sauce.20150210_175556First toss in the garlic cloves (8-10) and cook for a few minutes. Deglaze the pan with some white wine, scraping all the brown bits off the bottom. Pour in the remaining wine and chicken stock – 2 cups each. Bring to a boil and cook down for a few minutes.20150210_180117Pour sauce over chicken and potatoes – it is starting to look good! Put in a preheated 375 degree oven and roast for 1 hour 15 minutes, or until chicken is done. (165 degrees).20150210_192102During the last 15 minutes of cooking, toss in a bag of frozen peas. Now we have everything we need for a meal. Remove from oven and let rest 10 minutes before serving. While this was resting I sauteed up some mushrooms in butter to serve along with the chicken.20150210_192112Grab a plate, load up and enjoy. Cheers!

Ingredients:
One Bone In Whole Chicken, cut into 8 pieces
4 – 6 medium Russet potatoes, cut into large chunks
2 cups White Wine
2 cups Chicken Stock
8 – 10 Whole Garlic Cloves
Frozen Peas, 1 bag
Salt
Pepper
Oregano
Garlic salt
Mushrooms
Butter
Olive Oil

Directions:
Season the chicken on both sides with salt, pepper, oregano and garlic salt. Season the potatoes with the same spices.

In a large, heavy skillet, coated with olive oil, brown the chicken pieces till nicely browned (about 2 minutes per side)  then remove and place in a roasting pan. Brown the potatoes in the same pan then toss in the roasting pan with the chicken.

Next throw all the garlic cloves in the skillet and cook till golden. Deglaze the pan with the wine and add the chicken broth.

After it cooks down for a couple minutes pour everything into the roasting pan with the chicken and potatoes.
Bake at 375F till chicken is cooked through, about an hour and 15 min’s. The last 15 minutes throw in some frozen pea’s.

Remove from oven and let rest 10 minutes before serving.

Super Bowl Leftovers II – Shrimp Chowder

20150202_195741No Super Bowl party is complete without roasted shrimp cocktail and of course I made way too much shrimp. So what do you do?? Make some shrimp chowder! This soup is so easy and packed full of flavor – you will want to go get some shrimp and make this.20150202_193119Not too many ingredients here. Chop up some celery, red onion and green bell pepper. Heat some butter in dutch oven and toss in the chopped veggies. 20150202_193540Cook these down until tender, about 5 minutes over medium-high heat. Ad GF flour, stir to coat. 20150202_194132Add water, clam juice and seasoning. Bring to boiling; reduce heat to a simmer.20150202_195041Add shrimp and corn. I chopped the shrimp into bite size chunks but you can leave them whole if you like. Toss in a couple tablespoons of capers and heat through, 5-10 minutes. Serve over rice or cheesy grits and enjoy. Cheer!

Ingredients:
2 tablespoons butter
2 stalks celery, finely chopped
1 large red onion, chopped
1/2 green sweet pepper, finely chopped
2 tablespoons all-purpose flour, gluten free
2 cups water
2 8 ounce bottles clam juice
2 teaspoons Old Bay seasoning
1 1/2 pounds large shrimp in peeled with tails on
1 12 ounce package frozen whole kernel corn
2 tablespoons capers
Directions:

Melt butter in a large pot over medium heat. Add onion, celery, and sweet pepper. Cook and stir for 5 minutes or until tender. Stir in flour until coated. Add water, clam juice and seasoning. Bring to boiling; reduce heat.
Stir in shrimp, corn, and capers. Cook for 5-10 minutes or until shrimp are bright pink. Remove from heat.
Serve with rice or cheesy grits.

Super Bowl Leftovers – Pork and Mashed

20150203_202722Kris and I had a Super Bowl party and of course had plenty of leftovers. I smoked about 15 pounds of pork shoulder so had plenty of pulled pork left to use up this week. We decided to do our take of the classic ‘Hot Beef Sandwich’. Since we do not eat wheat I just left out the bread. 20150203_202527This was a nice and easy leftover meal to make. Boil and mash some potatoes, make some gravy and heat up the pork. I did add a little beef broth to the pork to keep it moist as I reheated it. Now just pile some mashed potatoes on your plate, top with pork and gravy and enjoy. Cheers!

Sunday Pot Roast – Traeger Style

20150125_191401Growing up pot roast was a Sunday staple in our house. Slow cooked with veggies and potatoes in the old crock pot. The roast always came out tender and tasty. Well today I decided to do the pot roast with some Traeger flare.
20150125_134952First thing was to fire up the Traeger and set it to smoke. (170 -180 degrees) While the grill is heating  up take the roast out of the fridge and season it up. I used the following spices to rub on – onion, garlic and chili powder, thyme, salt and pepper. Spread over roast and toss on the grill. Smoke for 1.5 hours.20150125_154111When the smoking time is almost up, gather up your other ingredients. I am tossing in potatoes, carrots and pearl onions. Chop it up and toss into a dutch oven.20150125_154902Add some salt and pepper, thyme and a bay leaf. Pour in about 1 cup of red wine and 2 cups of stock ( I used turkey stock since that was all I had in the pantry). Stir to combine.20150125_155410Now grab the roast off the grill and turn the heat up to 275 degrees. Nestle the smoked roast down in the veggies and liquid. Cover and return to grill. Cook another 4-5 hours, until the roast is fork tender.20150125_190816When the roast is done pull it off the grill and transfer to a cutting board. Let rest 10 minutes before carving. Toss the veggies in a bowl and get ready for some good comfort.20150125_191219Slice, serve and enjoy. Cheers!

Ingredients:

  • 2 lb chuck roast
  • 2 cups baby carrots, halved
  • 2 cups baby potatoes, quartered
  • 2 cups pearl onions
  • 2 cups stock
  • 1 cup red wine
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp thyme
  • 1 bay leaf
  • salt
  • pepper

Directions:

Take the roast out of the fridge about 30 minutes before cooking. Mix together the onion, garlic and chili powder, thyme, salt and pepper. Rub onto the roast and get the grill ready. Smoke the roast at 180 degrees for 1.5 hours. When the roast is almost done get the veggies ready. Toss the carrots, potatoes and pearl onions in a dutch oven. Add the wine and stock and stir to combine. Add the bay leaf and nestle the roast down in the pan. Bump the grill temp up to 275 degrees. Put a lid on the dutch oven, place on the grill and cook 4-5 hours, until the roast is fork tender. Remove from grill and let meat rest for 10 minutes before carving.

Wing It

20150103_193704It is a sad time of year – NFL football is almost over. It was a fun season overall and we had a lot of good ‘football food’. I experimented with some new chicken wing flavors and these 3 are my favorites from the season. Sweet and Spicy garlic, mango habanero and dry rub with Famous Dave’s Chikn’ Wing seasoning. Kris’s favorite was the Sweet and spicy garlic. In honor AFC-NFC Championship weekend I whipped up a batch of all 3!!

I fired up the Traeger and set it to 350 degrees. While it was heating up I cut up the wings and placed in 3 separate disposable pans. Season the wings with  salt, pepper and olive oil. For the dry rub batch I dusted the wings with the Famous Dave’s Chikn’ Wing seasoning.  Now it was time to put the wings on the grill and make the sauce while they are cooking. Cook time will be about 45 minutes, tossing the wings halfway through.20150103_180854The 2 sauces are simple to make. Just need a small sauce pan and a few ingredients.

For the Sweet and Spicy garlic – Melt 4 tablespoons of butter over medium low heat. When melted toss in 3 cloves of minced garlic and cook for a couple minutes. Now it is time to and the sweet and the heat! For the heat I use Franks Red Hot sauce. Add 1/2 cup to the butter and garlic. Now add 1/4 cup of honey for the sweet. Combine well and cook for about 5 minutes. Turn the heat to low and keep warm while the wings cook.

For the Mango Habanero – I love the mango habanero wings from Buffalo Wild Wings so this is what I was trying to recreate. Put 2 cups habanero nectar (you can find this in most Hispanic sections of the grocery store) and some habanero sauce (the amount depends on how hot you want it). I used about 4 tablespoons. Heat and cook over medium heat until reduced to about a 1/4 cup. Now stir in 1/4 cup Franks Red Hot, 4 tablespoons of butter and 2 tablespoons of honey. Stir to combine then keep warm over low heat.20150103_193521

After the wings have cooked for 45 minutes, pour the sauce over the wings. Make sure to coat them well. Grill for another 10 minutes to set the sauce. 20150103_193517Toss the wings in a serving bowl and eat up! I served them with ranch dressing and celery sticks. Nothing better than football and a big pile of chicken wings. Cheers!

Ingredients:

  • 3 lbs chicken wings
  • salt
  • pepper
  • olive oil
  • disposable foil pans

For the Sweet and Spicy garlic sauce

  • 4 T butter
  • 1/2 cup Franks Red Hot
  • 1/4 honey
  • 3 cloves garlic, minced

Apple Stuffed Pork Tenderloin

20141115_202520Pork tenderloin is one of our favorite cuts of meat to cook. Lots of flavor and super easy. Normally I just season with olive oil, salt and pepper and grill.I decided to up this a notch and stuff it with an apple based stuffing. Good decision!! This turned out excellent and was not too difficult.20141115_184052Gather up the goodies and chop away. The dried apricots add great flavor to go along with the apples.20141115_185135To make the stuffing heat the olive oil over medium low heat, toss in the apple and onion. saute for about 5 minutes, until golden. Add the garlic and saute another 1 minute.Stir in dried apricots and thyme, season with salt and pepper. Add the apple cider and bring to boil. Cook, stirring occasionally, until the cider is absorbed by the stuffing. This took about 5 minutes. Let cool.20141115_190639While the stuff is cooling, butterfly the tenderloin. Make a slit down its length but do not cut all the way through. Open it up like a book and pound to about 1/2 inch thickness. I just put a piece of plastic wrap over the pork and pound with a kitchen mallet. Spoon the stuffing evenly on the meat.20141115_191411Close up the pork and tie with kitchen string in even intervals. If any of that tasty stuffing tries to escape just  push it back in. Place on a baking sheet, season with the thyme, salt and pepper. Pour 1/2 cup apple cider over the pork. Time to toss this bad boy on the #traeger, at 350 degrees.20141115_201454Grill for about 30 minutes, basting with the pan sauce. Add another 1/2 cup of cider and cook until the internal temp is 145 degrees. Maybe 15 minutes more. Keep an eye on the temp that is the best way to know when it is done. Transfer to cutting board and let rest 10 minutes.20141115_202351Slice the pork and transfer to warmed platter and enjoy! Once you try this you will make it again. Cheers!

For the stuffing:
2 Tbs. olive oil
1 1/2 cups chopped Golden Delicious
1 cup chopped yellow onion
1 garlic clove, finely chopped
1/2 cup finely chopped dried apricots
1/4 tsp. dried thyme
Salt and freshly ground pepper
1/2 cup apple cider

For the pork:
1 pork tenderloin,
1/4 tsp. dried thyme
Salt and freshly ground pepper, to taste
1 cup apple cider, plus more as needed

Directions:
To make the stuffing, in a large fry pan over medium-low heat, warm the olive oil. Add the apple and onion and sauté until golden, about 5 minutes. Stir in the garlic and cook for 1 minute. Add the dried apricots, thyme, and season with salt and pepper. Add the apple cider and boil, stirring occasionally, until the cider is absorbed by the stuffing, about 5 minutes. Let cool slightly.

Butterfly the pork loin by making a slit down its length, cutting just deep enough so that the loin opens up to lie flat like a book. Do not cut all the way through. Spoon the stuffing evenly onto the meat. Close up the loin and, using the strings, tie at even intervals so it assumes its original shape. Push in any stuffing that escapes from the ends. Sprinkle the surface with the thyme, and season with salt and pepper. Place the loin in a baking pan and add 1/2 cup of the cider to the pan.

Grill for about 30 minutes, basting with the pan sauce. Add another 1/2 cup of cider and cook until the internal temp is 145 degrees. Maybe 15 minutes more. Keep an eye on the temp that is the best way to know when it is done. Transfer to cutting board and let rest 10 minutes. Slice and serve.

Birthday Cookies

20150101_215955For about the last 30 years my grandmother would bake 3 dozen cookies and send them out to all her grandchildren on their birthdays. Well Grandma is now 100 and stopped the tradition last year. Not because she can no longer bake cookies but because of the expense. With 30+ grandkids (I have lost count) that gets a bit pricey baking and shipping all those cookies. Grandma still bakes plenty of goodies but now to enjoy them you have to go and visit her in AZ!

So it has been 2 birthdays since I have gotten any cookies and I miss getting that package. Grandma always go those cookies to me right on time and it was such a treat. So this year I decided to start a tradition of my own – Send birthday cookies to all my nieces and nephews. First up was Jaci with a January 5th Birthday!! I went with a batch oc choclate chip cookies for her.20150101_210438I gathered up all my ingredients and got started. The tricky part now with baking cookies is Kris and I cannot taste test them. We have been wheat free for the last 3 years so probably not a great idea to try it now. Good news our neighbors were happy to come over and try the cookies hot out of the oven.20150101_214209Once we got the thumbs up it was time to let the cookies cool before packing them up.20150101_215955We were one day late getting them shipped (something I need to work on) so Jaci got her cookies the day after her birthday. We did get a text from Jaci – “We got the cookies and they are delicious!” Kris and I were happy to hear that. Cheers!

Ingredients:

2 cups semi-sweet chocolate chips
1 cup butter, softened
3/4 cup sugar
3/4 cup brown sugar, packed
2 large eggs
2 teaspoons vanilla
2 1/4 cups unsifted flour
1 teaspoon baking soda
1/2 teaspoon salt

Directions:

Pre-heat oven to 375ºF. Stir flour with baking soda and salt; set aside. In large mixing bowl, beat butter with sugar and brown sugar at medium speed until creamy and lightened in color. Add eggs and vanilla, one at a time. Mix on low speed until incorporated. Gradually blend dry mixture into creamed mixture. Stir in nuts and chocolate chips. Drop by tablespoon onto ungreased cookie sheets. Bake for 9 to 11 minutes or until golden brown.
