Brussels Sprouts with Bacon

20140409_192458I know brussels sprouts are not everyone’s favorites but when roasted with bacon, they are so good. This is one of my favorite side dishes and when served with grilled chicken and sauteed mushrooms you have one excellent meal!20140409_184808These are simple to make and do not take to long. Preheat the oven to 400 degrees. Wash the sprouts, cut of the end and slice in half. Remove any loose leaves and toss in a baking dish. Now grab some bacon and dice. Toss in with the sprouts. Add about 2 tablespoons of melted butter and place in the oven. Roast for 30-35 minutes,tossing every 10 minutes. Remove and serve.20140409_193239We had the sprouts with grilled chicken breast smothered in sauteed mushrooms. Enjoy!

Ingredients

1-2 lbs brussels sprouts
1/2 lb bacon, diced
2 T butter, melted
salt
pepper

Directions

Wash the sprouts and cut off the root end. Slice in half, remove loose leaves and toss in a baking dish. Dice the bacon and add to the sprouts. Pour the melted butter over the bacon and sprouts, season with salt and pepper. Roast in a preheated 400 degree oven for 30-35 minutes. Toss every 10 minutes to get an even roast on all side of the sprouts. Remove from oven and serve immediately.

Halibut in Parchment

20140331_200628It is time to get back to some healthy eating. With summer around the corner, now is the time to get back in shape with good food and exercise. Here is a clean, healthy meal that is a snap to cook up. Costco had halibut on sale so Kris and I picked up a nice 1 lb slab.20140331_191432Time to get cooking. I was going to grill the fish but I heard some thunder and it was starting to rain a bit so decided to cook this in the oven, wrapped in parchment paper. This is an excellent way to cook up some fish. The spices and flavors steam up and really flaover the halibut. Get out all your ingredients and start the assembly. 20140331_192133First lay out a nice size sheet of the parchment paper. Put about 5 slices of fresh lemon down. Sprinkle with salt, pepper, oregano and sage. Set the fillet on top of the lemons and now season the fish with the same spices. I added some chopped onion and a tablespoon of a mango, coconut sweet and spicy marinade. Drizzle with some olive oil then wrap it up!20140331_192936Be sure to seal the fillets up tight to keep the steam from escaping while cooking. Set them on a baking sheet and bake in a preheated 400 degree oven. The halibut should take about 9 minutes per inch of thickness. These were 2-3 inches thick so cook time was about 30 minutes. The fish will flake easily when done. Do not over cook!20140331_200211Serve right out of the parchment or drop on a plate and enjoy. I added a sides of jasmine rice and sauted green beans. Delicious!!

 

Ingredients:

2 6-8 oz halibut fillets
2 lemons, sliced
1 small onion, diced (shallots would be great here)
oregano
sage
salt
pepper
olive oil

Other

Parchment paper
Mango, coconut sweet and spicy marinade

Directions

Lay parchment paper out on the counter. Top with lemon slices and season with salt, pepper, oregano and sage. Place halibut on top and season fillet with the same ingrediants. Add some diced onion and a tablespoon of the marinade. Drizzle with olive oil. Wrap tightly in the parchment paper and place on a baking sheet.

Cook in a preheated 400 degree oven for 9 minutes per inch of thickness. Carefully open parchment as there will be plenty of steam! Serve in the parchment or remove to a plate.

GF Pancakes

20140323_104055Well it has been awhile since we have cooked and posted but it is time to get back to it. So first out of the gate are some gluten free pancakes. Going wheat free can sometimes make it hard to enjoy some of the good ole comfort foods. Kris and I have been trying different gluten free flour mixes and this time it was Bob Mills all purpose gf flour. A decent flour that made some tasty pancakes.

20140323_103447Mix up the batter and pour onto a hot griddle. When the pancakes start to bubble and small holes appear, give them a flip and cook to golden brown.20140323_103620You will have a great breakfast in no time. Served with a side of bacon and things are good. Don’t forget to top the pancakes with butter and syrup. Enjoy!

 

Ingredients

1-1/3 cups GF All Purpose Baking Flour
1 tsp Baking Powder
1/2 tsp Sea Salt
1/2 tsp Baking Soda
1 Tbsp Honey
1/2 tsp Vanilla
2 Tbsp Vegetable Oil
3/4 cup + 2 Tbsp Water, warm
2 Egg Whites, stiffly beaten (set aside)

Directions

Step 1
In a bowl combine the All Purpose Gluten-Free Baking Flour, baking powder, sea salt and baking soda. In another bowl combine honey, vanilla, vegetable oil and warm water. Mix dry ingredients with wet ingredients; then gently fold in the egg whites.
Step 2
Ladle pancake batter onto a preheated and oiled grill, flip pancakes over when they begin to puff and become lightly browned on the edges.
Step 3
Serve with maple syrup or your favorite fruit.

Cancun!

20140302_145412This year we left the cold of Minnesota for a nice vacation in Cancun! 85 degrees and sunshine, a great escape. But the sun and heat was not the best part of the trip. The food was! Above is a ‘Mixed Ceviche’ with fish, shrimp, crab and octopus. Fresh and tasty, ceviche became a food of choice for Kristen. This is something I will be making here at home in the near future.20140302_151131Along with ceviche we had some amazing fresh seafood. This platter at a local restaurant was our favorite. How did we find this place? Well we were walking along Tulum avenue in downtown Cancun when Roberto stopped us. He was a shop owner along the avenue. We ended up buying some souvenirs and asked him where we should have a late lunch. He walked us to the restaurant and had a beer with us before heading back to his shop.

20140305_113636If you are planning a warm weather trip I highly recommend Cancun. For a truly local experience, stay downtown and avoid the hotel zone! Cheers.

Black Rice Pudding

20140202_090956So for Super Bowl Sunday breakfast, Kris found this receipt for black rice. We have never had black rice before and it is really tasty! A good breakfast to fill up on before the big game today.

This is made with coconut milk and a fruit of your choice, we used mango. Definitely a keeper! You just have to plan for it as you need to soak the black rice overnight for the best results.

We are having friends over later so will be cooking up so good food for the big game!

Black Rice Breakfast Pudding

Ingredients:
1 cup black rice, soaked overnight
1 can full-fat coconut milk
½ cup water with soaked rice
¼ tsp. fine grain sea salt
½ vanilla bean (optional)
1 Tbsp. maple syrup
1/3 cup coconut flakes, lightly toasted

Fruits of your choosing:
mango
passion fruit
pomegranate
banana
kiwi
pineapple

Directions:
1. Measure out rice, rinse and cover with water. Let soak overnight or for up to 8 hours (even one hour makes a difference!). Drain and rinse well again.

2. Place rice in a pot with coconut milk, salt, vanilla bean (seeds and pod) and the indicated amount of water. Bring to a boil, reduce to simmer and cook covered, stirring frequently, until the rice is tender and most of the liquid has been absorbed (you still want a little liquid). Times vary depending on whether or not you soaked the rice: for un-soaked rice, cook 45-60 minutes; for soaked rice, cook about 25-30 minutes. Add maple syrup and fold to combine. Remove from heat and set aside.

3. While the rice is cooking, prepare all the fruit that you would like to accompany the pudding.

4. To assemble, scoop out desired amount of black rice into a bowl, top with fruit, toasted coconut, and a drizzle of coconut milk. Enjoy

Old School Brownies

20140118_210400Every now and then it is time for some sweets. I found this recipe in a flyer for Savuer magazine. It comes from the Boston Cooking School cookbook, Little Brown 1911. Is sounded so good I had to try it! These brownies are really good.20140118_174025Not many ingredients and I used Red Mill gluten free flour so Kris and I could have them.To get started gather up all the ingredients and begin by melting the butter and chocolate.20140118_175737Stir constantly until melted and smooth. Remove from heat.20140118_180023Now add the sugar, eggs and vanilla. Stir until batter is smooth. Add walnuts and flour. Stir to incorporate. Pour batter into a pan and bake for 60 minutes or until a toothpick inserted into the middle comes out clean. Cool for 2 hours, cut and serve. Enjoy!!

Ingredients:
16 T butter, plus more for greasing the pan
4 oz unsweetened chocolate
2 cups sugar
2 eggs, beaten
1 1/2 t vanilla
1 cup walnuts, roughly chopped
1 cup gluten free flour

Directions:
Heat oven to 325 degrees. Grease an 8 x8 baking pan with butter. Set aside.

Melt butter and choclate together in 2 qt sauce pan over low heat, stirring constantly. Remove pan from heat and stir in the sugar. Add the eggs and vanilla; stir until batter is smooth. Add walnuts and flour and stir until incorporated.

Pour batter into prepared baking pan and spread evenly. Bake for about 60 minutes or until a toothpick inserted into the center comes out clean. Cool for at least 2 hours, cut and serve.

Baked Chicken Breast

20140113_191614Looking for an easy weeknight supper? Well here is it! Quick and easy, and tastes great too. I have not felt much like grilling with freezing temps, wind and blowing snow so have been using the oven a bit more this winter. Tonight was a simple supper of baked chicken, baked sweet potato and sauteed zucchini. Enjoy!

Ingredients:
4 bonless, skinless chicken breasts
2 sweet potatoes
2 zucchinis, peeled and sliced
chopped walnuts
maple syrup
cinnamon
balsamic vinegar
olive oil
salt
pepper

Directions:
Preheat oven to 350 degrees. Coat a baking dish with cooking spray and set aside. Drizzle chicken with olive oil and season with salt and pepper. Place in the baking dish and bake for 30 minutes, until chicken reaches an internal temp of 165.
While the chicken is cooking bake the sweet potatoes in the microwave. Wash potaotes, poke some holes in them with a fork and microwave for about 14 minutes. Let stand 2 minutes.
For the zucchini, heat olive oil in a saute pan over medium high heat. Add zucchini and saute for about 5 minutes.
To serve – Drizzle chicken with the balsamic vinegar. Top the sweet potato with cinnamon, maple syrup and chopped walnuts.

Lemon Dill Baked Salmon

20140114_183737We are finding wheat free living does not have to be boring! Here is an excellent example. Lemon Dill baked salmon with red potatoes and green cabbage. Kris and I had this last night and boy was it good. Simple enough to make any night of the week. 20140114_175035Gather up your ingredients and start chopping. Only a handful of ingredients for this one.20140114_175702Toss everything (except the salmon) in a large casserole dish and mix well. Cover tightly with foil and bake at 450 degrees for 20 minutes.20140114_182407Take out of the oven, remove the foil and place the salmon right on top of the veggies. Bake for an additional 7-10 minutes. The salmon will flake easily when done. Enjoy!!

 

Ingredients:

1 lb red potatoes, sliced ½ inch thick
1 lb green cabbage, shredded
1 lemon, seeded and quartered
½ cup scallion greens, sliced
½ cup fresh chopped dill
½ cup water
Salt
Pepper
1 T olive oil
4 skinless salmon fillets

Directions:

Preheat oven to 450 degrees. In a large sauce pan of boiling water, cook the potatoes for about 5 minutes. Darin well.
Combine potatoes, cabbage, scallions, dill, water, salt, pepper and olive oil in large baking dish. Mix well, cover with foil and bake for 20 minutes.
Uncover and place salmon on top of veggies. Bake an additional 7-10 minutes, until salmon is done. Serve salmon with the veggies.

Pan Seared Cod with Mango Salsa

20140103_190940I was watching the show ‘Mexican Made Easy’ on the Food Network and they made a mango salsa that looked really good and simple to make. Not only that but she used it to top a seared filet of fish and supper was born. After weeks of eating holiday foods and treats it was nice to have a light, refreshing dinner.20140103_175516The salsa only has a few ingredients and takes no time to make. First heat some oil in a pan and saute the jalapeno, just enough to brown up a couple sides of it, let cool. 20140103_181852

Chop up the mango and toss into a bowl. Add about 1/2 cup diced red onion, the juice from one lime. When the jalapeno is cool, cut off stem and remove seeds. Dice and add to the bowl. Season with salt and pepper and mix well. Finally add about 2 tablespoons of fresh, chopped cilantro and that is it.20140103_185649Now it is time to cook the cod. Simple is good for this as well. Season both sides of the filet with salt and pepper. Heat 1 T olive oil and 1 T butter in a heavy skillet over medium high heat. Cook the cod for 3-4 minutes per side, until it flakes easily.

We served the cod on a bed of mashed potatoes and topped with the mango salsa. Enjoy!!

Mango Salsa
2 mangos, diced
1 jalapeno
1/2 cup red onion, diced
Juice from one lime
2 T fresh cilanto, chopped
salt
peppr

Directions:
Heat some oil in a pan and blacken the jalapeno on a couple of sides. Remove and let cool. Dice the mango and add to a medium bowl. Add the red onion and lime juice. Remove the seeds from the jalapeno and dice. Add to bowl and season with salt and pepper. Mix well. Finally add the cilantro and stir.

Pan seared cod
2 cod filets, about 8 oz each
1 T olive oil
1 T butter
salt
pepper

Directions:
Heat olive oil and butter in a heavy skillet over medium-high heat. Season the cod with salt and pepper, both sides. When the butter is melted and the oil is hot add the cod to the pan. Cook 3-4 minutes per side, until fish flakes easily.

Braised Chuck Roast

IMG_20131229_192347_618Well we are in the midst of another cold spell here. Temps topping out at zero for the high and negative teens for the low. That means it is time for some comfort food. Tonight we had some braised chuck roast with onions and carrots. A nice side of mashed potatoes and an excellent comfort meal.IMG_20131229_145110_938I used a 3 1/2 pound chuck roast. Pull it out of the fridge about 30 minutes before cooking. Dry with paper towels then salt and pepper all sides. Slice up 2 yellow onions, mince some garlic and start cooking.IMG_20131229_145910_273Coat the bottom of a large dutch oven with olive oil and heat over medium high. Add the meat and brown all sides, about 3 minutes per side. Remove from pan and set aside.IMG_20131229_150711_224Toss the onions and garlic into the pan to cook down a bit. Add some salt and cook until onions are soft and starting to brown. Next add about 1/2 cup red wine to deglaze the pan, scraping up all the bits from the bottom. Add the meat back in and nestle in the onions. Pour a can of diced tomatoes, with juice over the roast. Toss in some sliced carrots next to the roast. Add more salt, pepper and dried thyme. You may need to add more liquid. I like to have the liquid to cover the roast about half way up. Use beer, chicken stock or what ever you have on hand. Bring to boil, cover and remove from heat. Put in a 300 degree oven and braise for 4 hours, until meat is very tender. Serve and enjoy!!

 

Ingredients:

3-5 lb chuck roast
2 yellow onions, sliced
2 cloves garlic, minced
1 can diced tomatoes
4 carrots, peeled and cut into 2 inch pieces
1/2 cup red wine
olive oil
2 tsp dried thyme
salt
pepper
Note – may need more liquid, beer, chicken stock…

Directions:

Remove roast from fridge about 30 minutes before cooking. Dry with paper towels, season all sides with salt and pepper.
Add olive oil to a large dutch oven and heat to medium high. Brown roast, about 3 minutes per side. Remove and set aside.
Add onions and garlic to the pot. Season with salt and cook until onions are soft and beginning to brown, 7-10 minutes. Pour in the red wine and deglaze the pan, scraping up all the brown bits from the bottom of the pan. Put the roast back in the pan, nestle into the onions.
Pour the can of diced tomatoes, with juice over the roast. Toss the carrots in, alongside the roast. Season with salt, pepper and thyme. You may need to add more liquid here, you want it to cover the roast half way. Bring to boil, cover and remove from heat. Place in a preheated 300 degree oven. Braise 4 hours, until meat is very tender.
