Chocolate Cookies

IMG_20131226_181319_085Bon Appetit has done it again! This time with a delicious gluten-free chocolate brownie cookie. This is one of the best cookies I have had in long time.IMG_20131226_170618_029

Not only are they really good but only have about 5 ingredients! Easy to make and not very time consuming. IMG_20131226_171035_811I did find the batter to be a little runny when I made this for the first time but it all turned out good. The recipe says this will make 2 dozen but I had enough batter for about 18 cookies. These just melt in your mouth and go great with a big glass of milk!! Enjoy!

INGREDIENTS
3 cups gluten-free powdered sugar
¾ cup unsweetened cocoa powder
1 teaspoon kosher salt
2 large egg whites
1 large egg
4 oz. bittersweet chocolate, chopped
3 tablespoons cacao nibs

INSTRUCTIONS
Place racks in lower and upper thirds of oven; preheat to 350°. Whisk powdered sugar, cocoa powder, and salt in a large bowl, then whisk in egg whites and egg; fold in chocolate and cacao nibs. Spoon batter by the tablespoonful onto 2 parchment-lined baking sheets, spacing 2” apart.
Bake, rotating sheets once, until cookies are puffed, cracked, and set just around the edges, 14–16 minutes.
Transfer baking sheets to wire racks and let cookies cool on pan (they’ll firm up).

Prime Rib for 2

IMG_20131225_191857_023Nothing says Christmas dinner like a nice piece of Prime Rib! This year is was just Kris and myself so I bought a small chunk of prime rib, about 1.5 lbs. My “perfect prime rib” method was not going to work on a piece this small so I just roasted the meat at 375 degrees for about an hour. Took it out of the oven when the internal tamp reached 145.IMG_20131225_175228_724For prime rib you just need to keep it simple. After all the meat is the prize of this meal. Simply rub with garlic, drizzle with olive oil and season with slat an pepper to taste. Toss it in your preheated oven and roast until done.IMG_20131225_185324_357Once out of the oven, let the rib rest for 15 minutes before slicing. We added a side of mashed potatoes and the meal was complete. Enjoy!

Ingredients:

1.5 – 2 lb prime rib
2 cloves garlic, cut in half
olive oil
salt
pepper

Directions:

Preheat oven to 375 degress. Take prime rib out of the refrigerator and let rest 30 minutes, you want it to be about room temp.
Rub the sliced garlic all over the meat. Drizzle with the olive oil on all sides. Season with salt and pepper.
Place in oven and raost for about 45 minutes to 1 hour. For medium rare you want the internal temp to be 140. Remove from oven and let rest 15 minutes before slicing.

Slow-Roasted Salmon

IMG_20131223_192204_926We got back from our Christmas in Iowa and I had the new Bon Appetit magazine in the mail. I found this slow roasted salmon recipe and had to give it a try, it looked so good!IMG_20131223_180937_297This recipe is a simply one and not too many ingredients. The fennel goes excellent with the chilies and blood orange. A dish full of flavors and pretty much foolproof.IMG_20131223_182228_629Slice everything up really thin and toss in a casserole dish. Season with salt and pepper.IMG_20131223_182537_230Place the salmon fillet on top of everything and season with sea salt. Pour the olive oil over the top and pop in the oven. Roast for 30-40 minutes, until the salmon flakes easily with a fork. Remove to a platter and enjoy!!!

INGREDIENTS
1 medium fennel bulb, thinly sliced
1 blood or navel orange, very thinly sliced, seeds removed
1 Meyer or regular lemon, very thinly sliced, seeds removed
1 red Fresno chile with seeds, thinly sliced
4 sprigs dill, plus more for serving
Kosher salt and coarsely ground black pepper
1 2-lb. skinless salmon fillet, preferably center-cut
¾ cup olive oil
Flaky sea salt
INSTRUCTIONS
Preheat oven to 275°. Toss fennel, orange slices, lemon slices, chile, and 4 dill sprigs in a shallow 3-qt. baking dish; season with kosher salt and pepper. Season salmon with kosher salt and place on top of fennel mixture. Pour oil over.
Roast until salmon is just cooked through (the tip of a knife will slide through easily and flesh will be slightly opaque), 30–40 minutes for medium-rare.
Transfer salmon to a platter, breaking it into large pieces as you go. Spoon fennel mixture and oil from baking dish over; discard dill sprigs. Season with sea salt and pepper and top with fresh dill sprigs.

Merry Christmas

IMG_20131219_161042_944It has become a tradition in our family to draw names and then make that person a homemade gift. This year I drew my sister’s name and put together a Big Man, Little Kitchen cookbook! I picked some of my favorite recipes from the past year and the book turned out great. IMG_20131219_161130_059I created the book at Blurb.com, a great site for making books and quite easy. It was a learning experience and I think Volume 2 will be even better. I hope my sister enjoys her new book.

Pozole

IMG_20131218_185949_088We had this soup over Thanksgiving while visiting the Lombardos in KC. It is really good and easy to whip together. This is the 3rd time we had it since! A great evening meal on the cold nights in Minnesota.IMG_20131218_165112_489I like to gather up all the ingredients before getting started. The only thing different here was the diced tomatoes. The recipe calls for fire roasted but I did not have any of those on hand so used regular diced tomatoes and it still turned out tasty.IMG_20131218_170325_818 (1)Chop the pork tenderloin into 1 inch pieces. I toss the meat in the freezer for 15 minutes before chopping as this makes the task much easier.IMG_20131218_170711_781Cook the pork in the oil for about 3 minutes, just until opaque but not browned. Use a slotted spoon and remove the pork from the pan.IMG_20131218_171303_168Toss in the onion and saute for about 5 minutes, just until softened. Next add the spices and garlic. Cook for about 1 minute.IMG_20131218_171824_972Add the remaining ingredients and bring to a boil. Cover and reduce heat to medium-low. Cook for about 25 minutes, until pork is cooked through. Serve in a large bowl and enjoy!!

Ingredients:

2 Tbsp olive oil
1 lb. pork tenderloin; diced into 1/2 inch pieces
1 yellow onion, finely chopped
3 cloves garlic, minced
2 Tbsp. chili powder
1/2 tsp. ground cumin
1/2 tsp. dried oregano
3 Cups chicken stock
1 can (14.5 oz) diced fire roasted tomatoes, with juice
1 can (15 oz. ) white hominy, rinsed and drained
1 jalapeno, seeded and diced
Salt and Pepper to taste

Directions:

In a soup pot over Med. heat, heat the oil. Add the pork and saute until opaque on all sides but not browned, about 3 minutes. Using a slotted spoon, transfer the meat to a bowl and set aside.

Add the onion to the pot and saute until softened, 3-5 minutes. Add the garlic, chili powder, cumin and oregano and cook, stirring to blend the spices evenly, for about 1 minute longer. Add the stock, tomatoes, hominy, jalapeno and sauteed pork with any juices, and season to taste with s&p. Bring to a boil over high heat. Reduce the heat to low, cover, and simmer until the pork is cooked through, about 25 minutes.

Big Man is Back with some Spicy Shrimp and Rice!!

IMG_20131212_200601_579Well my shoulder is recovering nicely and I am able to do a few things with my right hand so can actually cook again! So tonight I found some shrimp in the freezer and came up with a spicy shrimp and rice dish. Not only is this tasty but it is super easy as well.

IMG_20131212_184907_457Gather up your ingredients and get cooking. First you will want to heat the oil and butter in a skillet over medium-high heat. Add the onion and cook for about 5 minutes. Now toss in the garlic and cook another minute.IMG_20131212_185939_308The kitchen will be smelling really good at this point. Add the shrimp and Cajun seasoning. Stir and cook for about a minute, until the shrimp starts to curl. Season with salt and pepper.IMG_20131212_190825_569Add the tomatoes, prepared rice, and a 1/4 cup of water. Cook a few minutes until rice is warmed through and shrimp are opaque. Last step add some fresh chopped parsley to freshen up the dish. Enjoy!!

Ingredients
1 tablespoon unsalted butter
2 tablespoons extra-virgin olive oil
1 medium onion, diced
3 cloves garlic, minced
1 tablespoon Cajun seasoning
1 pound large shrimp, peeled and deveined, tails intact
Kosher salt and freshly ground pepper
1 can diced tomatoes, drained – reserve ¼ cup of the liquid
3 cups cooked white rice
3 tablespoons chopped fresh parsley

Directions
Heat the butter and olive oil in a large skillet over medium-high heat. Add onion and cook until soft, about 5 minutes. Add garlic and cook for another minute. Add the Cajun seasoning and shrimp and cook, stirring, until the shrimp begin to curl, about 1 minute. Season with salt and pepper.

Add the tomatoes, prepared rice, and a 1/4 cup of water. Cook a few minutes until rice is warmed through and shrimp are opaque, about 3 more minutes. Stir in the parsley and serve.

Big Man recovering

As you may have noticed, we have not been around for awhile. I had rotator cuff surgery last week and am recovering. It is tough to cook with one arm in a sling! Kris has been doing the cooking and is doing a great job.

Halibut with roasted veggies

IMG_20131020_200910_219Halibut is one tasty fish. While at Costco on Saturday Kris and I picked up a nice fillet. The plan was to grill it on the Traeger but it was cold, windy and raining so I decided to roast it along with some potatoes, peppers and onions. Topped off with a lemon aioli – Yum!IMG_20131020_194945_795For the roasted veggies –

  • 3-4 yukon gold potatoes, peeled and sliced
  • 1 red pepper
  • 1 yellow pepper
  • 1 sweet onion
  • olive oil
  • oregano
  • salt
  • pepper

Toss the veggies in an oven safe pan and coat with the olive oil. Add salt, pepper, oregano (and any other spice you think sounds good) toss well. Put in a preheated, 400 degree oven and roast for 35  minutes, turning once.IMG_20131020_195137_284Season the halibut with olive oil, salt and pepper. Pull the pan out of the oven after the 35 minutes and turn the heat up to 450 degrees. Push the veggies to the side and put the fillets in the pan. Return to the oven and cook for 10-15 minutes, until the fish flakes easily with a fork. While this is all cooking throw the aioli together – a must have.

Lemon Aioli

  • 1/2 cup mayonnaise
  • 1/4 cup onion, small diced
  • juice from 1 lemon
  • salt and pepper to taste
  • 1/8 tsp cayenne pepper (more if you like it spicy)

Mix all ingredients together and chill until ready to serve. IMG_20131020_200704_775Grab a plate, pile on the food and enjoy!!!

Bangers and Mash

IMG_20131017_193954_267This past weekend Kris and I took a trip to Phoenix to visit my Grandmother for a day then off to my sister’s River House in the California desert. It was a great trip and while in Phoenix, my cousin Shane, Kris and I stopped for lunch at a brewpub. The beer was excellent and so was the food. I had a plate of sausages with mashed potatoes and peppers. It was so good that last night I recreated the dish at home. I would have to say it turned out as good if not better than the brewpub!

IMG_20131017_193125_947This is a simple dish to put together. Slice up a pile of peppers and onions. Saute them in butter and olive oil to your desired tenderness.IMG_20131017_193130_788Cook up some sausages – we used kielbasa and a asiago chicken sausage. These were fully cooked so just had to heat up in a skillet.IMG_20131017_193805_291Don’t forget the creamy mashed potatoes!! I have been using Yukon gold potatoes lately and think they make the best mashed potatoes! I added cream, butter and some shredded cheddar to these.

Philly Cheese Steak Appetizer

IMG_20131008_193951_450Had our friends Aaron and Rindy over for dinner the other night and Aaron asked if he could bring an appetizer. We were happy he offered since we got out of work late so supper was going to be delayed. Aaron had found a recipe for stuffed peppers – Philly cheese steak style!

These were awesome! A keeper to be made again. These consisted of a sliced green pepper piled high with sauteed mushrooms and onions, roast beef and smothered with provolone cheese.IMG_20131008_193729_834Aaron assembled them at home so when they got to our house, we popped them in a 400 degree oven and baked until the cheese was golden brown. Serve up and enjoy!!
