Almond Flour Cinnamon Rolls

IMG_20131004_192503_601The weather forecast for the weekend was cold and rainy so I had decided to make a batch of chili to keep us warm and full. Kris said “Ohhhh, we need some cinnamon rolls to go with the chili”. That may sound strange but growing up in Iowa cinnamon rolls were always served with chili at school. There is nothing better than dipping a chunk of a cinnamon roll into your chili.

IMG_20131004_182446_356I found this recipe on glitterandgritgirl.com and the rolls turned out really good. I changed it up a little bit. She used nuts and raisins in the filling but I left these out and just used butter and cinnamon.

Cinnamon Rolls

  • 3 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup melted butter
  • 2 pastured eggs
  • 1 tablespoon maple syrup
  • 2 tablespoons butter
  • cinnamon

Preheat oven to 350 degrees. Mix first three ingredients in a bowl. Add butter, mix. Add eggs one at a time, mix. Add maple syrup, mix.IMG_20131004_183758_327

Knead it with a spatula or your hands.
Spread a ball on parchment paper on a flat surface. Knead a bit. Pat it down into a nice big squarish shape. Use a second piece of parchment paper and use a rolling pin to roll it out. Spread with butter and sprinkle on the cinnamon.

Use your parchment paper to help roll it into a long log. You will need the assistance of your parchment paper, because this dough is made from almond flour it’s not as stretchy and sticky as a wheat or other gluten flour.

Once you have a nice rolled log, wrap it up in the parchment paper and plop it in the freezer while you make your icing.

Vanilla Cream Cheese Icing
4 oz. cream cheese, softened
4 tablespoons butter, softened
2 tablespoons heavy whipping cream
1 tablespoon maple syrup
1 teaspoon vanilla extract

 

Mix using a hand blender, hand beaters, or an immersion blender.
Scoop into a bowl. Set aside.

Retrieve your log from the freezer. Unroll the parchment paper onto a cookie sheet.  Take the log (not frozen, only a little hardened from the cold) and cut two inch sections, evenly.  Flip them (so the spiral is facing up) and spread on your parchment paper.IMG_20131004_191805_481Bake for 15-25 minutes.  Stay close, though, because they could cook faster or slower in your oven!  You want the top to be lightly golden, the middle to be tender (not doughy), and the sides to be beautifully blonde.

Let cool slightly then top with the icing.IMG_20131004_192510_655Serve for breakfast or, as we do, with a heaping bowl of chili. Enjoy!!

Cedar Plank Salmon with Lemon Dill Aioli

IMG_20131002_204820_142It is good to be home and back to the Traeger! Salmon smoked on a cedar plank is the best! Easy to cook and sooooo tasty. Tonight I added a lemon dill aioli to top the filet and it was a winner. Glad I wrote down the ingredients.

IMG_20131002_200901_094For the salmon – Soak a cedar plank for at least 2 hours before grilling. When ready to cook, preheat your grill to 350 degrees. Place the plank on the grates and let it heat up for about 10 minutes, to get it smoking. Mean while, season the salmon with olive oil, salt and pepper. Top with some lemon slices then place on the plank. Grill for 25-30 minutes, until the fish flakes easily with a fork.IMG_20131002_200427_432

For the aioli –

  • 1/2 cup mayonnaise
  • juice from 1/2 lemon
  • 2 T fresh dill
  • 1 t salt
  • 1 t pepper
  • 1/8 t cayenne pepper
  • 1/4 cup red onion, diced

Combine all ingredients and mix well. Chill until ready to use.

I made up a batch of mashed potatoes to go along side the salmon for a back to basics meal. Top the salmon and potatoes with the aioli sauce and enjoy!!!

Shell Lake

IMG_20130924_184234_358It was time for the annual fishing trip to Shell Lake in northern Minnesota. Our families have been going there since we were kids and it is a great place for relaxing and seeing the family. We have folks come in from Colorado, Wyoming, Iowa and Minnesota to join in on the fun. This year we stayed in the big cabin and it was awesome. The water was like glass and the reflections off the lake were like nothing we had ever seen in our many years at the lake,IMG_20130924_182142_516Here is looks like we are cruising on the pontoon through the clouds!IMG_20130924_161346_771It is hard to tell the water from the sky!

Once again we all had a great time. Every night someone would take over the cooking duties and we had lots of good food (here is a partial list):

  • Coffee rubbed brisket
  • Chili
  • Chicken casserole over fresh biscuits
  • Apple pie pancakes
  • Egg casserole
  • Brian’s Famous Goulash

Steak

IMG_20130917_201235_625With Kris out of town on business it was time for a man meal! What better for that then steak and potatoes? I stopped by the store on the way home and picked up a grass fed KC strip. Had the potatoes at home along with some fresh tomatoes and cooked up an excellent meal.

IMG_20130917_193724_762For the steak – Take the steak out of the fridge and let rest for 30 minutes at room temp before grilling. I add some olive oil, salt and pepper for the flavor. Grill on high heat 6 minutes per side for medium rare (the only way to eat steak).

For the taters – Slice and toss on to some foil, add some onion, a couple tablespoons of butter and seasonings. I used Louisiana Cajun Seasoning. Seal tightly in the foil and grill for about 30 minutes, turning once.IMG_20130917_200952_356When it is done, remove the steak from the grill and let rest on the platter for 10 minutes before cutting into. Remove the taters from the foil and plate up! I also had the fresh tomatoes topped with mozzarella cheese and balsamic vinegar. Enjoy!

Chili – Big Man Style

IMG_20130908_145806_326Football, cool weather and chili just seem to go together. As you have seen from some previous posts, brisket is becoming my favorite meat to smoke. So this week when making chili I used some left over brisket for the meat. I also had some left over flank steak so that went in as well. This was one tasty batch of chili!!IMG_20130908_105156_869To make the chili here is what I used:

  • 1 can chili beans
  • i can kidney beans
  • 1 onion diced
  • fresh tomatoes, dices
  • chicken stock
  • left over brisket and flank steak, cut into bite size chunks
  • jalapeno, diced
  • 4 T chili powder
  • 1 t oregano
  • salt
  • pepper

Mix everything in a large pot and bring to a boil. Turn down heat and simmer for a couple hours. Serve with cheese, sour cream and hot sauce. Enjoy!

Burger Challenge 3 – Turkey Dinner Burger

IMG_20130910_200707_167I have been thinking of how to add a turkey burger to the challenge and thought of Thanksgiving so thought I would try a Turkey Dinner Burger. The only thing missing here was the green bean casserole! I grilled some turkey burgers, topped them with mashed taters and gravy. Very tasty!

IMG_20130910_193712_527I just made some turkey burger patties, seasoned with olive oil, salt and pepper. Grill these on high heat for about 20-25 minutes, flipping once.IMG_20130910_193720_501While the burgers were cooking I put on the potatoes and made the gravy.

For the potatoes – This is my usual method for making mashed potatoes. Peel and slice up some russets, place into cold salted water and bring to a boil. Gently boil for 15-20 minutes, until taters are soft. While this is going on I put 1/2 cup cream, 1 tablespoon butter and some shredded cheddar cheese in a small sauce pan and heat on low. Once the taters are done, drain add cream mixture and mash up.

Since I did not cook a turkey, I did not have the drippings for the gravy but never fear, here is an quick and easy way to make some. Heat 2 tablespoons of butter in a skillet, once melted and hot, add 3 tablespoons of flour ( I use Betty Crocker Gluten Free all purpose) and stir to combine well. Slowly add 2 cups of chicken stock. Stir constantly and heat to a slow boil. The gravy will thicken as you stir and cook. Season with salt and pepper (be careful with the salt as some chicken stock is already pretty salty). I added some thyme as well to give it more of a Thanksgiving feel.

When the burgers are done, top with mashed taters and gravy. Enjoy!

Simple Summer Supper

IMG_20130907_204323_755Saturday was hot and humid here, 95 degrees with a lot of sun. So what to do? How about a 17 mile bike ride followed by 18 holes of golf! This was a great, fun day but we were a bit tired after that so wanted a simple yet tasty supper. We stopped by the store and grabbed a flank steak, potatoes and sweet corn. Easy and good.

For the flank steak – season with olive oil, salt and pepper and grill for 8 minutes a side over high heat.

For the sweet corn – this takes the same amount of time as the steak, so simple to cook on the grill at the same time. Just put the ears on the grate and grill for 15 minutes or so and pull of with the steak.

The mashed potatoes are also simple and quick. Peel and slice the potatoes, place into cold salted water and bring to a boil. In the meantime heat some heavy cream, butter and cheddar cheese in a small sauce pan. I like to heat this up instead of placing cold ingredients into the freshly mashed taters. When the taters are soft, drain and toss in a bowl. Add heated cream mixture and mash up. And there you have an easy summertime meal. Enjoy!!

Smoked Salmon

IMG_20130902_142619_391If you have been lucky enough to have someone bring you some smoked salmon during the holidays, you know how good it is. The price tag is what keeps me from buying it more often so I decided to smoke some myself on the Traeger. A big fillet of salmon from Costco is inexpensive and always tasty so I bought one over the weekend. Let me tell you, this turned out great! Served it with some cream cheese and gluten free crackers and it was a hit.IMG_20130901_174425_201First, slice the fillet into equal size pieces. Now you will need to cure it for at least 8 hours or over night. The cure consists of 2 cups brown sugar, 1/2 cup kosher salt and about 1 tablespoon of fresh ground pepper.IMG_20130901_174801_951Get a glass baking dish and spread some of the cure on the bottom. Top with the salmon and then cover with more of the mixture. Place the remaining 2 fillets on top and cover with the rest of the cure. Cover tightly with plastic wrap and put in the fridge.IMG_20130902_102457_132After curing overnight, pull the salmon out of the fridge. You can see how the moisture was drawn out of the fillets. Rinse with cold water and place on a greased rack. Now you need to let the fillets sit out at room temp for 2 hours before smoking.

I smoked these on the Traeger for 2 hours at a temp between 150 and 170 degrees. I let them cool and put them in the fridge to chill before serving. I like my smoked salmon cold but you can also eat it right away. It will keep for about 7 days but I can let you know it did not last that long in our household. Enjoy!!

Smoked Banana Peppers

IMG_20130901_183824_935The stuffed jalapenos turned out so good I thought I would try it this time with some fresh banana peppers. These turned out excellent as well! The difference here was I smoked them for 2 hours first, then cranked up the heat to 350 degrees to finish them off.IMG_20130901_161012_414Wash and dry the peppers. Cut off the stem then slice down one side of the pepper. Be careful not to cut all the way through. Now it is time to make the stuffing.IMG_20130901_161008_759Mix all these ingredients together in a large bowl then stuff the peppers.

  • 2 cups cheddar cheese
  • 1 medium onion, diced
  • 1 green pepper, diced
  • 1 tomato, chopped
  • 1 jalapeno, diced

IMG_20130901_162159_513Wrap each pepper in 2 slices of bacon. I always use uncured bacon which does not contain any nitrites or nitrates. Secure with a toothpick or 2 and place on a foil lined baking sheet. I set my Traeger on smoke and cooked for 2 hours. Now turn up the heat to 350 degrees and cook for another 20-30 minutes, until bacon is crisp.

With football season rapidly approaching, this will be a perfect food for Sunday afternoons watching the game. Enjoy!

Fresh Veggies

IMG_20130829_170259_796With our friend Kate still out on vacation, we were able to pick up another round of fresh CSA veggies. A nice haul for this week. Tonight we used up the corn, some green onions and tomatoes. IMG_20130829_195403_702Add a grilled chicken breast and a tasty meal. For the corn I grilled it for about 15 minutes (turning frequently) at 400 degrees on the Traeger. The chicken went on first and cooked for about 30 minutes.

We just sliced the tomatoes, topped with fresh mozzarella and aged balsamic vinegar – so good! Cheers!
