Back to Basics

IMG_20130827_211704_413After a weekend of celebrating with too much food and wine, it was time to get back to the basics. Nice to have a clean, fresh meal! Tonight was grilled chicken breast, grilled veggies and potatoes. Simple, yet tasty,IMG_20130827_203226_061For the veggies I mixed up 3 colors of peppers (red, orange, yellow), sliced onion and fresh sliced mushrooms. Season with salt and pepper, drizzle with olive oil and grill at 350 for 30 minutes. IMG_20130827_211447_818The potatoes are my normal grilled potatoes – wrapped in foil with butter and grilled for 30 minutes at 350. The chicken is also grilled at 350 for the same 30 minutes which makes this super easy. Just check the chicken to be sure the internal temp is at 165 and you are good to go.

A nice glass of wine (just one) and a perfect dinner. Enjoy!

Happy Anniversay!!

IMG_20130826_174709_460Kris and I celebrated our 24th Anniversary on Monday!! First we played 27 holes of golf in 100 degree heat and had a blast. Seemed like we were the only ones on the course.

We went of for a nice dinner and a couple drinks. Cheers!

Jalapeno Poppers

IMG_20130822_203653_586Our friend Kate is going to be out of town for a couple weeks, so she generously let us have her CSA (community sponsored agriculture) goodies. This week had a big pile of jalapenos so time for grilled poppers! Now these had a nice kick and left us with that ‘mouth on fire’ feeling after eating a few.IMG_20130822_194226_825Wash and dry the jalapenos. Cut the stem side off and remove the stems and seeds, using a small paring knife. If you are a heat lover, you can leave the seeds for extra spice.IMG_20130822_195510_224Stuff the peppers. I used a mixture of whipped cream cheese and shredded colby jack. IMG_20130822_195842_976Wrap each jalapeno with a slice of bacon. Use a toothpick to hold the bacon in place. Place on a baking sheet lined with foil and you are ready to grill. I set the Traeger at 350 degrees and grilled the poppers for about 35 minutes, turning occasionally. When the bacon is crisp, they are done. Enjoy!

Breakfast potatoes

IMG_20130818_082613_691So what to do with the potatoes leftover from the night before? Fry them up for breakfast of course. Throw some olive oil and butter in a skillet over medium heat, add the leftover potatoes and fry until crispy. Add some sausage and a couple over easy eggs and you have a great breakfast! I think the taters were better the second day so I will be sure to grill extra in the future. Enjoy!

Good to be home

IMG_20130817_194503_063Vacations are always a good time but it is nice to be home to the Traeger! Our first dinner back was cedar plank salmon, grilled potatoes and fresh sweet corn. It is great to get some fresh Minnesota grown sweet corn this time of year.IMG_20130817_194229_202I love this meal for 2 reasons -1. It is so good. 2. It is so easy. Just soak the plank, season the salmon and grill at 350 degrees for 25-30 minutes. For the potatoes, slice and toss onto some foil. Add some sliced onion, olive oil and butter. Season with salt and pepper, wrap tightly in the foil and grill for the same time as the salmon. To make it really easy I microwaved the corn (in the husk) for 8 minutes per 2 ears.IMG_20130817_193035_231Set a pretty table (Kristen’s job) outside and you have the perfect summer meal. Enjoy!

Great time on vacation

IMG_20130813_113623_109On our way to the Wisconsin Dells we stopped by Moe’s ‘Almost’ Famous diner for some breakfast. I had a southern scramble that was mighty tasty! Not only did they have great food but they have a chicken in a chef hat outside!IMG_20130813_111539_674Got a love this place. The rest of the vacation was spent golfing, relaxing and having fun with our friends Aaron and Rindy. Not much time for cooking so we will get back to that now that we are home. IMG_20130815_111247_309Here are Kris and I on the links. Vacation!!!

IMG_20130812_192632_008What a way to get vacation under way. A night at the Twins game with our friends Aaron and Rindy. Twins win! IMG_20130812_181016_226We decided to take the bus into the game instead of driving and this is the way to go. No parking or traffic hassles! Here are Kris and I on the bus, getting ready for game time.IMG_20130812_220015_593Rindy and Aaron also enjoyed the bus ride! Here is the happy couple on the way home after the victory.

Now it is on to Wisconsin Dells for a few days of golf and relaxation. Wonder what kind of good food we will find? Stay tuned and find out! Cheers.

Weekend Party Pulled Pork

IMG_20130804_135548_158Our friends (and former neighbors) who were transferred to Florida, were back in town for a visit so we had a cookout on Sunday to celebrate. We got the old neighborhood gang back together for some good food and plenty of drinks. I was tasked with making the meat and needed something for 16 adults and 4 kids so settled on pulled pork and brisket.

Good thing about these – both can be made ahead!! The party was at 3 o’clock so not enough time to cook the day of.

Friday was pulled pork day and here is how I did it:

Get yourself some nice bone-on pork shoulders. Normally I would cook an 8-10 pounder, but Whole Foods only had two 4 1/2 chunks. Next you need a good rub.IMG_20130802_062902_582

  • 2 T brown sugar
  • 1 T chili powder
  • 1 T paprika
  • 1 T onion powder
  • 1 t salt
  • 1 t pepper
  • 1 t dry mustard
  • 1/4 t cayenne pepper

IMG_20130802_064026_792Rub mix on all sides of the pork shoulder. Time to get the grill going. You want to get to a temp of 225 degrees and smoke the pork for 3 hours, fat side up. Spray with apple juice every hour after the first hour.IMG_20130802_101124_454Transfer the pork to a disposable foil pan, add 2 cups of apple juice.IMG_20130802_101233_302Cover with foil and put back on the grill. Cook for another 5-6 hours, until the internal temp is 195 degrees in the thickest part of the shoulder, not touching bone. Pull off grill and let rest 30 minutes.IMG_20130802_152244_282Pull the pork – At this point the meat is very tender and comes apart easily. Once I pulled the pork I drained the liquid, added a little more rub, drained some of the liquid and covered tightly. Place in the frig (can be done 3-4 days ahead) and wait for the party.

On Sunday I fired up the grill to 225 degrees and reheated the pork for about an hour. Serve with BBQ sauce and all the fixings! I also made coffee rubbed brisket for the party and reheated it along side the pork. Making these ahead of time was a great way to enjoy the day of the party, without stressing about getting the food done on time. Enjoy!!

French Style

IMG_20130803_195100_923Kris and I are putting in a deck and a screened in porch so Saturday  was spent prepping the area. We had to move a 12 x 12 paver patio, dig out the area for the deck so the contractor can install. Needless to say after a hard day of work cooking did not fit in to the evening plans. We decided to eat like the French, small bites.

We had some cheese, crackers, grapes and pate. The crackers were Nut Thins, gluten free of course, and these are really tasty. The pate was a truffle mousse purchased from Lunds grocery and was one of the best pates I have ever had!! A nice bottle of wine to complete the meal. Enjoy!

Fish and Chips

IMG_20130801_203515_751Friday nights and fish just seem to go together. Tonight we had simple grilled fish with grilled fries, tasty. This is really easy to do and the sole fillets we had were super thin and only took a few minutes to cook. The french fries on the Traeger turned out crunchy and good!

For the fish – Drizzle with olive oil season with salt and pepper. I encrusted the fillets with ground macadamia nuts – this gave a nice sweetness to the dish. Grill the fish (375 degrees) for about 4 minutes, until it flakes easily.

For the chips – Peel and slice the potatoes. Drizzle with olive oil and season with salt and pepper. Place on a baking sheet and grill at 375 degrees, turning often. These are done when browned and crispy, 25-30 minutes.
