Kitchen Island Day 2

2013-01-22_19-21-29_948It is all coming together now. We had a late day at work so just finished trimming the island out tonight. Kris and I really like the way it is looking! There is definitely a learning curve when it comes to cutting trim. I measured twice but still cut the final baseboard to short. Had to have Rindy bring me another board.

Once we finished the baseboard, the trim started going in:2013-01-22_18-35-50_449I would cut the boards, Kris would add the glue and place then I would nail them on. We make a good team!2013-01-22_19-08-28_993Wednesday we will fill in the nail holes and any gaps in the trim. Then it will be time to prime and paint. More to come………

Kitchen Island Project

2013-01-20_11-03-39_979Kris and I have started a new project. Tired of how the kitchen island was looking, we decided it was time for an update. We started on Sunday (with the help of our friends Rindy and Aaron) and hope to be done by this Saturday. A good time to start an indoor project here in Minnesota with the temp outside below zero! The pic above is the before look. I will continue to post as we progress.

No-Bean Chili

Kris and I have been trying to cut out some carbs so the other night I came up with some No-bean Chili. MMMM good, this turned out really tasty and satisfying. Instead of the usual cans of chili and dark red kidney beans, I added diced carrots and peppers. I used red and orange bell peppers for this batch. My new favorite pan made this a breeze to make. One pot for cooking so only one pot to clean!!2013-01-03_18-09-54_634Serve in a big bowl along with cheddar cheese, sour cream and Franks hot sauce. Enjoy!!

Ingredients:
1 lb ground veal
1 red bell pepper, diced
1 orange bell pepper, diced
1 large onion, diced
6 carrots, peeled and sliced
1 cup Spicy V8
1 can diced tomatoes
3 T chili powder
1 t basil
1 t thyme
1 t oregano
salt
pepper
beer
water

Directions:
In a deep skikket brown veal along with the peppers and onion. Sprkinle with salt and 1 T of the chili pawder. When veal is done, drain excess fat and return to pan. Add remaining ingredients, bring to boil. Turn down heat and simmer for at least one hour. Add enough beer and water to achieve the your desired consistency.

Pot Roast

2013-01-12_19-58-00_61Nothing says love on a cold winters night like old fashioned pot roast. We were looking for some good comfort food and this fit the bill. There are a couple ways I like to cook pot roast. One way is to slow cook the roast all day in a crock pot. But I think my favorite, to get the most flavor, is to use my large oval dutch oven. That is how I did this one. Along with the roast, I added some veggies to complete the meal.

First you need to season the pot roast. I just use salt and pepper. Then heat some olive oil in the dutch oven over medium heat. Brown the roast on all sides, about 2 minutes per side.2013-01-12_15-33-37_729Remove roast and deglaze the pan using about 1/2 cup red wine. Be sure to scrape the bits from the bottom of the pan. Put meat back in the pan, add enough beef stock to cover the meat about half way. Now add the veggies. I used carrots, fennel, onions and mushrooms(add the mushrooms during the last hour of roasting). Bring to a boil, cover and roast in a 275 degree oven for about 4 hours. The roast should be fork tender.

When done remove the meat, cover with foil and let rest while you get everything else ready. Remove the veggies to a bowl and make the gravy.2013-01-12_19-58-11_415

For the gravy add some juice from the pan, put in a teaspoon of xanthan gum (Kris and I do not eat wheat so we use this for a thickener) and bring to a boil. Cook, stirring constantly until thickened. Serve with roast and veggies. Enjoy!

Pan Roasted Chicken Thighs with Mushrooms

2013-01-09_19-36-07_690So our friends Rindy and Aaron gave me a deep enameled cast iron skillet for Christmas and it is turning into one of my favorites. It is so versatile, can be used on the stove top as well as the oven. I have used it for enchilada casserole, chili, hamburger and rice….etc. Tonight I put together pan roasted chicken with mushrooms and a salad as the side dish. This dish is tasty and easy to throw together, even on a Wednesday night!

Preheat oven to 375 degrees. Add 2 T of olive oil to the pan and heat over medium high heat. Once the oil starts to shimmer, add the chicken. I used thighs – bone in and skin on, seasoned with salt and pepper. Cook skin side down until golden and crispy. (about 8 minutes) Flip the chicken over, toss in a bunch of mushrooms, add seasonings and toss in the oven. I used thyme, basil and a mediterranean blend.2013-01-09_19-00-58_446Roast for 25 – 30 minutes or until chicken is done, 165 internal temperature. Remove from oven and let stand 5 minutes before serving, The chicken will brown even more while in the oven and will come out looking good!2013-01-09_19-30-59_730To go along with this I made a salad of mixed greens, yellow peppers, mushrooms, roasted almond slivers and feta cheese. Breakfast for Dinner

2013-01-04_19-57-41_364Sometimes after a hard day at work it is nice to have breakfast for dinner. Kris got really excited when I said “How about pancakes for dinner tonight”? So that is what we had! Almond flour pancakes smothered in maple syrup, fried eggs and some hickory smoked bacon. What a treat! Since going wheat free a year ago we are always looking for new ways to cook “traditional” foods. It has been a bit of trial and error but these pancakes turned out excellent.

I have found the best way to cook the bacon without the mess is to use the oven. Preheat oven to 400 degrees. Line a baking sheet with foil and add bacon. Bake for 15 – 20 minute, or until desired crispness is achieved. Drain on paper towels and throw out the foil, Easy!

ingredients:

1 cup almond flour
1 tsp baking soda
2 eggs, beaten
1/4 cup olive oil
cinnamon, to taste
1/4 tsp salt

directions:

Mix all ingredients together in a bowl. Pour batter onto a hot greased griddle and cook until bubbly then flip. Serve with butter and syrup. Enjoy!

New Years Day Tradition – Black-eyed Peas

2013-01-01_13-41-31_361This tradition started about 10 years ago. Our friend Beth told us that eating black-eyed peas on January 1 will bring you good luck in the new year. So now this is a new years day must. We invite friends over to watch football and eat good food. It is a great way to kick off the new year! This years menu:

Recipes:

Hoppin’ John
Ingredients:
1 pound dried black-eyed peas
2 small smoked ham hocks or ham shank
2 medium onions, divided
3 large cloves garlic, halved
1 bay leaf
1 cup basmati rice
1 can (10 to 14.5 ounces) diced tomatoes with chile peppers, juices reserved
1 medium red bell pepper, chopped
1 green bell pepper, chopped
1 jalapeno pepper, minced
2 teaspoons Cajun seasoning
1/2 teaspoon dried thyme leaves
3/4 teaspoon ground cumin
3/4 teaspoon salt

Directions:

In a large Dutch oven, combine the black-eyed peas, ham shank or ham hocks, and 6 cups water. Cut 1 of the onions in half and add it to the pot along with the garlic and bay leaf. Bring to a boil, reduce the heat to medium-low, and simmer gently until the beans are tender but not mushy, 2 to 2 1/2 hours. Remove the ham shank or hocks, cut off the meat; dice and set aside. Drain the peas and set aside. Remove and discard the bay leaf, onion pieces, and garlic.

Add 2 1/2 cups of water to the pot and bring to a boil. Add the rice, cover, and simmer until the rice is almost tender, about 10 to 12 minutes.

Mince the remaining onion then add to the rice along with the peas, tomatoes, and their juices, red and green bell pepper, jalapeno pepper, Creole seasoning, thyme, cumin, and salt. Cook until the rice is tender, 5 to 8 minutes. Stir in the reserved diced ham. Serve with hot sauce.

Smoked Ribs:
Ingredients:
3 slabs baby back ribs
Rib rub
Apple juice
BBQ sauce
Directions:
Rub ribs with rub, cover with plastic wrap and refrigerate for 2 hours. Prepare grill – get temperature to 225 degrees. When grill is ready, place ribs directly on the grates. Grill for 4-5 hours, until ribs are tender. Baste the ribs with the apple juice every hour. During the final 30 minutes, baste the ribs with your favorite BBQ sauce.

Rice Flour Coffee Cake
Ingredients:
1 1/4 C. Rice Flour
1/3 C Sugar
3 tsp Baking Powder
1/4 tsp Salt
1 Egg, beaten
1/2 C. Milk
1/4 C Oil

Topping:
 
2Tbs Sugar
1/2 tsp Cinnamon Powder

Directions:

Preheat oven to 350. Spray a 8×8 baking pan with non-stick spray.
Sift dry ingredients together into a bowl. Add eggs, milk, oil and mix until smooth.
Pour into prepared pan. Mix topping ingredents together. Sprinkle on top of batter.
Bake at 350 for about 15-20 minutes until toothpick inserted at center comes out clean.

Dinner with Friends – Prime Rib

2012-12-27_19-10-47_230A couple days after Christmas we had some friends over for dinner and have our Christmas celebration. Kris and I set the menu –

Grilled Prime Rib with a mustard pepper rub
Potato and Sage Gratin
Winter Greens with bacon and mint
Blood Orange Creme Brulee

The star of this show is the Prime Rib. I used my Traeger grill to cook this bad boy and it was good. I took the beef out of the fridge about an hour before I started cooking. You want the meat to get to room temp before cooking. I poured the rub over the top and fired up the grill to get it up to temp.2012-12-27_16-11-20_632I cooked this at 450 degrees for 30 minutes then turned the temp down to 250 degrees to finish the cooking. Looking good after the first 30 minutes!!!2012-12-27_16-45-29_373I cooked for about 2 more hours. Keep a close eye on the temp for the last 30 minutes or so. You do not want to over cook this. Once the internal temp hit 125 degrees (medium rare) I pulled the meat off the grill, covered loosely with foil and let rest for 20 minutes before slicing. I am getting hungry again just looking at the pictures!2012-12-27_19-02-05_586The best thing about having the Traeger is it leaves the oven free to cook other parts of the meal. While the prime rib was roasting on the grill I baked the potato and sage gratin. The gratin came out super creamy and tasty! Plus it is really easy to do. Just heat the cream, garlic and sage in small sauce pan. Meanwhile slice the potatoes and place in an overlapping layer in a 3 qt, buttered baking dish. Pour the cream mixture over the top and bake for about an hour. 2012-12-27_19-07-08_872While the potatoes cook and the meat is resting, you can cook up the winter greens. We used about 1 1/2 Lbs of kale, mustard and collard greens. In a deep skillet heat 1/4 cup of olive oil over medium heat. Once hot add 8 slices of bacon diced. Cook for about 3 minutes then add some diced onion. Cook an additional 8 minutes. Add garlic, cook for a minute, add greens and cook. covered until greens are tender.2012-12-27_19-07-15_375The dessert was made earlier in the day and was chilling in the fridge. Just before serving sprinkle with sugar and broil until the sugar caramelizes. A simple to make creme brulee with a lot of flavor. Mix the juice and cream, pour into ramekins and bake for about an hour.2012-12-27_15-46-46_826Add hot water to the pan before baking. Christmas Eve

2012-12-24_15-47-19_298Kris and I had decided not to get a tree this year but after the weekend in Iowa for an early Christmas we thought a tree would be perfect for our quiet celebration. We left Iowa on Christmas Eve morning and the plan was to drop off the dog, unload the car then head out and get our tree.

We thought this would be an easy task but turned out to be a small adventure. We went to 5 or 6 places and they were all out of trees. Kris was getting a little frustrated and we were about to give up when I said let’s run by one more spot. It is a small landscaping place a few miles out of town. When we got there we saw a bunch of trees and were so excited. Kris got out and went to the door which had a note on it. The note said the owner had to leave for a medical emergency but all the trees were $25. Just grab one and leave the money in the bucket . ( there was a 5 gallon bucket by the door with a slot in it). So we found the perfect tree and used the $25 we won with the scratch off tickets (a gift from KZ’s step brother) to pay for the tree!!

We got home, put up and decorated the tree. It was perfect! Now was time for the traditional Christmas Eve meal –

Oyster Stew –
Ingredients
2 Tbs butter
1 small onion, diced
1 quart whole milk
12 oz fresh oysters and juice
1/4 tsp cayenne pepper
Salt
Pepper

Directions
Heat butter in sauce pan over medium heat. Add onion and cook until softened, about 7 minutes. Pour in milk and oysters and cayenne pepper, bring to boil. Reduce heat and simmer for 15 minutes. Salt and pepper to taste.

Chili –
Ingredients
1 lb grass fed beef                  12 oz beer
1 onion, diced                         1 can diced tomatoes
3 Tbs chili powder                 1 can chili beans
1 tsp oregano                          1 can dark red kidney beans
1 tsp basil                                salt
1 tsp thyme                            pepper
Spicy V-8

Directions
Brown beef and onion in large skillet. Sprinkle beef with 1 tbs of the chili powder while browning. Drain off excess fat. In a large soup pot ( I use a dutch oven) add tomatoes, beans, beer, meat mixture and stir. Add the spicy V-8 to get the consistency you like for your chili. I used about 1 ½ cups. Add spices, mix well and bring to boil. Turn heat down and simmer for at least 1 hour.

Christmas in Iowa

2012-12-23_10-05-39_425The weekend before Christmas we went to Iowa to spend the holiday with family. We had a wonderful time and some good food. For the Sunday brunch we made the eggs benedict and they turned out excellent! Since Kris and I do not eat wheat, we had ours over fried potatoes instead of an English muffin and boy was that good.

We all enjoyed the brunch and had a great day. For dinner that night we had potato bologna made by my father in-law, Don. This is a holiday tradition for his family and I am disappointed that I did not take any pictures. It was a fabulous meal followed by another of Don’s favorites – Heavenly Pie. Next year I will be sure to get some photos. Cheers!
