Mushroom Swiss Burgers

2012-12-19_20-29-04_231Was not sure what we wanted tonight so we stopped by the store, grabbed some grass feed beef , some mushrooms and swiss cheese. Decided to grill out even though it is only about 25 degrees out:) Some fried potatoes on the side and the meal is complete!

The potatoes are very simple. I peel them then slice thin. To make sure they cook up nice and crunchy I par boil them first. In a microwave safe bowl add enough water to cover the potatoes. Toss in some salt for flavor and nuke (covered) for about 4 minutes. Drain and dry with paper towels. I just season them with olive oil, salt and black pepper. To cook I put them in a cast iron pan (made for the grill) and grill at 350 for about 30 minutes.2012-12-19_19-37-12_78Next make the hamburger patties. I season mine with onion powder, salt and pepper. Throw those on the grill when the potatoes have about 12 minutes left. Cook each burger for 6 minutes a side. Add cheese in the last 2 minutes to get nice a melty.

Eggs Benedict

2012-12-16_17-12-30_324This coming weekend Kris and I are heading home for Christmas and Sunday morning we are making eggs benedict. Now this is something new, so a trial run is in order. Homemade hollendaisse sauce, homemade gluten free english muffins, and Kristens poached eggs. Wow these were good!

First up was to make the English muffins. These are actually very easy to make, and not too many ingredients:

2 cups rice flour
2 tsp dry yeast
1 tsp Xanthan gum
1 cup lukewarm water
1/2 tsp salt
1 egg, room temperature
1 Tbs sugar, divided
3 Tbs butter, melted

Directions:

Preheat oven to 375 degrees.
Grease 6 muffin rings – I just shaped dough and put in greased 9×13 inch pan-
Mix 1 tsp of the sugar with the warm water and yeast.
Allow to rest about 10 minutes.
Mix all dry ingredients with yeast mixture, egg and butter.
Mix till smooth.
Drop into rings and spread out as best you can.
Let rise in warm place until double in size.
Bake for 18-20 minutes

Now it is time to make the Hollandaise sauce. This recipe comes from Tyler Florence of the food channel network and is fairly simple to whip up.

Ingredients
4 egg yolks
1 tablespoon freshly squeezed lemon juice
1/2 cup unsalted butter, melted (1 stick)
Pinch cayenne
Pinch salt

Directions

Vigorously whisk the egg yolks and lemon juice together in a stainless steel bowl and until the mixture is thickened and doubled in volume. Place the bowl over a saucepan containing barely simmering water (or use a double boiler,) the water should not touch the bottom of the bowl. Continue to whisk rapidly. Be careful not to let the eggs get too hot or they will scramble. Slowly drizzle in the melted butter and continue to whisk until the sauce is thickened and doubled in volume. Remove from heat, whisk in cayenne and salt. Cover and place in a warm spot until ready to use for the eggs benedict. If the sauce gets too thick, whisk in a few drops of warm water before serving

Finally time to make the eggs. Boil some water with 2 tsp of white vinegar. Once water is boiling gently, add eggs and cook for about 3 minutes. Meanwhile assemble the dish. Toast the English muffins and brown the Canadian bacon. Place a piece of the bacon on top of each English muffin half, top with egg and Hollandaise sauce. Enjoy!!

Gluten Free Apple Coffee Cake

2012-12-16_12-08-56_326A couple weeks ago while in Kansas City for a wedding, our good friend Beth made us a gluten free apple coffee cake that was super tasty. Kris was craving that this morning so she found a similar recipe and went to work. She used rice flour instead of wheat flour and it turned out great!

Ingredients:
1 1/2 cups rice flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt (optional)
1/2 teaspoon orange rind, grated
1 1/2 cups nonfat plain yogurt
1 tablespoon cornstarch
1/4 cup nonfat milk
1 large apple, peeled and coarsely chopped
2 -3 teaspoons vanilla extract2012-12-16_11-19-36_491

Directions:
Preheat oven to 350 degrees. Sift flour, sugar, baking soda, cinnamon, nutmeg and salt into a large bowl. Add the remaining ingredients and blend by hand until well mixed.
Spoon into a greased 9-by-13-inch baking pan and bake 35 to 40 minutes, until a knife inserted in center comes out clean. Serve warm or cool. Enjoy!

Grilled Curry Lime Wings

2012-12-15_18-22-27_79Wings are a favorite at our house and the curry lime sauce gives a little heat along with a little sweet. Normally I bake the wings in the oven but today I am going to use my Traeger grill to smoke then grill these tasty wings.

First rinse the wings and dry with paper towels. Drizzle with olive oil and season with salt and pepper.

2012-12-15_16-04-10_472For this batch of wings I am going to smoke them for the first 45 minutes at about 180 degrees. I am using hickory pellets to add the smoky flavor. To crisp up the skin turn up the heat to 350 degrees and cook for an additional hour.

2012-12-15_18-15-37_480While the wings are cooking make the curry lime sauce. 6 Tbsp butter, 1-2 Tbsp red curry paste, zest and juice from one lime, 1 Tbsp honey, 1 tsp soy sauce. Whisk all ingredients together in a bowl until well blended.

2012-12-15_18-04-42_901When wings are done add to the sauce and stir to coat. Serve with celery sticks and blue cheese, if desired. Grab some napkins and enjoy!!

Cheesy Hamburger Risotto

Kris had some dental work done (temporary crown) so her mouth was a bit sore and she requested something easy to eat. We came up with this cheesy risotto with hamburger. This turned out tasty and will be a keeper!

First step was to make the risotto. This is a slow process as you really need to tend to the rice as it is cooking. First step heat 2 Tbsp of olive oil and butter. Add 1 small diced onion and cook for 3-4 minutes. Add one cup Arborio rice  and cook (stirring constantly) for 2 minutes. Pour in one cup of chicken stock and cook until liquid is absorbed.2012-12-13_18-13-13_744Add remaining stock (2 cups) one cup at a time and cook until liquid is absorbed. When rice is done, cover and set aside.

Now cook 1 Lb of hamburger along with a diced pepper ( I used a yellow pepper for sweetness). As the burger is cooking add some chili pepper, salt and pepper. When burger is done, drain excess grease and return to pan.

2012-12-13_18-37-31_823Add risotto to hamburger and season. I used thyme, basil, mediterranean seasoning, and garlic salt. Cook over low heat to let the spices do their magic. In the meantime make the cheese sauce. In a small sauce pan mix about a cup of colby jack cheese, 1/4 cup cream, 2 Tbsp butter and cook over low heat until cheese is melted. Transfer hamburger risotto mixture to a casserole dish, pour cheese sauce over the top and bake at 350 for about 15 minutes.

Cast Iron Skillet Steak

So what do you do when your grill is covered in snow and you want a steak? You use your cast iron skillet, of course! This is a great way to make a steak, similar to how restaurants do it. First you season the steak with salt and pepper and a little olive oil and preheat the oven to 400 degrees.

Next get the skillet screaming hot. This will ensure a good sear and proper cooking. You will know when the skillet is hot enough when you sprinkle a couple drops of water in the pan and they dance and disappear immediately.

Place the steaks in the skillet and cook for 2 minutes. You will hear a lot of sizzling and an may see a little smoke. This is good, just be sure to have your exhaust fan on! Turn the steaks and try to place them in the same spot and cook for 2 minutes more. When the time is up place some cold butter on the top of each steak and put in the preheated oven.

For medium rare cook for 8 minutes. Remove from oven and you will have seared, tasty, restaurant quality steak. Remove from pan and let rest for 5 minutes before slicing to let the juices redistribute. You can see the goodness. Enjoy!

Crab Cakes

With the dinner party approaching this weekend, I did a trial run for the crab cakes. This is the first time making these and the cakes turned out excellent! I served this with a mayo based sauce and sweet potato fries.

The first step is to buy good quality lump crab. I picked this up at the grocery in the refrigerated section. Make sure to pick through it to get out all the shells. Mix all the ingredients in a bowl.

Now form them into patties. This made six large cakes. For the party (since these will be appetizers) I plan to make 12 smaller ones.Next heat about 3 tablespoons of canola oil in a skillet over medium heat. I use a cast iron skillet because I think this adds to the flavor. Cook for 3-4 minutes per side, until golden brown.

Remove from pan and place on a paper towel to remove excess oil. Mix up the sauce and enjoy!

Trial Run – Pork Chops

This weekend Kris and I going up north to celebrate a 40th birthday with some friends. We are staying in a large lake home and will be cooking a big dinner on Saturday night. Lissa (the birthday girl) has requested a meal of crab cakes to start then grilled pork chops for the main meal. I do not cook chops that often so I did a test run.

I used a dry rub on the chops containing brown sugar, onion salt, paprika, salt, pepper and garlic salt. Grilled the chops at about 325 for 30 minutes. Then used a Citrus Vinaigrette to top them. These turned out pretty good but I am thinking of a different sauce to top them and will try again this week. I served these with mashed potatoes and brown sugar glazed carrots.

I Love My Traeger!

So it has been just a couple weeks but this new grill is the best! The Traeger pellet grill uses wood pellets for fuel and gives food a wonderful smoky flavor. You can use this to smoke, grill, roast and bake.

The pellets are loaded into the side box and an auger delivers them to the fire box. The model I got (Texas Grill) has a digital LED thermostat to keep and even temp inside the grill. To get going I just set the dial to smoke and in 4-5 minutes I have fire. Once it is going  I just set the temp I want to grill at an let it heat up for 10-15 minutes and I am ready to cook.

Happy Thanksgiving!!

Thanksgiving has come and gone but it was one of the best. We always celebrate Thanksgiving with friends and this year was our year to host. Our great friends (family) from Kansas came to Minnesota this year and we also had 2 couples from here in the cities join us. It was quite a feast! Unfortunately I did not get pictures of everything but here are a few to give you and idea.

Since I got the new grill I decided to smoke a turkey and a fresh ham. 3 hours of smoking then about 5 hours of roasting and it turned out pretty good for the first time trying this.

When I put these on the grill at 9:00 AM it was 50 degrees. By the time they finished at 5:00 PM it was 30 degrees, snowing and the wind was blowing about 25 MPH. Gotta love Minnesota!

Kris and I made as much as possible the day before, including the mashed potatoes. The taters were cooked then placed in the crock pot to cool. Put them in the frig overnight and then on Thanksgiving just put them on low and heated for about 3 hours.

Kris made a fantastic jello dish. This went in a trifle dish and chilled over night. Ready to serve on the big day.

The morning of I made the dinner rolls using my Grandmother’s recipe. This recipe is also used for Grandmas caramel rolls which are divine.

Kris set a beautiful table and we were ready for the guests. This is one of the few times were ready early and had time to sit around and watch football! We loved it.

With the meat on the grill this freed up the oven so when our guests began arriving we were able to heat all the wonderful dishes they brought. These included -corn bread stuffing, green bean casserole, 7 layer salad, brownies, heaven balls (this will be explained in a future post), pumpkin pudding, homemade lefsa, cannoli cheese cake. A feast fit for a King!!
