3-2-1 Ribs! Memorial Day

IMG_20130527_190609_184Grilling on Memorial Day is a must, the proper way to kick off summer! Even tough the weather was not great I had a fun time grilling some ribs and beans. The 3-2-1 method for ribs is a sure fire way to get some great ribs.IMG_20130527_114031_608First you need a good dry rub. Here is what I used for this batch:

  • 2 T chili powder
  • 2 T onion powder
  • 1 T smoked paprika
  • 1 T garlic powder
  • 1 T salt
  • 1 T pepper

Combine all ingredients and mix thoroughly.IMG_20130527_115254_240You also need a wet rub. Here is what I came up with:

  • 1/4 cup mustard
  • 1 T gluten free soy sauce
  • 1 T Worcestershire sauce
  • 1/4 cup beer
  • 2 T BBQ sauce

Mix all ingredients together.IMG_20130527_115752_337First cover ribs (both sides) with the wet rubIMG_20130527_120910_917Now add the dry rub, liberally, and rub into ribs. Cover and refrigerate for a couple hours.IMG_20130527_125514_296Time to start grilling! For the 3-2-1 method, the first step is to smoke the ribs for 3 hours (150 -180 degrees)IMG_20130527_160409_292

Next step is to put the ribs in foil and braise for 2 hours. Take some sheets of foil, pour on some apple juice, honey and brown sugar. Top with slab of ribs and seal tightly. You do not want to let any steam escape.IMG_20130527_160530_803Back on the grill for 2 hours. Now you want the heat to be about 225 degrees for this.IMG_20130527_180555_185After the 2 hours, remove the ribs from the foil, slather with your favorite BBQ sauce and back to the grill for another 30 minutes to 1 hour, until the ribs are done and the sauce is set.IMG_20130527_190127_000Remove the ribs, cut into servings and enjoy!!
