Vacations are always a good time but it is nice to be home to the Traeger! Our first dinner back was cedar plank salmon, grilled potatoes and fresh sweet corn. It is great to get some fresh Minnesota grown sweet corn this time of year.I love this meal for 2 reasons -1. It is so good. 2. It is so easy. Just soak the plank, season the salmon and grill at 350 degrees for 25-30 minutes. For the potatoes, slice and toss onto some foil. Add some sliced onion, olive oil and butter. Season with salt and pepper, wrap tightly in the foil and grill for the same time as the salmon. To make it really easy I microwaved the corn (in the husk) for 8 minutes per 2 ears.Set a pretty table (Kristen’s job) outside and you have the perfect summer meal. Enjoy!
