Sometimes after a hard day at work it is nice to have breakfast for dinner. Kris got really excited when I said “How about pancakes for dinner tonight”? So that is what we had! Almond flour pancakes smothered in maple syrup, fried eggs and some hickory smoked bacon. What a treat! Since going wheat free a year ago we are always looking for new ways to cook “traditional” foods. It has been a bit of trial and error but these pancakes turned out excellent.
I have found the best way to cook the bacon without the mess is to use the oven. Preheat oven to 400 degrees. Line a baking sheet with foil and add bacon. Bake for 15 – 20 minute, or until desired crispness is achieved. Drain on paper towels and throw out the foil, Easy!
ingredients:
1 cup almond flour
1 tsp baking soda
2 eggs, beaten
1/4 cup olive oil
cinnamon, to taste
1/4 tsp salt
directions:
Mix all ingredients together in a bowl. Pour batter onto a hot greased griddle and cook until bubbly then flip. Serve with butter and syrup. Enjoy!
