Even when eating clean, you need a treat every now and then. I found this recipe for chocolate walnut cookies that sounded amazing. Chocolaty, crispy and oh so tasty! I modified the recipe a bit to make it a little more healthy. I used organic coconut palm sugar instead of standard white sugar. You cannot even taste the difference. And of course we use gluten free flour to avoid wheat.These cookies freeze well so you can have a tasty treat whenever you feel like it! Cheers!!
Ingredients
6 oz Guittard bittersweet chocolate – 70% Cacao
2 T butter
2 large eggs
7/8 cup organic coconut palm sugar
1/4 t salt
1/4 cup GF flour
1/4 t baking powder
1/2 cup chopped walnuts
Melt chocolate and butter in a large mixing bowl. Beat eggs, sugar and salt on high speed, 2-3 minutes, until light. Add melted chocolate on low speed to blend.
Mix in flour and baking powder. Scrape sides then stir in walnuts. Cover bowl with plastic wrap and chill for 30 minutes or overnight.
Preheat oven to 350 degrees. Line baking sheet with parchment paper. Scoop by heaping spoonfuls onto baking sheet. Bake 12-14 minutes, until puffed and crinkled on top but soft in the middle. Cool 3-5 minutes on racks, until cookies easily release from the parchment.
