Friday nights and fish just seem to go together. Tonight we had simple grilled fish with grilled fries, tasty. This is really easy to do and the sole fillets we had were super thin and only took a few minutes to cook. The french fries on the Traeger turned out crunchy and good!
For the fish – Drizzle with olive oil season with salt and pepper. I encrusted the fillets with ground macadamia nuts – this gave a nice sweetness to the dish. Grill the fish (375 degrees) for about 4 minutes, until it flakes easily.
For the chips – Peel and slice the potatoes. Drizzle with olive oil and season with salt and pepper. Place on a baking sheet and grill at 375 degrees, turning often. These are done when browned and crispy, 25-30 minutes.
