Wings are a favorite at our house and the curry lime sauce gives a little heat along with a little sweet. Normally I bake the wings in the oven but today I am going to use my Traeger grill to smoke then grill these tasty wings.
First rinse the wings and dry with paper towels. Drizzle with olive oil and season with salt and pepper.
For this batch of wings I am going to smoke them for the first 45 minutes at about 180 degrees. I am using hickory pellets to add the smoky flavor. To crisp up the skin turn up the heat to 350 degrees and cook for an additional hour.
While the wings are cooking make the curry lime sauce. 6 Tbsp butter, 1-2 Tbsp red curry paste, zest and juice from one lime, 1 Tbsp honey, 1 tsp soy sauce. Whisk all ingredients together in a bowl until well blended.
When wings are done add to the sauce and stir to coat. Serve with celery sticks and blue cheese, if desired. Grab some napkins and enjoy!!
