Lemon Dill Baked Salmon

20140114_183737We are finding wheat free living does not have to be boring! Here is an excellent example. Lemon Dill baked salmon with red potatoes and green cabbage. Kris and I had this last night and boy was it good. Simple enough to make any night of the week. 20140114_175035Gather up your ingredients and start chopping. Only a handful of ingredients for this one.20140114_175702Toss everything (except the salmon) in a large casserole dish and mix well. Cover tightly with foil and bake at 450 degrees for 20 minutes.20140114_182407Take out of the oven, remove the foil and place the salmon right on top of the veggies. Bake for an additional 7-10 minutes. The salmon will flake easily when done. Enjoy!!

 

Ingredients:

1 lb red potatoes, sliced ½ inch thick
1 lb green cabbage, shredded
1 lemon, seeded and quartered
½ cup scallion greens, sliced
½ cup fresh chopped dill
½ cup water
Salt
Pepper
1 T olive oil
4 skinless salmon fillets

Directions:

Preheat oven to 450 degrees. In a large sauce pan of boiling water, cook the potatoes for about 5 minutes. Darin well.
Combine potatoes, cabbage, scallions, dill, water, salt, pepper and olive oil in large baking dish. Mix well, cover with foil and bake for 20 minutes.
Uncover and place salmon on top of veggies. Bake an additional 7-10 minutes, until salmon is done. Serve salmon with the veggies.
