Smoked chicken with brussels sprouts

20151005_202024So here is one of the meals I made with the smoked chicken from Sunday. I love grilled brussels sprouts with bacon. I decided to add the chicken right in with the brussels and it turned out great! A side of home style mashed red potatoes and the meal was complete.20151005_194515First step is to get the brussels going on the grill. Cut them in half, remove any loose leaves and toss in a bowl. Drizzle with olive oil and season with salt and pepper. Pour them out on to a rimmed baking pan and spread into a single layer. Make sure that at least half of them are cut side down. Place on a 350 degree grill and cook for about 20 minutes.20151005_195604In the meantime, get the bacon going. Add the chopped bacon to a cold skillet. Turn the heat to medium and start cooking. When the fat begins to render, add some chopped onion and saute for about 5 minutes. You do not want the bacon to get to crispy at this point, it will finish when you add it to the brussels on the grill. Now add in the chicken and about 1/2 cup of chicken stock. Continue to cook for 5 minutes more.

Now it is time to add to the brussels. First toss the brussels on the pan then pour the bacon mixture over them. Stir around and return to the grill. You need to cook this for about 10 more minutes, until the brussels are tender.20151005_201803Remove from grill, pour into a nice serving bowl and dig in! Cheers
