Smoked Ribeye

20161014_194726So my brother and niece came to town for a night. They needed to pick up my nephew from the airport the next morning so I asked my niece what she would like for supper – her answer? Ribeye, baked potato and asparagus, of course! (She is 10) Well that sounded tasty. I decided to smoke the ribeye for an hour first then crank up the heat for a final sear.  These turned out great! 20161014_174812I got these bad boys at HyVee. Pull them out of the fridge 30 minutes before cooking. Why do this? If you put cold meat on the grill it will lower your grill temp. Better to keep a steady temp for better cooking.20161014_175830I got the Traeger going on smoke and put the steaks on. Smoke for 1 hour, keeping the temp around 180 degrees.20161014_190842After an hour pull the steaks off and crank up the grill to high heat. The Traeger gets to 415 to 440. Plenty of heat to get a nice search on them. Grilled for 6 minutes per side for medium rare.20161014_193731Pull them off the grill and let them rest for 10 minutes before serving. We added sides of baked potatoes and sautéed asparagus. Perfect Friday night meal. Cheers!
