Summertime – BLT’s , Tacos and more

We love summertime! The farmers markets are in fill swing and you can pick up so many tasty veggies. Of course that means homegrown lettuce and tomatoes to make the perfect BLT. We picked this up at the Hopkins farmers market. Homegrown tomatoes are sooooo much better than the store bought variety! Cook up some crispy bacon and you are set for a great summer lunch. Don’t forget the mayo.For supper we went with skirt steak tacos with a side of avocado corn tomato salad. We grabbed a pint of cherry tomatoes from the market as well. For the taco meat we found this at Costco, recommended by my friend Jessica. Marinated skirt steak that is perfect for grilling and adding to a taco.Since getting my tortilla press, I always make homemade tortillas when doing Mexican food. They are so easy to make and taste awesome. It only takes about 10 minutes to whip up a batch of tortillas.While grilling the skirt steak I also grilled some sweet corn we got at the market. This is one of my favorite salads! Corn, tomato, avocado, mozzarella and balsamic vinegar makes this fresh and tasty!
