Well here is my 3rd meal from my $4.00 chicken. I had some rice in the pantry, a red pepper and an onion. Sounds like a good time to cook chicken and rice. I love the red curry paste, not too spicy. Just the right amount of heat.This is an easy meal to whip up. While the rice is cooking dice up the pepper and onion.Toss in a pan with olive oil and saute for about 5 minutes. Add some salt and pepper for a little seasoning.Now add the diced chicken and 2 tablespoons of the red curry paste. Stir and cook for a couple minutes.Add some coconut milk, as much or little as you like. The more you add, the more soup like the dish will become. Bring to a boil then reduce heat to a simmer.Stir in the cooked rice and you are ready to eat! So there you have it. One chicken and 3 meals. It was a great week of eating. Cheers!!!!
