These go out to our great-nephew (man I am getting old) Tommy. He turned 1 on Friday the 13th, not sure if he can enjoy the cookies but hopefully Mom and Dad will. This is one of my all time favorite cookies that my Mom makes. I hope I did them justice. Not too many ingredients for these cookies so it is easy to whip up a batch. Grab your stuff and get started. The first step is to mix up the chocolate base. Be sure to use a good cocoa powder when making these. In a mixer beat the sugar, butter and cocoa until smooth. Add four eggs, 1 at a time, mixing just until incorporated after each egg.Now add flour mixture (flour and baking powder) in 3 additions, mixing well. Add vanilla, mix and then chill dough for at least 1/2 an hour in the fridge.Once dough is chilled it is time to roll it in the powdered sugar. Drop dough by teaspoon and roll to coat. Place on a cookie sheet and bake in a preheated 350 degree oven for 10 – 15 minutes. These take 12 minutes in my oven so watch them closely. You do not want to over bake these cookies as they will dry out.Let the cookie rest on the pan for a couple minutes after removing from oven. Transfer to a rack and cool completely. That’s it – grab a glass of milk and enjoy. Cheers!
