Cedar Plank Salmon with Lemon Dill Aioli

IMG_20131002_204820_142It is good to be home and back to the Traeger! Salmon smoked on a cedar plank is the best! Easy to cook and sooooo tasty. Tonight I added a lemon dill aioli to top the filet and it was a winner. Glad I wrote down the ingredients.

IMG_20131002_200901_094For the salmon – Soak a cedar plank for at least 2 hours before grilling. When ready to cook, preheat your grill to 350 degrees. Place the plank on the grates and let it heat up for about 10 minutes, to get it smoking. Mean while, season the salmon with olive oil, salt and pepper. Top with some lemon slices then place on the plank. Grill for 25-30 minutes, until the fish flakes easily with a fork.IMG_20131002_200427_432

For the aioli –

  • 1/2 cup mayonnaise
  • juice from 1/2 lemon
  • 2 T fresh dill
  • 1 t salt
  • 1 t pepper
  • 1/8 t cayenne pepper
  • 1/4 cup red onion, diced

Combine all ingredients and mix well. Chill until ready to use.

I made up a batch of mashed potatoes to go along side the salmon for a back to basics meal. Top the salmon and potatoes with the aioli sauce and enjoy!!!
