Crab Cakes

With the dinner party approaching this weekend, I did a trial run for the crab cakes. This is the first time making these and the cakes turned out excellent! I served this with a mayo based sauce and sweet potato fries.

The first step is to buy good quality lump crab. I picked this up at the grocery in the refrigerated section. Make sure to pick through it to get out all the shells. Mix all the ingredients in a bowl.

Now form them into patties. This made six large cakes. For the party (since these will be appetizers) I plan to make 12 smaller ones.Next heat about 3 tablespoons of canola oil in a skillet over medium heat. I use a cast iron skillet because I think this adds to the flavor. Cook for 3-4 minutes per side, until golden brown.

Remove from pan and place on a paper towel to remove excess oil. Mix up the sauce and enjoy!
