Kris and I picked up some fresh peaches at the farmers market last weekend and they were super good. So what do you do when they are getting really ripe and you wont be able to eat them all? You make peach cobbler of course. This was my first time making this and it is really easy. Takes just a few minutes to put together and 30 minutes to bake. I used some Betty Crocker Gluten Free Rice flour blend and it was wonderful.Melt some butter and put it in a pan. I used an eight inch pie pan. Top with the flour mixture and add the sliced peaches.Sprinkle with 1/2 cup of sugar and it is ready for the oven. Bake in a preheated 350 degree oven for about 30 minutes. You will know it is done when the crust is a nice golden brown.Pull it out of the oven and let cool a bit before serving. Now if I would have just had some vanilla ice cream………Cheers!
Ingredients:
1⁄4 cup melted butter
1 cup flour
3⁄4 cup sugar
2 teaspoons baking powder
3⁄4 cup milk
5 -6 peaches, sliced
1 tsp cinnamon
1/2 cup sugar
Directions:
Preheat oven to 350°.
Pour melted butter into an 8×8 pan.
Whisk together the flour, 3/4 cup of sugar, baking powder, cinnamon and milk.
Pour over melted butter.
Cover with peach slices.
Cover with 1/2 cup sugar.
Bake until batter rises to top and forms a nice brown crust, about 30 minutes.
