After a week of traveling for work and eating out 2-3 times a day it was nice to be home and cooking again!! We did find some good restaurants and food while traveling but home cookin is still the best!
So for the first meal I went with grilled cod with mango salsa and a kale poppy seed salad on the side. So light and refreshing! Not to mention quite easy to do. Cheers!
1-2 Lb cod fillet
Cover a large jellyroll pan with foil. Spray with cooking spray and add cod. Season cod with olive oil, salt and pepper. Start grill and get to medium high (350 degrees) for cooking. When the grill is hot, place pan with cod directly on grate. Grill 10-15 minutes, until cod flakes easily with fork.
Serve with mango salsa and sides of your choice.
