There may be snow on the ground here in Minnesota but the calendar says spring so it was time for a fresh “springy” supper. Grilled steak salad with cilantro avocado dressing should do the trick!Layout a bed of mixed greens and chop up your favorite veggies. I used red pepper, red onion, cherry tomatoes, mushrooms and avocado, a perfect combination. For the meat I used flank steak – an easy to cook, flavorful cut. Season with olive oil, salt and pepper and fire up the grill. I like mine medium rare so only need to grill for about 8 minutes per side. Internal temp will be about 145 degrees.
Let the steak rest for 10 minutes, slice and top of your salad. Cheers!
