Halibut with roasted veggies

IMG_20131020_200910_219Halibut is one tasty fish. While at Costco on Saturday Kris and I picked up a nice fillet. The plan was to grill it on the Traeger but it was cold, windy and raining so I decided to roast it along with some potatoes, peppers and onions. Topped off with a lemon aioli – Yum!IMG_20131020_194945_795For the roasted veggies –

  • 3-4 yukon gold potatoes, peeled and sliced
  • 1 red pepper
  • 1 yellow pepper
  • 1 sweet onion
  • olive oil
  • oregano
  • salt
  • pepper

Toss the veggies in an oven safe pan and coat with the olive oil. Add salt, pepper, oregano (and any other spice you think sounds good) toss well. Put in a preheated, 400 degree oven and roast for 35  minutes, turning once.IMG_20131020_195137_284Season the halibut with olive oil, salt and pepper. Pull the pan out of the oven after the 35 minutes and turn the heat up to 450 degrees. Push the veggies to the side and put the fillets in the pan. Return to the oven and cook for 10-15 minutes, until the fish flakes easily with a fork. While this is all cooking throw the aioli together – a must have.

Lemon Aioli

  • 1/2 cup mayonnaise
  • 1/4 cup onion, small diced
  • juice from 1 lemon
  • salt and pepper to taste
  • 1/8 tsp cayenne pepper (more if you like it spicy)

Mix all ingredients together and chill until ready to serve. IMG_20131020_200704_775Grab a plate, pile on the food and enjoy!!!
