As many of you know last Sunday (Feb 22nd) was National Margarita Day. In honor of the holiday, our neighbors invited us over for some good food and of course some Margaritas!! We actually celebrated on Saturday – National Margarita Day Eve – and Kris and I were in charge of dessert. Kris found a margarita cake recipe online so of course I had to make this! You have to love a cake that contains Tequila and Tripe Sec. The fresh lemons and limes really give this cake a margarita taste. We used Betty Crocker GF yellow cake mix for the base and it was awesome. Â You also need a bundt pan for this one.Butter and flour (I used a little of the cake mix for this) the bundt pan. Combine the ingredients in your mixer and blend until smooth.Pour batter into your prepared pan and toss the cake in a preheated 350 degree oven. The cake will take 40-45 minutes. It is done when a toothpick comes out clean. Now for the glaze – this also contains Tequila!! In a bowl add the powdered sugar, tequila, triple sec and lime juice, stir until smooth. Drizzle over the cake, once the cake is cooled.Sprinkle some fresh lime zest and decorate with lime wedges. This was one tasty cake!!! Cheers.
