National Margarita Day – Margarita Cake

20150221_182334As many of you know last Sunday (Feb 22nd) was National Margarita Day. In honor of the holiday, our neighbors invited us over for some good food and of course some Margaritas!! We actually celebrated on Saturday – National Margarita Day Eve – and Kris and I were in charge of dessert. Kris found a margarita cake recipe online so of course I had to make this!20150221_141521You have to love a cake that contains Tequila and Tripe Sec. The fresh lemons and limes really give this cake a margarita taste. We used Betty Crocker GF yellow cake mix for the base and it was awesome.  You also need a bundt pan for this one.20150221_143230Butter and flour (I used a little of the cake mix for this) the bundt pan. Combine the ingredients in your mixer and blend until smooth.20150221_143442Pour batter into your prepared pan and toss the cake in a preheated 350 degree oven. The cake will take 40-45 minutes. It is done when a toothpick comes out clean.20150221_152619Now for the glaze – this also contains Tequila!! In a bowl add the powdered sugar, tequila, triple sec and lime juice, stir until smooth. Drizzle over the cake, once the cake is cooled.20150221_154524Sprinkle some fresh lime zest and decorate with lime wedges. This was one tasty cake!!! Cheers.

Ingredients:(cake)

1 (18.25 ounce) package yellow cake mix (Betty Crocker Gluten Free)
1 (3.4 ounce) package instant lemon pudding mix
4 eggs
1/2 cup vegetable oil
2/3 cup water
1/4 cup fresh lemon and lime juice combo
1/4 cup tequila
2 tablespoons triple sec liqueur

Glaze:
1 cup confectioners’ sugar
1 tablespoon tequila
2 tablespoons triple sec liqueur
2 tablespoons lime juice
lime zest, for garnish

Directions:

Preheat oven to 350 degrees. Grease and flour a 10 inch Bundt pan (I used a little of the cake mix powder).
In a large bowl combine cake mix, pudding mix, eggs, oil, water, lemon or lime juice 1/4 cup tequila and 2 tablespoons triple sec. Beat for 2 minutes.

Pour batter into prepared pan. Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan for 10 minutes; remove to rack and pour glaze over cake while still warm. Garnish with lime zest.

To make the glaze:
In a small bowl, combine confectioners’ sugar with 1 tablespoon tequila, 2 tablespoons triple sec and 2 tablespoons lime juice. Mix until smooth.
