No-Bean Chili

Kris and I have been trying to cut out some carbs so the other night I came up with some No-bean Chili. MMMM good, this turned out really tasty and satisfying. Instead of the usual cans of chili and dark red kidney beans, I added diced carrots and peppers. I used red and orange bell peppers for this batch. My new favorite pan made this a breeze to make. One pot for cooking so only one pot to clean!!2013-01-03_18-09-54_634Serve in a big bowl along with cheddar cheese, sour cream and Franks hot sauce. Enjoy!!

Ingredients:
1 lb ground veal
1 red bell pepper, diced
1 orange bell pepper, diced
1 large onion, diced
6 carrots, peeled and sliced
1 cup Spicy V8
1 can diced tomatoes
3 T chili powder
1 t basil
1 t thyme
1 t oregano
salt
pepper
beer
water

Directions:
In a deep skikket brown veal along with the peppers and onion. Sprkinle with salt and 1 T of the chili pawder. When veal is done, drain excess fat and return to pan. Add remaining ingredients, bring to boil. Turn down heat and simmer for at least one hour. Add enough beer and water to achieve the your desired consistency.
