One Dish Supper

20150215_193315When the wind is blowing and the temps are in the single digits nobody likes to go outside! So tonight I dug through the fridge looking for something to make. Good thing I had a package of beef sausage and some veggies. This turned out tasty for a ‘Pantry meal’ as I like to call it.20150215_183139Grab whatever you have on hand and get cooking. This is a simple dish to make, the only downside is it takes 45 minutes to cook! I used onion, red pepper, yukon gold potatoes, carrots, fennel and the beef sausage. You will also need some spices – oregano, thyme, salt and pepper.20150215_184453Chop everything up and toss into a baking dish. In a small bowl, mix the spices, 2 tablespoons of olive oil and 1/4 cup of chicken stock. Pour this over everything and mix well. Put in a preheated 375 degree oven and bake for 40-45 minutes, until taters are tender and enjoy. Cheers!

 

Ingredients:

  • 1 lb sausage – beef , chorizo, andouille, whatever you like
  • 1 red bell pepper
  • 1 onion
  • 3 carrots
  • 1 fennel bulb
  • 6-10 yukon gold potatoes
  • 2 T olive oil
  • 1/4 cup chicken stock
  • 1 t oregano
  • 1 t thyme
  • salt
  • pepper

Direction:

Preheat oven to 375 degrees. Chop up all the ingredients and toss in a big baking dish. In a small bowl, mix together spices, olive oil and chicken stock. Pour over everything and mix well. Bake for 40-45 minutes or until veggies are tender.
