Smoked Banana Peppers

IMG_20130901_183824_935The stuffed jalapenos turned out so good I thought I would try it this time with some fresh banana peppers. These turned out excellent as well! The difference here was I smoked them for 2 hours first, then cranked up the heat to 350 degrees to finish them off.IMG_20130901_161012_414Wash and dry the peppers. Cut off the stem then slice down one side of the pepper. Be careful not to cut all the way through. Now it is time to make the stuffing.IMG_20130901_161008_759Mix all these ingredients together in a large bowl then stuff the peppers.

  • 2 cups cheddar cheese
  • 1 medium onion, diced
  • 1 green pepper, diced
  • 1 tomato, chopped
  • 1 jalapeno, diced

IMG_20130901_162159_513Wrap each pepper in 2 slices of bacon. I always use uncured bacon which does not contain any nitrites or nitrates. Secure with a toothpick or 2 and place on a foil lined baking sheet. I set my Traeger on smoke and cooked for 2 hours. Now turn up the heat to 350 degrees and cook for another 20-30 minutes, until bacon is crisp.

With football season rapidly approaching, this will be a perfect food for Sunday afternoons watching the game. Enjoy!
