Pan Fried Cod

20160119_195514The holidays are long gone so now it is time to do some clean eating! Hy-Vee had some wild cod on sale so that sounded like a good way to start. This is a simple meal and does not take much time at all. Fry the cod in a bit of olive oil and you will get a nice crust on the outside. We served this over a bed of mixed greens and some homemade tartar sauce.20160119_194242Dry the fish on paper towels, season with salt and pepper and you are ready to go. Get your pan ready – heat a couple table spoons of olive oil over medium-high heat. When the oil is shimmering you are ready to cook.20160119_194819Normally I use my cast iron skillet for this but I was to lazy to walk down to the basement to get it so I just used a heavy non-stick skillet. Cook the fish about 4 minutes per side, depending on thickness. The fish is done when it flakes easily. Do not overcook or the fish will get rubbery.20160119_193255Be sure to mix up a batch of tartar sauce. Very simple to do. Chop up the ingredients and mix together in a small bowl. You will want to do this a little ahead of time as it is better if you can chill for an hour.20160119_193715Grab yourself a plate and dig in. Cheers!
